DRUNKEN STUFFED FIGS



Drunken Stuffed Figs image

This has been a hit at many dinner parties. Figs are stuffed with a creamy, rich mascarpone cheese and cognac mixture, then rolled in toasted hazelnuts. Garnish with whole hazelnuts and mint leaves when serving. If an injector is unavailable, marinate the figs in 1/2 cup cognac for approximately 30 minutes.

24 fresh figs
1 cup cognac
1 cup mascarpone cheese
½ cup confectioners' sugar
1 ½ cups toasted hazelnuts
2 tablespoons chopped fresh mint leaves

Steps:

  • Using a marinade injector baster, inject figs with about 1 tablespoon cognac, dividing the amount equally amongst the figs. Chill in the refrigerator while preparing remaining ingredients.
  • In a medium bowl, blend remaining cognac, mascarpone cheese and 3/4 of the confectioners' sugar. Chill in the refrigerator while preparing remaining ingredients.
  • In a blender or food processor, mix toasted hazelnuts, mint leaves and remaining confectioner' sugar. Place the mixture in a medium bowl.
  • Remove stems from figs, and cut in half lengthwise. Fill halves with equal portions of the cognac and mascarpone cheese mixture. Roll in the hazelnut mixture. Arrange on a medium serving platter, cheese side up, and chill in the refrigerator until serving.

The end result of stuffing the loin with figs is quite fabulous. The figs are imbued with the flavor of the meat. The meat gains moisture, sweetness and complexity from the figs. The presentation is considerably lovelier than an unadorned roast.

1 1/2 cup dried figs
1 boneless pork loin, 2 to 3 pounds
Salt
freshly ground pepper
3 or 4 fresh rosemary sprigs, minced
1/2 cup red wine, more if necessary

Steps:

  • Put figs in hot water to soak. Preheat oven to 450 degrees.
  • Wriggle a thin, sharp knife into each end of meat, making a kind of pilot hole. Then use handle of a long wooden spoon to force a hole all the way through meat, making it as wide as your thumb.
  • Drain when figs are tender but not mushy, reserving liquid. Stuff figs into roast, all the way to center from each end.
  • Combine salt, pepper and rosemary and rub it all over meat. Put meat in a roasting pan and pour about half a cup of fruit-soaking liquid over it. Roast undisturbed for 20 minutes. Lower heat to 350 degrees and continue to cook, basting with pan juices (or added liquid, like wine or water, if necessary) every 15 minutes or so. When an instant-read thermometer registers 145 to 150 degrees - probably after 40 to 60 minutes - remove roast to a warm platter. (When checking meat, be sure thermometer is in meat, not fruit.)
  • Let sit for 15 minutes. Meanwhile, put roasting pan on stove over one or two burners set to medium-high. If there is a lot of liquid, reduce it to about half a cup, scraping bottom of pan with a wooden spoon to release any brown bits. If pan is dry, add half a cup of wine and follow same process. When sauce has reduced, slice roast and serve with sauce.

1 teaspoon freshly grated nutmeg

1 lb dried calimyrna fig

Steps:

  • Wash figs and allow to dry out for 2 days at room temperature.
  • Preheat the oven to 325 degrees F.
  • In a medium bowl, combine the walnuts, cinnamon, cloves, nutmeg, and ginger.
  • Make a slash in the bottom of each fig and fill them with the walnut mixture, then press them closed.
  • Place the figs cut side down on a baking sheet and bake for 30 minutes, or until golden.
  • Let cool completely before serving.
  • Store in an airtight container for up to 6 months.

Steps:

  • Remove the hard core from the dried figs. Cut a pocket in each with the point of a knife, then stuff each pocket with ½ tsp dolcelatte cheese.

Recipe for fresh figs stuffed with goat cheese, roasted and topped with date honey. Simple and scrumptious appetizer, all natural finger food.

12 fresh figs
4 oz soft goat cheese (for vegetarian use cheese with a vegetarian rennet)
1 tsp extra virgin olive oil
Salt and freshly ground black pepper
1/4 cup date syrup ((you may substitute honey))

Steps:

  • Purchase or make a batch of date syrup, also known as date honey or silan, in advance of this recipe for best flavor. Alternatively you may substitute regular honey.Preheat oven to broil. Trim off stems of figs and cut an "X" in the top of each fig 1/3 way through. Place the figs on a greased, parchment or silpat-lined sheet tray. If they are a little wobbly, you can shave a bit off the bottoms of the figs so they stand upright.
  • Place goat cheese in a plastic or piping bag and massage with warm hands until softened. Cut a tip off one of the bottom corners of the bag and pipe the cheese into each fig, dividing your 4 oz. cheese evenly between the 12 figs.
  • Lightly brush the figs with olive oil and sprinkle with a little salt and a generous amount of freshly cracked black pepper.
  • Broil the figs for about 4 minutes or until you can see little brown bits on the goat cheese. Date honey or regular honey should be gently warmed in a small saucepan at this point, it should be easily pourable and warm but not hot.
  • Remove figs from oven and drizzle with warm date honey.
  • Serve warm or at room temperature.

24 dried figs (about 10 ounces)
3 ounces fresh goat cheese, at room temperature
1 tablespoon prepared pesto
1 tablespoon fresh lemon juice, plus 1 teaspoon lemon zest
Kosher salt and freshly ground black pepper
12 slices bacon, halved crosswise

Steps:

  • Position an oven rack in the center of the oven, and preheat the broiler. Slice the figs about 3/4 of the way down the center lengthwise, and open each like a book; set aside.
  • Combine the goat cheese, pesto, lemon juice and zest and 1/4 teaspoon each salt and pepper in a small bowl with a rubber spatula. Fill each fig with about 1 teaspoon of the cheese-pesto mixture.
  • Wrap each stuffed fig with a slice of bacon, and secure with a toothpick. Put the figs, seam-side down, on a rimmed baking sheet.
  • Broil, turning once, until the bacon is cooked through and crispy, about 4 to 5 minutes per side.

6 oz dried figs
4 oz dried apricots
1/2 c white wine
2 Tbsp packed brown sugar
2 tsp minced garlic, separated
1 Tbsp fresh or dry herbs, rosemary, basil, thyme, chopped
2 1/2 lb boneless pork loin
1/4 c Dijon mustard

Steps:

  • 1. For Stuffing, in a small saucepan, add dried fruit, 1 tsp garlic, brown sugar, herbs and wine. Bring to simmer, cover and cook until fruit is plump and tender and the wine has evaporated. If fruit is still tough, add a little more water and simmer until tender. Set aside to cool.
  • 2. Preheat oven to 425 degrees. Stand the roast on its end and insert a long slender knife down the center of the loin to make a 1 1/2 inch pocket and pack the fruit into the pocket working from both ends of the loin.
  • 3. In a small bowl mix the mustard with 1 tsp minced garlic, 1/2 tsp salt, and 1/2 tsp pepper. Spread mixture over pork. Place on loin on a rack in a roasting pan. Roast 15 minutes then reduce temperature to 350 degrees and continue roasting for 50 to 60 minutes until a meat thermometer registers 155 degrees. Let rest 15 minutes and slice.
