Baked Cream Cheese French Toast Casserole image

This baked cream cheese french toast casserole is stuffed with sweet cream cheese and topped with a brown sugar crumble topping. It's a wonderful recipe for a brunch or breakfast gathering because you can prep the casserole the night before.

Time 9h25m

Number Of Ingredients 13

1 (12-14 ounce) loaf french bread, sourdough bread, or challah*
8 ounces (224g) block cream cheese, softened to room temperature*
2 Tablespoons (15g) confectioners' sugar (do not leave out)
3 teaspoons (15ml) pure vanilla extract, divided
8 large eggs
2 and 1/4 cups (540ml) whole milk
3/4 teaspoon ground cinnamon
2/3 cup (133g) packed light brown sugar
1/3 cup (69g) packed light brown sugar
1/3 cup (41g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
6 Tablespoons (86g) unsalted butter, cold and cubed
optional: maple syrup and/or confectioners' sugar for topping

Steps:

  • Grease a 9×13 inch or any 3-4 quart oven-safe dish with nonstick spray. Slice then cut the bread into cubes, about 1 inch in size. Spread half of the cubes into the prepared baking pan.
  • Using a handheld or stand mixer fitted with a whisk attachment, beat the room temperature cream cheese on medium-high speed until completely smooth. Beat in the confectioners' sugar and 1/4 teaspoon vanilla extract until combined. Drop random spoonfuls of cream cheese mixture on top of the bread. Layer the remaining bread cubes on top of cream cheese. (I like to make sure some cream cheese is still exposed on top just for looks.) Set aside.
  • Whisk the eggs, milk, cinnamon, brown sugar, and remaining vanilla together until no brown sugar lumps remain. Pour evenly over the bread. Cover the pan tightly with plastic wrap and refrigerate for at least 3-4 hours and up to 24 hours. Overnight is best.
  • Preheat oven to 350°F (177°C). Remove pan from the refrigerator.
  • Whisk the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cold cubed butter with a pastry blender or two forks. Sprinkle the topping evenly over the soaked bread.
  • Bake uncovered for 45-55 minutes or until golden brown on top. I usually bake it for 45 minutes because I like it softer. Drizzle with optional maple syrup or dust with confectioners' sugar. Serve warm.
  • Cover leftovers tightly and store in the refrigerator for 2-3 days.

STUFFED FRENCH TOAST I

Serve warm with a dollop of orange marmalade on the top and a good cup of coffee. Even though orange marmalade isn't a particularly popular preserve in my area of the country, it really makes this special. You can replace the liqueur with any flavored liquid non-dairy coffee creamer.

RASPBERRY AND CREAM CHEESE STUFFED FRENCH TOAST

Raspberry and Cream Cheese Stuffed French Toast image

I am a firm believer that if a dish has fruit in it then it must be good for you! Well, this delicious breakfast treat is good for your soul and spirits, if nothing else. It is a snap to prepare and so decadently delicious. We had to do some hunting before we found a bakery that carried challah bread, but it was time well...

Provided by Kellie Parker

Categories     Other Breakfast

Time 35m

Number Of Ingredients 9

1 (8oz) pkg cream cheese softened
12 (3/4 inch thick) slices day old brioche challah or hawaiian bread
1 c fresh raspberries *
3 eggs (beaten)
3/4 c half-and-half, light cream, or milk
3 Tbsp sugar
1/2 tsp vanilla
1 dash(es) of salt
pure maple syrup

Steps:

  • 1. Spread cream cheese evenly over one side of each slice of bread.
  • 2. Top half of slices of the slices with raspberries. Top with remaining bread slices - cream cheese sides down - to make "sandwiches".
  • 3. Combine beaten eggs, half-and-half, sugar, vanilla, and salt in shallow bowl. (For added taste, you might want to add a few drops of Grand Marnier)
  • 4. Dip each sandwich in egg mixture, turning carefully to coat both sides,. Place sandwiches in greased 15x10x1-inch baking pan. Bake in 425 degree oven 15 minutes or until golden brown, turning once after 10 minutes. Serve warm with maple syrup if desired. NOTE: If desired, you can substitute frozen raspberries. Thaw and drain; reserve juice for another use.

CREAM CHEESE-STUFFED FRENCH TOAST

Cream Cheese-Stuffed French Toast image

My husband clipped this one out of the newspaper(not sure which one) several years ago and made it for me on Mother's Day! What a delicious surprise!

Provided by lorirn0000

Categories     Brunch

Time 15m

Yield 6 serving(s)

Number Of Ingredients 17

1 large French baguette, preferably day-old (16-20 oz)
1 (8 ounce) package reduced-fat cream cheese
1/4 cup chopped pecans or 1/4 cup walnuts
dried cherries (optional) or cranberries (optional)
1 teaspoon vanilla extract
2 tablespoons pure maple syrup
4 eggs
1 cup reduced-fat milk
1/4 cup fat-free or regular half-and-half
1 pinch salt
1/4 teaspoon cinnamon
1 pinch nutmeg
2 teaspoons cannola oil
1 tablespoon butter
confectioners' sugar
sliced fresh berries
pure maple or favorite syrup

Steps:

  • The night before, slice the baguette into 1 to 1 1/2-inch thick slices; you should get at least 12. Make a small slit on the bottom side of each slice to make a deep pocket for stuffing. you can do this when ready to cook, but it's best to let the bread sit out overnight.
  • Just before cooking, in a small bowl, mix the cream cheese, nuts, dried fruit if using, vanilla extract and maple syrup. Evenly divide the cream cheese mixture, using a spoon to stuff it in each pocket.
  • In a large bowl, whisk the eggs, milk, half-and-half, salt, cinnamon and nutmeg.
  • When ready to cook, warm the oil and butter on a griddle or large skillet over medium-high heat.
  • Dip the stuffed baguette slices in the egg mixture for a few seconds so it coats evenly. Don't let them soak too long or they will become mushy. Transfer to the griddle and cook on each side until browned.
  • Remove from the griddle and place on a serving plate. Garnish with a dusting of confectioners' sugar and sliced berries. Serve with your favorite syrup.

STUFFED FRENCH TOAST WITH FRUIT & CREAM CHEESE (BAKED)

Stuffed French Toast With Fruit & Cream Cheese (Baked) image

Came up with this as a quick and filling breakfast while I was pregnant. The whole family loves it. I've found the leftovers are a little better because the flavors have a chance to blend more. It looks like a lot but it's actually quick & easy to put together. Please follow the steps for mixing ingredients as they're listed... This prevents the "floating" of the dry ingredients and makes for a smooth & blended caramel colored egg mix. Also, I always spread the cream cheese & pie filling over the bread slices rather than pouring it on top so they end up as "sandwiches". We dish them out as sandwiches but have to eat with forks :)

Fill each pocket with about 1 tablespoon of the cream cheese mixture (see Tips).
  • In small bowl, combine egg whites, egg, milk, vanilla and apple pie spice. Lightly coat nonstick griddle with cooking spray; heat over medium heat.
  • Dip stuffed bread slices into egg mixture, coating both sides. Place bread slices on hot griddle. Cook about 3 minutes or until golden brown, turning once.
  • Meanwhile, in small saucepan, heat 1/2 cup spreadable fruit until melted, stirring frequently. Serve over French toast.
