I can't remember where this recipe originated from, but I do remember that it said it was good with corn on the cob, which is a good way to eat it. Think: cottage evenings, barbecues, a little Jerk chicken...

4 large bell peppers
1/2 cup red onion, finely chopped
1/2 cup red pepper, finely chopped
2 tablespoons olive oil
salt & freshly ground black pepper
1/4 cup fresh chives, chopped finely
2 cups mashed potatoes
2 cups tomato sauce

Steps:

  • Pre-heat oven to 350 degrees.
  • Slice the tops off the peppers, just below the stem, to make a cup.
  • Seed them,& remove the spines.
  • Gently parboil peppers for about 5 minutes, remove& drain upside down.
  • Saute onion& red pepper in oil until onions are soft.
  • Add salt& pepper, chives,& mix into the mashed potatoes.
  • Stuff the peppers.
  • Stand peppers in a deep-sided casserole dish& pour the tomato sauce into the bottom.
  • Bake at 350 degrees, covered, about 20 minutes.
  • Uncover,& bake 5 minutes longer.
  • Serve hot.

8 poblano chiles
vegetable oil, for brushing
12 ounces potatoes, peeled (about 3 small to medium-size ones)
1 1/4 cups crumbled firm goat cheese
3/4 cup grated cheddar cheese
salt & freshly ground black pepper
1/4 cup sour cream
1/4 cup vegetable oil
2 red chilies, seeded and chopped
2 garlic cloves, crushed
4 scallions, chopped
1 (14 ounce) can tomatoes, chopped
4 corn tortillas, chopped
2 tablespoons brown sugar
1 tablespoon chopped oregano

Steps:

  • Preheat oven to 400°F Cut slit in end of each chile to allow release of steam during cooking. Brush chiles with oil and roast in oven 5 to 10 minutes, until skins are lightly charred and blistered. Place in plastic bag and seal. Let them steam 5 minutes; using small knife, carefully peel off skin. Slit each chile open from top to bottom and remove seeds.
  • In boiling salted water cook potatoes until just tender, then drain and place in bowl. Crush with fork, mix in goat cheese, and season to taste with salt and pepper. Stuff chiles with this mixture and arrange single layer in baking dish.
  • For sauce, in frying pan heat oil, then add red chiles, garlic, and scallions and cook about 2 minutes, until softened. Add tomatoes, corn tortillas, brown sugar, and oregano, and cook over gentle heat 10 minutes. Pour into blender and blitz to almost smooth but slightly textured sauce. Pour sauce over stuffed chiles and bake 10 to 15 minutes. Sprinkle top with grated cheddar cheese, pour sour cream over that, and serve. Makes 4 servings.

9 Roma tomatoes, whole
1 dried guajillo pepper
1 medium onion, peeled and chopped
3 garlic cloves, peeled and coarsely chopped
Vegetable oil
1 Tbsp Mexican oregano, crushed
½ Tbsp cumin seed, whole
1 Tbsp chicken bouillon paste
1 tsp salt
1 - 4 oz package Idahoan® Buttery Homestyle® or Bacon & Cheddar Chipotle Mashed Potatoes
4 fresh poblano chilies
8-10 oz queso fresco, crumbled
5-6 Tbsp flour
4 eggs, separated
Frying oil

Steps:

  • Bring a 2 quart saucepan of water to a boil. Add tomatoes and guajillo pepper. Boil until tomatoes are tender, about 10 minutes.
  • In a frying pan, cook onion and garlic in a small amount of oil until you see some browning. Set aside.
  • Transfer tomatoes to a blender with 1 ½ cups of the water. Add the onion, garlic, oregano, cumin, chicken bouillon and salt. Blend until puréed.
  • Pour purée into a saucepan and bring sauce to boil. Remove from heat and set aside.
  • Roast the chiles on a hot dry pan or in a 375° oven until mostly blackened on each side.
  • Place the chiles in a plastic grocery bag for approximately 30 minutes.
  • Peel the blackened skin from the chiles with your fingers; it's not important to get every bit of the skin off.
  • Carefully slice each chile from the base of the stem to bottom. Remove most of the seeds and membranes.
  • Mix Idahoan® Mashed Potatoes with 1 ¾ cup boiling water. Blend until smooth.
  • Stir all but ¼ cup of the crumbled cheese into potatoes and stuff the peppers dividing the mixture evenly amongst the four chiles.
  • Roll each chile in flour and set aside.
  • Beat the egg whites until stiff then gently add the egg yolks and mix.
  • Place each flour coated chili in egg batter and cover completely.
  • Heat a pan with ½" deep oil to medium high. Add chilies two at a time and fry until golden brown, using a large spoon to carefully bathe hot oil on the top of each to brown. Repeat with the other two chiles. Drain on paper towels.
  • Spoon sauce onto a serving plates and place each chile relleno on top.
  • Top with remaining sauce and cheese.

6 large poblano chiles
3 cups mashed potatoes
1 1/4 cups fresh or frozen (thawed) corn
1/4 cup chopped fresh cilantro
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 teaspoon ground cumin
3/4 cup shredded Cheddar cheese (3 oz)

Steps:

  • Set oven control to broil. Line cookie sheet with foil. Place poblano chiles on cookie sheet. Broil 8 minutes, turning once, until blackened. Place blackened chiles in bowl; cover tightly. Let stand 10 minutes. Peel off charred skin from chiles.
  • Heat oven to 350°F. In large bowl, mix mashed potatoes, 1 cup of the corn, the cilantro, green chiles, cumin and 1/2 cup of the cheese. Cut slit down center of each poblano; stuff with potato mixture. Place in shallow baking dish. Sprinkle with remaining 1/4 cup corn and 1/4 cup cheese.
  • Bake uncovered 15 minutes or until cheese is melted and tops are lightly browned.

2 unpeeled baking potatoes, scrubbed
6 poblano chiles, roasted and peeled
3 avocados, peeled, pitted, and coarsely mashed
3 tablespoons olive oil
1/2 tablespoon black peppercorns, freshly ground
Fine sea salt to taste
Roasted Garlic Cloves
18 plump garlic cloves
1 cup skim milk
1 tablespoon olive oil
Marinade
1 1/2 cups water
3 small cones piloncillo (Mexican raw sugar), crushed with a meat mallet, or 6 tablespoons packed dark brown sugar
1/4 cup olive oil
1 large yellow onion, halved, peeled, and thinly sliced
2 cups cider vinegar
1 teaspoon dried Mexican oregano
1 teaspoon black peppercorns
8 cloves
6 allspice berries
4 bay leaves

Steps:

  • 1. Put the potatoes in a medium saucepan and add lightly salted water to cover. Bring to a boil over high heat. Reduce the heat to medium-low and cook until the potatoes are tender about 30 minutes. Drain and let stand until cool enough to handle. Peel the potatoes and place in a medium bowl. Mash the potatoes, leaving them a bit lumpy
  • 2. Make a lengthwise cut in each chile and remove the seeds. Combine the mashed potatoes, avocados, olive oil, and ground peppercorns in a medium bowl and season with the salt. Stuff the chiles with the potato mixture. Place in a 9-by-13-inch baking dish. Cover with plastic wrap and refrigerate.
  • 3. To roast the garlic: Position a rack in the center of the oven and preheat the oven to 350°F. Bring the garlic and milk to a boil in a medium saucepan over medium heat, then boil for 3 minutes, taking care that the milk does not boil over. Drain the garlic in a sieve, discarding the milk. In a small bowl, toss the garlic cloves in the olive oil. Spread the garlic in a single layer on a baking sheet and cover with aluminum foil. Roast until tender and golden, about 20 minutes. Set aside.
  • 4. To make the marinade: Bring the water and piloncillo or brown sugar to a boil in a small saucepan over high heat. Boil, stirring often, until the sugar is dissolved and the water is reduced to 1 cup, about 5 minutes. Remove from the heat.
  • 5. Heat the oil in a medium skillet over medium heat. Add the onion and cook until it begins to soften, about 1 minute. Add the sugar water, vinegar, oregano, peppercorns, cloves, allspice, and bay leaves and bring to a simmer (do not boil). Remove from the heat, add the roasted garlic, and let cool completely. Pour the marinade over the chiles, cover, and refrigerate for at least 6 hours or up to 12 hours.
  • 6. To serve, remove the chiles from the refrigerator and let come to room temperature. Place a single chile on each plate, along with some of the marinade, including some of the onion and garlic cloves.

2 baking potatoes, peeled and cut into 1-inch chunks (8 ounces each)
1/4 cup milk
4 tablespoons butter, divided
1 lemon, grated peel and reserve the juice from lemon
salt and pepper (for extra flavor I would recommend a tablespoon of sour cream or small amount of shredded cheese)
4 bone-in chicken breast halves (about 3.5 pounds total)
1 tablespoon extra virgin olive oil
2 tablespoons chopped flat leaf parsley

Steps:

  • Preheat oven to 400 degrees.
  • In a medium saucepan, bring potatoes and enough cold water to cover to a boil. Simmer until potatoes are fork tender, about 15 minutes.
  • Drain and return potatoes to pan.
  • Add milk, 2 tablespooons butter, and lemon peel. Mash until smooth. Can add other seasonings if desired.
  • Season with salt and pepper.
  • Transfer potatoes to a work surface, flatten into an even round and cut into quarters.
  • Run your fingers under the skin of each chicken breast to separate it from the meat.
  • Place one quarter of the potatoes unter the skin, gently pressing to evenly distribute.
  • Place stuffed chicken breasts in a roasting pan. Drizzle with olive oil and season with salt and pepper.
  • Bake until tender and juices run clear, about 40 minutes.
  • Transfer to chicken to a plate. Stir lemon juice, parsley and remaining butter into the pan juices, scraping any borwned bits from the bottom. Spoon sauce over the chicken and serve.

1 pound boiling potato (about 6 small), peeled and sliced
1 clove garlic (large), thinly sliced
1/3 cup milk
3 tablespoons unsalted butter, at room temperature

1 cup cooked corn kernels, fresh (from about 1 medium ear) or thawed, if frozen

  • 1. Prepare the sauce. Reserve covered, off heat. Prepare the chiles. Then, with a small sharp knife cut a slit lengthwise from the stem end to within 1-inch of the tip of each roasted and peeled chile. Keep the stems intact. Cut out the seed pod and rinse the chiles under running water to wash out the remaining seeds. Pat the chiles dry with paper towels. Set aside on a plate. 2. Preheat the oven to 350°. Vegan Enchiladas Stuffed With Garlic Mashed Potatoes image

In these vegan enchiladas, warm corn tortillas are bathed in a spicy and bright sauce of chiles and tomato, and wrapped around creamy garlic mashed potatoes.

3 Tbsp. vegetable oil
3 pasilla or ancho chiles, seeds removed, rinsed
7 guajillo chiles, seeds removed, rinsed
½ large white onion, thinly sliced
4 garlic cloves, peeled
½ tsp. kosher salt
1 tsp. dried oregano
1 tsp. ground cumin
1 14-oz. can whole peeled tomatoes
1 cup low-sodium vegetable broth
Kosher salt, freshly ground pepper
1 head of garlic
¼ cup vegetable oil, plus more
1½ lb. medium russet potatoes, scrubbed
2 Tbsp. nutritional yeast
1 Tbsp. mushroom powder (optional)
¼ tsp. ground cumin
1-1¼ cups unsweetened almond milk
12 (6") corn tortillas
Thinly sliced white onion, sliced avocado, halved cherry tomatoes, and cilantro sprigs (for serving)

Steps:

  • Heat oil in a large skillet over medium-low. Add chiles and cook, turning constantly with tongs, until slightly darkened in color and fragrant, about 3 minutes. (Be careful not to burn chiles or they'll become bitter.) Transfer chiles to a medium bowl, leaving oil behind in skillet; reserve skillet. Pour 3 cups hot water (6 cups if doubling base recipe) over chiles and weigh down chiles with a smaller bowl to keep submerged. Let soak until softened, about 10 minutes.
  • Meanwhile, cook onion, garlic, and salt in reserved skillet, stirring occasionally, until browned and slightly softened, 12-15 minutes. Add oregano and cumin and cook, stirring, until fragrant, about 1 minute. Transfer onion mixture to a blender.
  • Add chiles and 1 cup chile soaking liquid to blender and purée, adding more soaking liquid if needed, until smooth. (If you don't have a high-powered blender, you may want to pass purée through a fine-mesh sieve.) You should have 2½ cups chile base. If you have less, add more chile soaking liquid and blend again to combine. Do ahead: Chile base can be made 5 days ahead. Let cool; transfer to an airtight container and chill, or freeze up to 3 months.
  • Preheat oven to 350°. Purée chile base, canned tomatoes, and broth in a blender until smooth. Transfer to a medium saucepan and season with salt and pepper. Partially cover (to avoid splattering) and bring to a simmer over medium heat; cook, stirring occasionally, until enchilada sauce thickens slightly and flavors meld, 18-20 minutes.
  • Meanwhile, slice ½" from top of garlic, exposing cloves. Set on a square of foil and drizzle with oil; season with salt and pepper. Wrap up foil to encase garlic and bake until very tender, 50-60 minutes. Unwrap, let cool slightly, then squeeze out cloves into a medium bowl.
  • Place potatoes in a medium pot and pour in cold water to cover by 2"; season generously with salt. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, 20-25 minutes. Drain potatoes and let cool slightly, then peel. Transfer to bowl with garlic and add nutritional yeast, mushroom powder (if using), cumin, 1 cup almond milk, and remaining ¼ cup oil; season with salt and pepper. Mash with a potato masher or fork, adding up to ¼ cup more almond milk if needed, until smooth and creamy. Set potato filling aside.
  • Spread ½ cup enchilada sauce in a 13x9" baking dish. Warm tortillas on a dry comal or an oiled griddle until pliable, about 30 seconds per side and set aside. Spoon ¼ cup enchilada sauce into a shallow dish. Dredge a tortilla in sauce on both sides to coat. Fill with ⅓ cup reserved potato filling and roll up tightly. Place enchilada, seam side down, in baking dish. Repeat process with remaining tortillas, using more sauce as needed and packing enchiladas tightly into baking dish. Spoon more sauce over, reserving some for serving. Cover enchiladas with foil and bake until warmed through, 12-15 minutes.
  • Uncover and top with white onion, avocado, cherry tomatoes, and cilantro. Serve with remaining enchilada sauce alongside. Do ahead: Enchilada sauce can be made 5 days ahead. Let cool; transfer to an airtight container and chill, or freeze up to 3 months. Reheat before using.
