Here's a delicious stuffed pepper recipe that's easy to make. Each green bell pepper contains ground beef, onion, tomatoes, rice and cheese, and is cooked in tomato soup.

6 green bell peppers
salt to taste
1 pound ground beef
⅓ cup chopped onion
salt and pepper to taste
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
½ cup uncooked rice
½ cup water
1 cup shredded Cheddar cheese
2 (10.75 ounce) cans condensed tomato soup
water as needed

Steps:

  • Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
  • In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.
  • Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
  • Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

This is a great traditional Mexican dish. It takes a little bit of time, but it is worth every minute! Provecho! Serve with a side of Spanish Rice.

4 fresh poblano chile peppers
½ pound lean ground beef
1 onion, chopped
1 clove garlic, chopped
salt and pepper to taste
3 eggs, separated
1 cup shredded mozzarella cheese
2 roma (plum) tomatoes, chopped
½ cup all-purpose flour
1 cup corn oil

Steps:

  • Place whole peppers over an open flame (gas burner) or under the broiler. Roast, turning frequently until evenly black and blistered. Remove from heat, place in a plastic bag, and let them sweat for a while. This will allow the skins to peel of easily.
  • While the peppers are sweating, place the ground beef in a skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. When beef is fully cooked, add the onion, garlic and tomato, and cook for a few more minutes. Season to taste with salt and pepper.
  • Remove the peppers from the bag, and peel off the burnt skin. You may wish to wear protective gloves. Run peppers under cool running water to rinse away any burnt pieces. Make a small vertical slit in the side of the peppers, and remove the seeds and veins. Stuff each pepper halfway with the ground beef mixture, then fill the rest of the way with shredded cheese. Close the slits, and secure with toothpicks.
  • Whip egg whites in a large glass or metal bowl until thick and fluffy. Add the egg yolks, and whip for a minute to blend in.
  • Meanwhile, heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Coat the stuffed peppers with a light dusting of flour, then dip them in the egg so they are fully covered. Carefully place in the hot oil, and fry on both sides until golden. Drain on paper towels, then serve on a large platter.

6 medium green peppers
1 pound lean ground beef (90% lean)
1/2 cup chopped onion
1 can (16 ounces) chili beans, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1/2 teaspoon salt, optional
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
3/4 cup shredded cheddar cheese

Steps:

  • Cut tops off peppers and remove seeds. Place peppers in a large kettle and cover with water. Bring to a boil; cook until crisp-tender, about 3 minutes. Drain and rinse in cold water; set aside. , In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the beans, tomatoes, chili powder, salt if desired, pepper and cayenne. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Spoon meat mixture into peppers; place in an ungreased 3-qt. baking dish. Cover and bake at 350° for 20-25 minutes or until heated through. 5 red plum tomatoes, cored and coarsely chopped
1 garlic clove, minced
1/3 cup chopped white onion
1 tablespoon olive oil
Salt and freshly ground black pepper
1 1/2 cups Monterrey Jack cheese
1 tablespoon dried oregano
6 poblano chiles, charred, seeded, and deveined *see Cook's Note
3 egg whites, at room temperature
1 egg yolk, at room temperature
All-purpose flour, for dredging
Vegetable oil, for frying

Steps:

  • Sauce: Put the tomatoes, garlic and onion in a blender. Blend until smooth. In a medium saute pan, heat the oil over medium heat. Add the sauce and simmer for 5 minutes. Season with salt and pepper, to taste.
  • Chile rellenos: Mix the cheese and oregano in a small bowl. Cut a slit through 1 side of the charred chiles and fill each chile with 1/4 cup of the cheese mixture. Close with toothpicks to hold the filling in place. In a medium bowl, using an electric hand mixer, beat the egg whites on high speed until soft peaks form. Add the egg yolk and continue to beat for about 1 minute.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 3 minutes.) Dredge the filled chiles in flour until fully covered. Shake off any excess flour, then dip the chiles into the egg mixture, until well coated. Fry until golden brown and drain on paper towels.
  • Arrange the chiles on a serving platter, spoon the sauce on top and serve.

3 (7 oz) cans whole green chiles, drained, about 6 chiles
½ - 1 cup finely chopped onion
½ tsp chopped garlic
2 tbsp olive oil
3 cups shredded mexican cheddar cheese, 12 oz
1 rotisserie chicken, shredded, optional
½ cup milk
¼ cup cream
2 eggs
2 tsp chopped cilantro
salt & pepper, to taste
1 cup shredded mexican cheddar cheese, 4 oz
green tabasco sauce, to taste
1 bottle salsa
sour cream, optional

Steps:

  • 1. Preheat oven to 375. Cut a slit in the chiles lengthwise and lay flat. Discard seeds. Saute onion and garlic in olive oil in skillet until onion is tender. Stir in 3 cups cheese and the chicken. Fill each chile with equal portions of the cheese mixture and roll to enclose the filling. Arrange chiles seam side down in a greased 9 x 9 inch baking dish. Whisk the milk, cream, eggs, cilantro, salt and pepper in a bowl until mixed. Pour over the chiles. Sprinkle with 1 cup cheese and drizzle with Tabasco sauce. Bake for 35 to 40 minutes or until puffed, brown and firm. Heat salsa in pan and spoon over the top. Garnish with sour cream. Substitute fresh roasted Hatch chiles for the green chiles when in season. Double the recipe and freeze before baking for future use. Serves 4

Make the classic stuffed peppers, called chiles rellenos, that are common in Mexican homes and Mexican-style restaurants.

2 pounds large fresh green chiles , such as Poblano or Anaheim, roasted and peeled, or canned whole green chiles
1 pound queso blanco , Mexican Manchego or Chihuahua cheese, sliced or shredded
Optional : 1/4 cup all-purpose flour
5 large eggs, chilled and separated into whites and yolks
Pinch of salt
Oil, for frying, enough to reach a depth of 2 inches in your frying pan

Steps:

  • Gather the ingredients.
  • Roast the chiles on a hot grill or under a broiler on high heat. Use tongs to turn them occasionally, roasting until the skins are blackened and charred, about 20 minutes.
  • When the skin of the peppers is sufficiently charred and blistered, remove from the heat, place in a bowl with plastic wrap, and let them cool to room temperature. Once cool, remove from bowl and peel the skin from the cooled chiles, rinsing your fingers if they become sticky. (Do not rinse the peppers themselves, as you will be washing away most of their flavor.) Be careful to not tear the chile while peeling it.
  • Remove the seeds by making a small slice into the side of each chile, about 2 to 3 inches long, just big enough to get a spoon into. (Don't hesitate to use an existing tear if there is one.) Delicately insert the spoon into the pepper and scrape the seeds and the white membrane out, trying as hard as you can to not tear the flesh, as it can tear easily.
  • Place 2 ounces of cheese into each pepper; work slowly, delicately, and without forcing. Don't over-stuff the chile, making sure the open edges of the pepper still come together.
  • Place the flour on a large plate. Put a chile on the flour and sprinkle the rest of the flour on top. Rub your finger around on the surface of the pepper to make sure that it is completely coated, then dust off any excess flour and set chile aside. Repeat this procedure with each of the peppers.
  • To prepare the batter, whip the egg whites in a chilled bowl until they are stiff.
  • Briefly beat the egg yolks in a separate bowl.
  • Then slowly and gently fold them into the beaten whites with the pinch of salt.
  • Heat the oil in a frying pan to 350 F. Test it with a drop of batter before putting a whole chile in; if the drop sizzles and floats to the top, it's the right temperature. If it sinks, the oil is not ready; let it heat a little more.
  • Once the oil is hot enough, hold the chiles one at a time by the stem and support the bottom with your fingers or a spoon. Dip the stuffed pepper into the batter and coat completely.
  • Carefully place it into the hot oil to fry. Repeat with more chiles if there is room in your pan (don't overcrowd the pan). Cook for 1 to 2 minutes, turning over halfway until the batter is a crisp golden brown on all sides. Fry in batches if necessary.
  • Remove the chiles from the oil and let them drain on paper towels until all the peppers have been fried.
  • Serve chiles rellenos immediately. Enjoy!

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup cornmeal
1 cup milk

  • Cut cheese into slices 1/2" thick and the length of the chili.
  • Make a small slit in chili just big enough to insert cheese(you can also poke in some slivers of onion at this point).

Steps:

  • Preheat oven to 375ºF
  • Whip cream cheese with hand mixer until light and fluffy. Stir in shredded Colby and green chiles.
  • Carefully cut a pocket into each chicken breast. Make sure not to cut all the way through.

This chicken chile relleno recipe is the perfect combination of green chile flavor and the smooth texture of the creamy filling.

For the Chiles:
8 large poblano chilee peppers
2 pounds boneless, skinless chicken
4 ounces cream cheese
8 ounces queso fresco, or jack cheese, shredded or crumbled)
1 teaspoon cumin
1 teaspoon chile powder
1 teaspoon salt
For the Deep Fry:
6 eggs
1/2 teaspoon salt
1 cup oil, for frying

Steps:

  • Roast and peel each chile. If fresh chiles are unavailable, you can use canned whole green chiles.
  • Gather the ingredients.
  • Boil or bake the chicken until it is cooked through. Let the chicken cool and then use forks or your fingers to pull it apart to shred it.
  • Take two of the roasted chiles, cut the stem off and chop them up.
  • Add the shredded chicken and the chopped chiles to a large bowl and add in the cream cheese, queso fresco, cumin, chile powder, and 1/2 teaspoon of the salt. Use a large spoon to smash the cream cheese into the mixture to begin mixing it. You can use your hands to squish it all together.
  • Once the filling is made, set it aside. (Note: You can make the filling the day before and store it in the refrigerator until you are ready to use it.)
  • Insert a sharp knife into the top of the chile, just under the stem and slice downward about halfway down the chile. (This will create a slit along the side.)
  • Use a spoon or a knife, scrape the seeds and the white membrane out without tearing the chile flesh. (You can also do this with your fingers if the chile is soft enough.)
  • Place a scoop of chicken filling inside the chile. Use your fingers to pull the chile around the filling and squeeze it slightly to seal it. Repeat with all of the remaining chiles and filling. Set aside.
  • Crack each egg and separate the whites into 1 bowl and the yolks into another.
  • Whip the egg whites until they are stiff.
  • Stir the egg yolks in the separate bowl with a fork and a 1/2 teaspoon of salt.
  • Slowly pour the egg yolk mixture over the egg whites. Use a large spatula to gently fold the yolks into the whites until they are almost completely incorporated. (A few streaks of the yolk is OK.)
  • Heat the oil in a large pan over medium-high heat.
  • Take a chile and dip it into the egg white batter, being careful to keep the chile intact and not let the filling spill out. (You may need both hands or a combination of forks or spoons to do this.)
  • Gently place the chile into the hot oil and let it cook until the egg white batter is golden brown.
  • Flip the chile over and repeat with the other side. Once the chile is completely golden brown on all sides, remove it from the hot oil and place on a paper towel to drain. Repeat with all of the chiles until they are all golden brown and cooked through.
  • Serve the chiles immediately as they will begin to get soggy as they cool. ​​

14 prepared chiles or 3 or 4 sm. cans of whole green chiles
2 lb ground beef
1 diced bell pepper
1 diced onion
1/2 tsp salt
1/4 tsp black pepper
2 - 4 clove minced garlic
2 c water
3 Tbsp fajitas mix or 1 envelope taco bell fajitas seasoning
1/2 tsp ground cayenne pepper * optional
1/2 tsp habanero sauce * optional
1 Tbsp cornmeal
1 pt green chile enchilada sauce * if store bought add 1/4 tsp. dried cilantro
3/4 lb oxaca or mozarella cheese, sliced or shredded

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick spray and set aside.
  • 2. Prepare green chiles (instructions below) OR drain and set aside if using canned.
  • 3. To large skillet add ground beef, salt, black pepper, minced garlic, diced onion and diced bell pepper. Cook on high till meat is browned. Drain and return to skillet.
  • 4. Add water, fajitas mix, cornmeal, cayenne* and Habanero sauce*. Bring to a boil,reduce heat, cover and simmer for 15 to 20 minutes. Uncover and cook on medium high till very thick.
  • 5. Pour a just enough green chile enchilada sauce to barely cover the bottom of the 9 x 13 baking dish.
  • 6. Holding chile in hand, stuff with meat mixture.
  • 7. Put in baking dish seam side down. Repeat with remaining chiles.
  • 8. Pour remaining green chile enchilada sauce over the top. Cover with cheese and bake for 30 - 40 minutes or till nice and bubbly.
  • 9. TO PREPARE GREEN CHILES Blister chiles on all sides on a very hot grill or in your broiler. As they get done put them in a covered bowl. (this helps to sweat the skins off)
  • 10. PLEASE WEAR GLOVES! Peel off skin then cut off top and make a slit down the side. Open it up and remove seeds. It is now ready to use. You can see a step by step with pictures in my recipe "Fire Roasted Chilis/Peppers".

  • Rinse peppers; pat dry. Carefully cut a lengthwise slit down one side of each pepper. Using a small, sharp knife, gently scrape out as many seeds and as much membrane as possible without tearing the pepper. Leave stems attached.
  • For a charcoal grill, place peppers on the rack of an uncovered grill directly over hot coals. Grill for 10 to 12 minutes or until skin turns dark and blisters, turning often during grilling. (For a gas grill, preheat grill. Place peppers on the grill rack over heat. Cover and grill as directed.)
  • Wrap peppers in foil; let stand for 20 minutes. When cool enough to handle, hold peppers under cold running water, carefully peeling away blackened skin. Be careful not to tear peppers.
  • In a small bowl stir together goat cheese, colby cheese, and cayenne pepper. Spoon 2 to 3 tablespoons of the cheese mixture into each of the whole peppers. Do not overstuff. Pinch edges together with cheese to seal.
