Time 1h25m

Yield 6

Number Of Ingredients 12

6 bell peppers, any color
1 pound ground beef
1 egg
4 slices whole wheat bread, cubed
1 small onion, chopped
1 small tomato, diced
2 cloves garlic, minced
½ cup chili sauce
¼ cup prepared yellow mustard
3 tablespoons Worcestershire sauce
¼ teaspoon salt
¼ teaspoon pepper

Slice off the tops of the peppers, and scoop out the seeds and cores. Stuff the peppers lightly with the beef stuffing, and place them into the prepared baking dish so they lean against each other.
  • Bake in the preheated oven until the peppers are tender and the stuffing is cooked through and juicy, about 1 hour.

Turkey & Zucchini-Stuffed Jack-o'-lantern Bell Peppers Recipe by Tasty image

Here's what you need: olive oil, onion, garlic, ground turkey, salt, dried oregano, pepper, zucchini, diced tomato, orange bell peppers, rice

Provided by Claire Nolan

Categories     Dinner

Yield 8 servings

Number Of Ingredients 11

2 tablespoons olive oil
1 cup onion, diced
2 cloves garlic, minced
1 lb ground turkey
½ teaspoon salt
1 teaspoon dried oregano
1 teaspoon pepper
1 zucchini, diced
1 cup diced tomato
8 orange bell peppers
1 ½ cups rice, cooked

Steps:

  • In a large skillet, heat the oil and cook onions and garlic for 3 minutes, or until they start to soften. Add the ground turkey to the pan, followed by salt, pepper, and oregano. Stir and cook for 3-4 minutes.
  • Then add zucchini and diced tomatoes. Cook until zucchini has begun to soften and remove from heat.
  • Cut the top off of the bell pepper low enough that the stem remains attached and remove the seeds. Save the top!
  • Preheat oven to 350˚F (180˚C).
  • Carefully, carve out your desired jack-o'-lantern face using a steak knife or paring knife. Repeat for the rest of the bell peppers.
  • Place carved bell peppers in a baking dish and spoon in a layer of cooked rice in the bottom followed by the turkey mixture, and top with mozzarella cheese. Put the top of the bell pepper back on top.
  • Bake for 35 minutes or until peppers are tender and the cheese has melted.
  • Enjoy!

JACK-O'-LANTERN STUFFED PEPPERS

Jack-o'-Lantern Stuffed Peppers image

Provided by Trisha Yearwood

Categories     main-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 10

Kosher salt and ground black pepper
1 cup small elbow macaroni
1 tablespoon canola oil
1 yellow onion, chopped
3 cloves garlic, finely chopped
1 pound lean ground beef
One 14-ounce can fire-roasted tomatoes, drained
1 cup heavy cream
2 cups shredded sharp Cheddar
6 orange bell peppers

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a small pot of salted water to a boil. Cook the macaroni to al dente according to the package instructions. Drain and hold until the meat mixture is ready.
  • In a cast-iron pan, heat the oil over medium heat. Add the onions and sweat until translucent, 5 to 8 minutes. Add the garlic and cook for another 1 minute. Add the ground beef, season with salt and pepper and cook until starting to brown, 3 to 5 minutes. Add the tomatoes and cook for another 2 to 3 minutes. Add the cream and cook until the mixture is reduced, about 10 minutes. Turn off the heat, add the cheese and stir until well incorporated. Stir in the cooked macaroni and season with salt and pepper.
  • Cut each pepper around the stem and remove to create a lid. Remove the seeds and, if the peppers do not sit flat, trim the bottoms slightly; just be careful not to cut a hole in the bottom of the peppers. Using the tip of a small serrated knife, cut a face like a jack-o'-lantern into the side of each pepper.
  • Fill the peppers with the beef mixture and put on a baking sheet with the lids on the side. Bake until the peppers are fork-tender, about 30 minutes.

Replace pepper tops so that jack-o'-lanterns have hats. 4. Bake in the preheated oven until the peppers are tender and the stuffing is cooked through and juicy, about 1 hour. 5. Top off with ketchup before serving if desired.

Turn orange bell peppers into a satisfying, Halloween-themed dinner with this easy, fun, and kid-friendly stuffed pepper recipe.

Provided by Chef John

Categories     Stuffed Bell Peppers

Time 1h25m

Yield 4

Number Of Ingredients 14

1 teaspoon olive oil
4 large orange bell peppers
1 pound ground beef
2 teaspoons kosher salt
½ teaspoon ground black pepper
3 pinches cayenne pepper, or to taste
1 teaspoon Worcestershire Sauce
3 cloves garlic, minced
⅓ cup thinly sliced green onions
2 tablespoons salted butter, melted
2 tablespoons ketchup
1 cup grated sharp Cheddar cheese
1 cup cooked rice
2 cups seasoned tomato sauce, warmed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Oil a baking dish with olive oil.
  • Use a small knife to cut eyes, nose, and mouth into the flattest side of each pepper, just like a jack-o'-lantern. Cut around the seedpods and remove the tops, trimming and discarding any seeds from under the stems. Trim the white membrane from the inside of each pepper and shake out any seeds. Place in the prepared baking dish.
  • Mix together ground beef, salt, pepper, cayenne, Worcestershire sauce, garlic, green onions, melted butter, ketchup, Cheddar cheese, and rice in a bowl until well combined.
  • Stuff mixture evenly into peppers and cover with the pepper tops. Wrap the baking dish loosely with foil and place on a sheet pan.
  • Bake in the upper center of the preheated oven for 1 hour. Remove the foil and continue baking until peppers are tender and ground beef is cooked through, 10 to 15 more minutes.
  • Place stuffed peppers on a few tablespoons of warm tomato sauce. Serve immediately with more sauce on the side.

  • Carve the peppers. Using a pairing knife, slice the tops off the peppers. Cut straight down or in a zig zag pattern (see photos). Set aside, as these will be the tops of the jack o’lanterns.
  • Carefully cut out the white bits and seeds from the inside of the pepper, making sure not to cut through the pepper itself.
  • Carve a face into one side of the pepper. I like to carve two triangle eyes and a mouth. Keep it simple – if the facial features are too detailed or too close together, the face may rip apart when cooked.

Rinse and pat the peppers dry with paper toweling or a clean, soft cloth. Use a small paring knife to cut holes into the exterior of the peppers to make jack-o-lantern faces. Note: If peppers don't stand upright, use the knife to slice a small amount from the bottom to flatten the surface.

Arrange peppers and tops of peppers on pan and cook in oven for 20-25 minutes, or until peppers are cooked, but still are still firm (al dente). Remove peppers from oven and allow to cool while you make the filling.
