1 (12 ounce) box jumbo pasta shells
1 (6 ounce) can crabmeat, drained
1 (6.5 ounce) can small shrimp, drained
3 teaspoons minced celery
1 tablespoon minced onion
1 cup creamy salad dressing (such as Miracle Whip®)
1 cup shredded Swiss cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the pasta shells, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. well in a colander set in the sink, then rinse with cold water until the pasta is cold. Drain thoroughly.
  • While the pasta is cooking, stir the crabmeat, shrimp, celery, onion, and creamy salad dressing in a mixing bowl. Stir in the shredded Swiss cheese.
  • Stuff each shell with some of the seafood mixture, and place into a serving dish. Keep refrigerated until ready to serve.

24 uncooked jumbo pasta shells
1 tablespoon finely chopped green pepper
1 tablespoon chopped red onion
1 teaspoon plus 1/4 cup butter, divided
2 cans (6 ounces each) lump crabmeat, drained
1 package (5 ounces) frozen cooked salad shrimp, thawed
1 large egg, lightly beaten
1/2 cup shredded part-skim mozzarella cheese
1/4 cup mayonnaise
2 tablespoons plus 4 cups 2% milk, divided
1-1/2 teaspoons seafood seasoning, divided
1/4 teaspoon pepper
1/4 cup all-purpose flour
1/4 teaspoon coarsely ground pepper
1-1/2 cups grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a small skillet, saute green pepper and onion in 1 teaspoon butter until tender; set aside., In a large bowl, combine crab, shrimp, egg, mozzarella cheese, mayonnaise, 2 tablespoons milk, 1 teaspoon seafood seasoning, pepper and green pepper mixture., Preheat oven to 350°. Drain and rinse pasta; stuff each shell with 1 rounded tablespoon of seafood mixture. Place in a greased 13x9-in. baking dish. , In a small saucepan, melt remaining butter over medium heat. Whisk in flour and coarsely ground pepper; gradually whisk in remaining milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in Parmesan cheese., Pour over stuffed shells. Sprinkle with remaining seafood seasoning. Bake, uncovered, 30-35 minutes or until bubbly.

1 (16 ounce) package jumbo pasta shells
4 cups large curd cottage cheese
12 ounces mozzarella cheese, shredded
½ cup grated Parmesan cheese
2 eggs, lightly beaten
1 pinch garlic powder
1 teaspoon dried oregano
1 teaspoon dried parsley
1 (26 ounce) jar spaghetti sauce
¼ cup grated Parmesan cheese

Steps:

  • Cook shells according to package directions. Place in cold water to stop cooking. Drain.
  • Mix together cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, and garlic powder. Rub the dried herbs in the palms of your hands to pulverize them, and stir into the cheese mixture. Stuff mixture into the shells.
  • Spread 1/3 of spaghetti sauce in the bottom of a 15 x 10 inch pan. Place shells open side up, and close together in pan. Spread remaining sauce over top, and sprinkle with remaining 1/4 cup Parmesan cheese.
  • Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes, or until bubbly. Let stand 10 minutes before serving.

This is my grandma's stuffed crab recipe. Hope you like it as much as we do

2 lb crabmeat, fresh
4 stick butter
2 large onions
2 large eggs
1 c bread crumbs
1/2 c celery chopped fine
1/2 c bell pepper chopped fine
1/4 c parsley flakes
creole seasoning to taste

Steps:

  • 1. Sauté onions in butter for approximately 5 minutes.
  • 2. Add crab meat and cook an additional 5 minutes.
  • 3. Add parsley, celery, bell pepper and seasoning.Cook for 5 minutes over medium heat.
  • 4. Add eggs, & bread crumbs and cook 1 minute. Remove from heat.
  • 5. Stuff mixture into crab shells and sprinkle with remaining bread crumbs. Bake in 350°F. oven for 30 minutes, or deep fry until golden brown.

I was making these for Easter this year and didn't fully like any of the recipes I found, so I came up with this one from ingredients from about 10 recipes. These are very filling, so you may want to slice in half before serving. Or, I did see some large pasta shells (not the stuffing ones) about 1/4 the size and thought these would be better.

8 ounces cream cheese
1 (8 ounce) package baby shrimp
2 cans crabmeat or 1 (8 ounce) package imitation crabmeat (chopped)
2 scallions (minced)
1/2 package pasta shells (large)
1/3 cup mayonnaise
1 tablespoon sugar
1 teaspoon lemon juice
1 teaspoon cayenne pepper
salt & pepper

Steps:

  • Beat together the cream cheese, mayonnaise, sugar, lemon juice, cayenne, salt, and pepper until smooth using hand mixer or food processor.
  • Fold in the crab meat, shrimp, and scallions until evenly combined.
  • Stuff the shells with the mixture and place on a serving dish.
  • Cover tightly and refrigerate for at least an hour and up to 12 hours before serving.
  • Can cut the shells in half prior to serving as these are very filling.

1 tablespoon olive oil
2 cloves garlic, finely chopped
1 (15 ounce) can plum tomatoes, in juice,chopped

2 cups ricotta cheese
1/2 cup grated parmesan cheese

1 pound large shells
2 tablespoons extra-virgin olive oil (EVOO)
2 tablespoons butter
2 crushed cloves garlic
sliced
A fat pinch of red pepper flakes
1 cup vodka (Rach likes Tito's)
One 28-ounce can diced or whole Italian tomatoes (if using whole
crush into pieces by hand)
1 bottle tomato passata
A sprinkle of salt
A sprinkle of sugar
A handful of basil leaves
torn
1 cup heavy cream
1 tablespoon extra-virgin olive oil (EVOO)
2 tablespoons butter
1 large shallot
finely chopped
2 large cloves garlic
chopped
Salt and black pepper or white pepper
2 tablespoons fresh thyme
chopped
2 teaspoons lemon zest
½ cup dry vermouth or vodka
1 pound pound crab meat
picked carefully for shell and tendon (Rach likes king leg meat)
A few dashes hot sauce
Juice of ½ lemon
3 cups ricotta cheese
1 egg
2 cups grated Parmigiano-Reggiano cheese
½ cup packed flat parsley and celery tops
chopped
2 cups shredded mozzarella
Handful fresh basil
to garnish

Steps:

  • Bring a large pot of water to boil and season it with salt
  • Add pasta and under cook the pasta 3 minutes less than directions
  • Drain, arrange cut-side up on parchment-lined tray
  • For the vodka sauce, in large pot over medium heat, combine EVOO, 2 turns of the pan, and butter
  • When butter melts, stir in the garlic and red pepper and stir 2 minutes, add vodka and reduce by half, add tomatoes, passata, salt, sugar, and basil, and simmer 20 minutes, then add cream and reduce heat to low
  • Preheat oven to 400˚F
  • For the crab filling, place a skillet over medium heat with EVOO and butter
  • When butter melts, add shallots and garlic, season with salt, add thyme and lemon zest, and stir 2 to 3 minutes
  • Add dry vermouth or vodka and let it almost evaporate, add crab, combine, add hot sauce and lemon juice and cool
  • Combine with ricotta, egg, half the Parm cheese and chopped parsley and celery leaves
  • Pour a couple of cups of sauce into a baking dish and fill shells, arrange open-side up and pour additional sauce over, making a stripe across each row of the shells
  • I angle the shells in to fill pan tightly
  • Top with some shredded mozzarella and remaining Parm
  • Leave enough of the shells peeking out so you can see that these are crab-stuffed shells
  • Cover shells with foil and bake 30 minutes, uncover and bake until cheese is brown and bubbly, 12 to 15 minutes more
  • Garnish with fresh basil

6 tablespoons unsalted butter
1 small red onion, diced
1/2 cup diced yellow pepper
1/2 cup small diced fennel
1 clove garlic, chopped
Kosher salt
Freshly ground black pepper
4 cups fresh bread crumbs
2 Dungeness crabs, poached (see note), meat removed, shells, washed, and trimmed
1/2 cup mayonnaise
1 lemon, zested and juiced
2 tablespoons chopped tarragon
1/4 cup chopped parsley
4 scallions, chopped

Steps:

  • In a skillet over low heat melt the butter, add the onion, yellow pepper, fennel, and garlic.
  • Season with salt and pepper. Cook slowly for about 6 minutes until all are tender, transfer mixture to a bowl, add bread crumbs, and allow to cool.
  • Preheat oven to 375 degrees F.
  • When cooled add crab meat, mayonnaise, lemon zest, lemon juice, tarragon, parsley, scallions, and season with salt and pepper, to taste. Mix the ingredients well and stuff the shells. Bake for 25 minutes until warmed through.
  • Note: the crabs should be poached in a court boullion made with 2 quarts water, 1 chopped carrot, 1 chopped yellow onion, and 1 chopped celery stalk boiled with 1/2 teaspoon each black peppercorns and coriander seeds. Bring the mixture to a boil and after 10 minutes, add 1 lemon, thinly sliced. Let boil for 10 more minutes, salt the water, and poach the crabs.

  • Seafood ... You want a mix of approximately 2 1/4 cups. But you can mix it up any way you want. I usually get small shrimp and bay scallops since they will be cut up, it isn't necessary to pay a premium price for the extra large. The stuffing mix will freeze well, so if you have leftover, just pop in the freezer. I have found the amounts for the shellfish to work out pretty well. Rough chop the seafood and set off to the side to take the chill off. If using canned crab, sift through the crab to make sure there are no shells or cartilage and drain well.
  • Add the butter to a medium saute pan and bring to medium high heat. Add the shrimp and scallops and cook just 1-2 minutes until the shrimp are pink and the scallops are firm. These are small pieces and don't take more than a minute or two. Remove immediately and add to a bowl with the crab meat. Make sure to add all the butter too.
  • Vegetables ... In the same pan, add the butter (there is extra butter, but this is added to stuffing mix) and bring to medium to medium high heat again. Add in the garlic, celery, onion and cook 3-4 minutes until the vegetables are tender. Add in the pimentos, old bay seasoning, lemon juice, mix well and remove from the heat. Let it cool a couple of minutes and add to the seafood, including the butter in the pan too.
  • Breading ... Add the milk to a pie plate and dip each piece of bread for only a second to lightly moisten it. Then break up the bread over the bowl with the vegetables and the seafood. Three (3)-4 pieces should equal about 1 1/2 cups of breading. Add in the parsley, parmesan, and season with a pinch of salt and pepper. The stuffing should be moist which is what you want. If it is too moist, add a few dry bread crumbs, only if necessary.
