This armadillo eggs recipe takes cheese stuffed jalapeno peppers, wraps them in hot Italian sausage and bacon, then grills them up. Watch them disappear!

4 large jalapeno peppers ((or more as needed))
8 ounces cream cheese
1 teaspoon chili powder
1 teaspoon garlic
Salt and pepper to taste
1 pound ground Italian sausage ((I used hot Italian sausage))
12 slices bacon

Steps:

  • Remove the stem from the jalapeno peppers, then core them out.
  • Mix together the cream cheese, chili powder, garlic, salt and pepper in a small bowl. Stuff each jalapeno with the cream cheese mixture.
  • Form 1/4 of the Italian sausage around the entire outside of the stuffed jalapeno pepper. It will resemble an egg.
  • Next, wrap each with 3 slices of bacon. Be sure to get the bacon wrapped all the way around. You can use toothpicks to affix them, if needed.
  • Heat your grill to medium heat (about 400 degrees F.) and lightly oil the grates.
  • Grill the armadillo eggs for 25-30 minutes, or until the bacon is crispy and the armadillo eggs are cooked through.
  • Serve them up!

24 jalapeno peppers
1 pound sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
1 (16 ounce) package Monterey Jack cheese, cubed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
  • Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.
  • In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.
  • Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.
  • Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.

These are so yummy. The cheese and bacon are a great compliment to the jalapeno flavor and reduce the heat of the peppers. This is my adaptation of an appetizer I had many years ago.

15 fresh jalapenos
1 (8 ounce) package cream cheese
2 tablespoons minced onions
1/4 teaspoon garlic salt
thin sliced bacon

Steps:

  • Slice jalapenos in half and clean out seeds (be sure to get them all or they will be hot).
  • Mix cheese, onion and garlic salt together and spoon into jalapeno halves.
  • Wrap each with 1/2 strip of bacon.
  • Place on cookie rack placed over a cookie sheet to catch the drippings.
  • Bake at 350 for about 45 minutes or until the bacon is crisp.
  • The thin bacon wraps easier.
  • I just tuck the ends under the bottom.
  • Amazingly, these are not hot if you get all the seeds out.
  • There are never enough of them no matter how many I make because they are so popular.

8 jalapenos
4 ounces cream cheese, (softened)
1 cup shredded cheddar cheese
1/4 teaspoon garlic powder
1 pound ground breakfast sausage, (in a tube)
8 slices bacon
toothpicks

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Place a baking rack on top.
  • Cut a thin sliver out of one side of each jalapeno and scoop out the seeds and membranes.
  • In a medium bowl, mix together cream cheese, cheddar cheese, and garlic powder.
  • Fill jalapenos with cream cheese mixture.
  • Cut sausage into 8 slices. Mold a piece of sausage around each jalapeno.
  • Wrap a piece of bacon around each one, securing with a toothpick.Place on prepared baking sheet.
  • Bake for 25 to 30 minutes or until bacon is crispy.

1/2 lb monterey jack cheese
4 cups prepared stuffing
2 cups seasoned bread crumbs, especially Shake and Bake for pork
15 jalapeno peppers
1 egg, beaten

Steps:

  • For the stuffing I like to use Stove Top stuffing for pork.
  • Cook stuffing mix according to package directions.
  • Combine sausage with stuffing.
  • Cut stem and seeds from jalapenos, fill with cheese. Add egg to sausage and stuffing mixture. Mold mixture in egg shape around jalapenos.
  • Roll in bread crumbs until covered well.
  • Bake in a 400 degree farenheit preheated oven for 30 minutes or until brown.

  • Begin by mixing together the cream cheese and the shredded cheese. Add that mix to the cored & seeded jalapenos. Stuff them completely full. Taking a large handful of chorizo, encase each jalapeno in ground chorizo until completely covered. Do not add too much as this will cause you to have to cook longer. Finally, wrap each Armadillo Egg in 2-3 slices of bacon making sure to secure them with toothpicks. Set everything to the side until ready to cook.
  • Preheat a grill with Cowboy Charcoal for indirect cooking at 250F. Add some wood chips or chunks for added smoke flavor.
  • Add your armadillo eggs to the smoker to cook for 2 hours or until they reach 165F internal on the ground meat. Try to prevent flare ups as the bacon will want to cause them. About 30 minutes before the eggs are done, add a basting skillet with all the ingredients for the Spicy BBQ Sauce to the smoker. Let that blend together until the eggs are done.
  • When the eggs are done, glaze each one in BBQ sauce and pull off the smoker. Crank up the heat in the smoker to 400F. Sear off each Armadillo Egg for 30 seconds a side to crisp up the bacon. Pull off and rest for 2-3 minutes
