DYNAMITE HALIBUT
I created this recipe because my family just loves the dynamite dishes served in sushi restaurants. It's a hit for all ages! This would even be great on top of chicken breasts! Serve atop of sushi rice and a side of steamed broccoli. Garnish with a lemon wedge.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Set an oven rack into the center of the oven.
- Line a baking sheet with aluminum foil and a layer of cooking spray.
- Arrange halibut pieces on the prepared baking sheet so that all pieces are touching.
- Mix the mayonnaise, lemon juice, chili garlic sauce, sugar, soy sauce, and sesame oil in a bowl; fold the mushrooms and onion into the mayonnaise mixture.
- Spread the mushroom mixture over the halibut pieces.
- Squeeze one lemon half over the mushroom mixture; sprinkle with Kosher salt.
- Bake in the preheated oven until almost opaque, 15 to 20 minutes; remove the baking sheet from the oven.
- Raise the oven rack with the baking sheet to the next-highest level switch the oven to broil.
- Continue cooking the fish under the broiler until the top is browned, about 10 minutes.
- Squeeze the remaining lemon half evenly over the fish.
- Sprinkle with sesame seeds and green onions.

HALIBUT STUFFED WITH SHRIMP AND CRABMEAT
This is so delicious. Two 1 1/2 lb. halibut fillets may be substituted, with stuffing layered between fillets.

Steps:
- Melt 1/4 cup butter. Reduce to low: add crabmeat and shrimp, coating well.
- Stir in flour. Pour in the stock, cream and wine, stirring until blended, Heat gently until hot.
- Stir in mushrooms, green pepper, rice salt and pepper.
- Remove from heat; spoon into pocket of the halibut. Spread the excess mixture over the bottom of baking dish which has been lightly greased.
- Arrange the stuffed fish on top and pour over the melted butter. Bake in preheated 350F oven, covered, for 50 minutes or until fish is tender but still firm.
- Remove from oven. Garnish with parsley and lemon wedges and serve at once.

- Place each fillet in an individual broiler-proof serving dish. Sprinkle with salt and pepper. Melt 2 teaspoons butter; drizzle over fillets. STUFFED HALIBUT
These halibut fillets are stuffed with a mixture of cream cheese and salad shrimp. If the thick filets are not available, you can spread the cream cheese mixture on top of the thinner filets and fold in half, using a tooth pick to keep in place during cooking. The fresher the fish for this recipe, the better! This is great served with fresh steamed broccoli.

- Preheat oven to 325 degrees F (165 degrees C). Line a cookie sheet with foil.
- In a small bowl, mix together cream cheese and shrimp. Season to taste with basil, salt and pepper.
- Make a pocket in each of the fillets, making sure you do not cut through on three sides. Divide the cream cheese mixture into 6 parts, and stuff each fillet. Place on foil lined pan. Squeeze lemon juice over fish.

- Remove skin from steaks and the flesh away from the bone; you'll end up with 4 pieces of fish from each steak so you have 8 small fillets in all. Cut a slit on the side of each piece and stuff with some of olivada. Lightly season the two sides of the steaks with salt and pepper. Transfer them to a baking pan, drizzle the top with olive oil and bake for 8 to 10 minutes or until just cooked through.
- Keep your eye on the fish; you really don't want to overbake it or it will dry out; the insides should have a trace of translucence in them.

- Preheat oven to 325F (165C). Using a baking dish just large enough to hold the fillets & their sauce, spray it w/non-stick cooking spray & set aside.
- In a sml bowl, mix together the softened cream cheese, lemon juice & shrimp. Season w/basil plus salt & pepper to taste.
