1/2 cup plus 2 teaspoons all-purpose flour, divided
4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
8 fresh sage leaves
8 thin slices prosciutto or deli ham
2 tablespoons olive oil
1 tablespoon butter
1/2 cup chicken broth
2 tablespoons lemon juice
2 tablespoons white wine or additional chicken broth
Lemon slices and fresh sage, optional

Steps:

  • Place 1/2 cup flour in a shallow bowl; set aside. Flatten chicken breasts to 1/4-in. thickness. Sprinkle both sides with salt and pepper; top each breast half with 2 sage leaves and 2 slices prosciutto, pressing to adhere. Dip chicken sides only in flour to coat., In a large skillet, heat oil and butter over medium heat; cook chicken for 3-4 minutes on each side or until lightly browned and chicken is no longer pink. Remove and keep warm., In a small bowl, whisk the chicken broth, lemon juice, wine and remaining flour; add to the skillet, stirring to loosen browned bits from pan. Bring to a boil; cook and stir for 1 minute or until thickened. Spoon over chicken. Top chicken with lemon and sage if desired.

4 large chicken breasts (10 ounces each)
1 egg
1/2 cup bread crumbs
1 teaspoon garlic salt
1 teaspoon oregano
dash black pepper
8 ounces burrata cheese
1/4 pound prosciutto ((8 thin slices))
4 tablespoons olive oil (divided)

Steps:

  • Preheat oven to 400°F
  • Pat chicken breasts dry with a paper towel
  • Using a sharp knife make an incision in the side of each chicken breast about 3 inches long and 2 inches deep, make sure you do not cut through the chicken breast, it needs to serve as pocket.
  • Crack an egg into a shallow bowl and whisk it with a fork
  • In another shallow bowl combine bread crumbs, garlic salt, oregano and black pepper
  • Working 1 chicken breast at a time, dip first into the egg mixture to coat and then immediately in the breadcrumb mixture, set aside
  • Repeat with each chicken breast
  • Stuff each chicken breast first with 2oz of burrata and then 2 thin slices of prosciutto
  • Heat 2 tbsp of oil in a large skillet over medium heat
  • Add chicken breasts, work in 2 batches (2 breasts at a time)
  • Brown chicken breasts for 3-4 minutes on both sides
  • Transfer to foil lined baking sheet
  • Add 2 more tbsp of olive oil to the skillet and repeat with the other 2 chicken breasts
  • Transfer baking sheet to the oven
  • Bake for 20-25 minutes*, or until chicken reaches an internal temperature of 165°F
  • Remove from oven, let rest 5 minutes
  • Serve chicken breasts over Instant Pot Garlic Parmesan Mashed Potatoes (recipe within post)

Coarse salt and ground pepper
4 fresh whole sage leaves, plus 4 minced leaves
4 (6 to 8 ounces each) chicken cutlets
4 slices (3 ounces) thinly sliced prosciutto
4 teaspoons olive oil
3/4 cup dry white wine
1/3 cup reduced-sodium canned chicken broth
1 tablespoon cold butter

Steps:

  • In a shallow bowl, stir together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.
  • Lay 1 sage leaf lengthwise on each cutlet, then wrap a prosciutto slice around middle of each cutlet, encasing sage. Flatten with the palm of your hand to help prosciutto adhere to the chicken. Dredge cutlets in seasoned flour; tap off excess.
  • In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Cook 2 cutlets until golden brown and cooked through, 3 to 4 minutes per side. Remove cutlets, and keep warm. Repeat with remaining 2 teaspoons oil and 2 cutlets.
  • Add wine and broth to skillet; cook over high heat until reduced by three-quarters, about 2 minutes. Remove from heat; let cool 1 minute. Add butter and minced sage; stir until butter is melted, about 30 seconds. Spoon sauce onto plates; top with cutlets. Serve immediately.

These stuffed chicken breasts can be assembled and refrigerated for up to three hours before cooking.

4 large boneless, skinless chicken breast halves (8 to 9 oz. each)
4 thin slices prosciutto (2 to 3 oz.)
1 cup lightly packed grated Fontina (3 oz.)
3/4 cup unbleached all-purpose flour
2 large eggs
2 Tbs. Dijon mustard
1-1/2 cups fresh breadcrumbs
4 tsp. dried sage leaves
Kosher salt and freshly ground black pepper
2/3 cup olive oil

Steps:

  • If the chicken breasts have tenderloins, remove them. Trim, rinse, and pat the breasts dry.
  • Make a pocket on the thicker side of each breast. Using a sharp boning or utility knife, cut into the breast about 1/2 inch from one end. Create a pocket, slicing to within about 1/4 inch of the other side.
  • Lay a slice of prosciutto lengthwise inside each pocket. Stuff each pocket with about one-quarter of the Fontina, distributing it evenly throughout the pocket and to the ends. Press on the top of each breast to close the pocket.
  • Line up three wide shallow dishes. Fill the first with the flour. In the second, whisk together the eggs and mustard. In the third, toss the breadcrumbs with the dried sage leaves, 1/2 tsp. salt and 1/2 tsp. pepper.
  • Season the breasts generously on both sides with salt and pepper. Dredge one breast well in the flour, shaking off any excess. Dip it into the eggs, turning to coat evenly, and then dredge it in the breadcrumbs, pressing to make the crumbs adhere evenly. Gently shake off any excess. Set on a plate and repeat with the other breasts. Refrigerate for at least 5 minutes and up to 3 hours to let the breading set. Discard any leftover flour, egg, or crumbs.
  • Heat the oven to 350°F. Heat the olive oil in a heavy 10-inch nonstick skillet over medium-high heat. When the oil is very hot, carefully add two of the breasts to the pan and cook until golden brown, about 3 minutes per side. If the oil seems to get too hot, reduce the heat to medium. Transfer the breasts to a baking sheet. Repeat with the other two breasts
  • Bake until the chicken and filling reach 165°F on an instant-read thermometer, about 15 minutes. Serve immediately.

4 fresh, boneless, skinless chicken breasts
1 package Boursin cheese, room temperature
1 1/2 cups shredded mozzarella cheese
1 package thin sliced prosciutto ((6-8 slices))
Salt and Pepper
2 tablespoons butter
1 tablespoon olive oil

Steps:

  • Preheat oven to 350 degrees. Place chicken breasts in double gallon sized zippered bags. With a mallet on the smooth side, pound the chicken 1/4" thick. Place the pounded chicken breasts on a baking sheet. Sprinkle both sides with salt and pepper. Spread an even amount of Boursin cheese over all four chicken breasts. Evenly distribute mozzarella cheese on top of the Boursin. Carefully roll up chicken, seam side down. Wrap each chicken roll with a slice of prosciutto, tucking the ends under the chicken roll. Melt butter and olive oil together in baking dish or glass pie plate. Place chicken rolls in baking dish. Bake for about 30 minutes or until internal temperature is 165 degrees. With a pastry brush, baste the chicken rolls several times during the cooking process with the butter/olive oil mixture. (This will give the chicken rolls added flavor and a beautiful glossy finish.) Serve with pasta, rice, vegetables or a salad. Serves 4.

  • Preheat oven to 400 degrees F. Measure the ricotta cheese into a small bowl. Add in parsley, sage, rosemary and garlic. Add in the grated Parmigiano-Reggiano and stir well to blend.
  • Butterfly each chicken breast and fill each with a fourth of the ricotta cheese mixture. Wrap each chicken breast in a slice of the proscuitto di Parma.
  • Add 1 to 2 teaspoons olive oil to an ovenproof skillet. Warm over medium high heat. Add in prepared chicken breasts and brown, turning once for 4 to 6 minutes. Place the pan with the chicken in the oven and bake for 12 to 15 minutes.
  • Remove chicken from pan, deglaze the pan with chicken stock, add in lemon juice, butter and additional stock as needed to make a sauce. Spoon over chicken.
  • This is delicious served with oven roasted asparagus and makes and elegant but simple meal.

Steps:

  • To brine the chicken breasts, place them in a large bowl with enough water to cover them. Add sea salt and stir to mostly dissolve. Let sit for 10 minutes at room temperature, or for up to a day in the refrigerator.
  • Meanwhile, preheat the oven to 450 degrees F (232 degrees C).
  • Season both sides of the chicken breasts with salt and pepper.
  • In a small bowl, mix together the goat cheese, sun-dried tomatoes, minced garlic, and fresh thyme leaves.
  • Cut a slit horizontally in each chicken breast, not cutting all the way through, to form a pocket. Stuff the inside with the goat cheese mixture and press lightly to prevent filling from falling out.

⅓ cup dried cherries, chopped
¼ cup plain bread crumbs
1 egg yolk
1 ½ tablespoons finely grated Parmigiano-Reggiano cheese
2 teaspoons olive oil
1 teaspoon fresh thyme
1 teaspoon fresh oregano, minced
2 cloves garlic, minced
salt and pepper to taste
1 pinch cayenne pepper
2 (6 ounce) skinless, boneless chicken breast halves
4 thin slices prosciutto
¾ cup chicken broth
1 ½ tablespoons balsamic vinegar
1 tablespoon butter
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush the inside of an oven-proof skillet with vegetable oil. Set aside.
  • Mix cherries, bread crumbs, egg yolk, Parmigiano-Reggiano cheese, olive oil, thyme, oregano, garlic, salt, black pepper, and cayenne pepper until combined.
  • Cut a 1-inch slit in each chicken breast by slicing at an angle from the thick end of the breast toward the thinner end.
  • Open flap and place one butterflied chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Repeat with the other breast.
  • Place half the stuffing on each chicken breast, place each breast on a piece of plastic wrap and roll into a tight roll, twisting the ends of the plastic wrap to hold create a tight package.
  • On a piece of plastic wrap, slightly overlap 2 slices of prosciutto so they are as wide as the rolled chicken breast. Unwrap rolled chicken breast and place the breast at one end of the prosciutto. Roll prosciutto around the stuffed breast using the plastic to make a tight roll. Repeat with the second stuffed breast and remaining 2 slices of prosciutto.
  • Lay 4 pieces of string on the cutting board, about 1-inch apart. Place chicken roll across the strings, and tie each into a knot to keep the chicken from unrolling. Repeat for the second stuffed breast.
  • Place stuffed, rolled chicken breasts in the prepared skillet and bake in the preheated oven until the prosciutto is browned and crispy and chicken is no longer pink, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate and loosely cover with aluminum foil.
  • Drain grease from the pan as desired, leaving juice and browned bits. Pour in chicken stock and balsamic vinegar, and bring to a boil over high heat. Cook, while scraping the browned bits from the bottom of the pan, until liquid has reduced by half, 5 to 6 minutes. Remove from heat, add butter and stir until melted. Season with salt and black pepper to taste.
  • Remove twine from chicken breasts; slice into bite-sized pieces. Serve drizzled with pan sauce.

This Prosciutto-Wrapped Baked Chicken recipe is a simplified version of traditional "saltimbocca", made with a heavenly buttery-garlic-sage-white-wine sauce.

4 boneless skinless chicken breasts
Kosher salt and freshly-cracked black pepper
8-12 slices prosciutto
4 tablespoons melted butter, divided
1 clove garlic, pressed or minced
1 tablespoon finely-chopped fresh sage*
pinch of crushed red pepper flakes
1/4 cup dry white wine
fresh lemon wedges
(optional garnishes: chopped fresh chives, grated Parmesan cheese, and/or extra crushed red pepper flakes)

Steps:

  • Simply fill a large bowl with 1 quart of warm water and 1/4 cup kosher salt. Stir to combine until most of the salt is absorbed. Add the chicken breasts and let them sit in the mixture to brine for 15 minutes. Or you can also also cover the bowl and refrigerate for up to 6 hours. Remove the chicken breasts from the brine, rinse them with cold water, then pat them dry with some paper towels. (Again, though, if your chicken breasts are sold pre-brined in a sodium solution, skip this step.)
  • Heat oven to 450°F.
  • Wrap each chicken breast with 2-3 slices of prosciutto, so that the prosciutto covers most of the chicken.
  • Place the chicken breasts in a single layer in a large baking dish. Brush the chicken breasts evenly with 1 tablespoon of the melted butter. Then season both sides of the chicken breasts with a quick pinch of salt and pepper, then lay the chicken back in a single layer in the baking dish.
  • Bake for 18-20* minutes, or until the chicken is cooked through and no longer pink. If you use a cooking thermometer to measure the temperature thickest part of the breast, it should be between 160-170°F. (The FDA recommends 165°F.)
  • Once the chicken is cooked, remove the pan from the oven and loosely cover the pan with aluminum foil. Let the chicken rest for at least 5-10 minutes.
  • Meanwhile, as the chicken is cooking, add the remaining 3 tablespoons butter to a small sauté pan, along with the garlic, sage and crushed red pepper flakes. Sauté over medium-low for 6-8 minutes, or until the sage starts to get slightly crispy. Slowly add in the white wine, and simmer for 5 more minutes. Remove from heat.
  • Once the chicken and sauce are ready to go, spoon the sage-butter sauce evenly over the baked chicken breasts. Then serve immediately with fresh lemon wedges, sprinkled with optional garnishes if you'd like. (Feel free to make your serving as lemony as you'd like!)

1 5 ounce container herb cream cheese (I used Boursin)

Steps:

  • Preheat oven to 350 degrees
  • Slice each chicken breast horizontally but not all the way through. Open like a book. Salt and pepper both sides of the chicken.
  • Divide cream cheese evenly between the 4 chicken breasts. About a heaping two tablespoons each.
  • Fold chicken back together.
  • Top with two slices of prosciutto. Wrap around chicken and press to seal.
  • Heat non stick oven safe or cast iron skillet to medium high. Add olive oil. Heat oil until shimmering.
  • Sear each wrapped chicken breast for about 2 minutes on each side or until brown and crispy. If your chicken breasts are really thick, you might want to sear the sides as well.
  • Bake for 10-12 minutes depending on the thickness of your chicken. (chicken is perfect when the internal temp is 165 degrees).
  • Let rest for 5 minutes before slicing.

2 tablespoons olive oil, divided
2 shallots, chopped
1 clove garlic, minced

3 dates, chopped
1 tablespoon chopped fresh basil
4 skinless, boneless chicken breast halves
4 large, thin slices of prosciutto

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon of olive oil on a baking sheet, and set aside.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the shallots, and cook until they turn translucent, about 3 minutes. Stir in the garlic, thyme, salt, and pepper; cook and stir an additional 2 minutes. Transfer the shallot mixture to a bowl. Mix in the goat cheese, dates, and basil; stir until well combined.
  • With a sharp knife, cut a 1-inch long slit into the thick side of each chicken breast. Work your fingers into the slit, and expand the slit to form a pocket in the breast meat. With your fingers or a spoon, stuff each chicken breast with about 1/4 cup of the goat cheese mixture. Wipe off any cheese mixture from the outside of the chicken breast, and wrap each breast in a slice of prosciutto so that the pocket opening is covered. Place the chicken breasts, seam sides down, onto the prepared baking sheet.
  • Bake in the preheated oven until the chicken meat is no longer pink and the prosciutto is browned and crisp, about 40 minutes. Turn the chicken breasts over after 20 minutes.

4 large chicken breasts
8 sage leaves
5 heaping T ricotta
Sea salt and black pepper
8 prosciutto slices
4 tsp olive oil
handful of thyme sprigs

Steps:

  • Cut a deep slit along one side of each chicken breast, without slicing right through, then open it out like a book. On a clean cutting board, mince 4 sage leaves, ten mix into the ricotta and season with salt and pepper to taste. Lay two prosciutto slices on the board, overlapping them slightly. Put a sage leaf in the middle and lay an open chicken breast on top. Spoon a quarter of the ricotta mixture onto the middle of the chicken, then fold the sides together again, to enclose the filling. Now wrap the prosciutto slices around the stuffed chicken breast. Wrap in plastic wrap. Repeat with the rest of the chicken breasts and chill for 1-2 hours to firm up slightly. Heat the oven to 350 and place a roasting pan in the over to heat up. Heat a heavy skillet and add the olive oil. When hot, pan-fry the prosciutto-wrapped chicken, in batches if necessary, for 2 minutes on each side until browned. Lay a few thyme sprigs on each chicken breast, then place in the hot roasting pan. Cook in the oven for 12-15 minutes, depending on size, or until the meat feels just firm when lightly pressed. Rest the chicken covered with foil, in a warm place for 5-10 minutes. Slice each stuffed breast thickly on the diagonal and arrange on warm plates. Serve with steamed greens if desired.

1/2 cup coarsely grated Fontina cheese
1/3 cup (packed) soft garlic-herb cheese (such as Boursin)
1/3 cup (packed) chopped prosciutto
2 tablespoons chopped fresh basil
4 large boneless chicken breast halves with skin
2 tablespoons chilled butter, divided
3/4 cup low-salt chicken broth
1/2 cup dry Marsala

Steps:

  • Preheat oven to 300°F. Combine cheeses, prosciutto, and basil in small bowl. Season stuffing with freshly ground black pepper.
  • Run fingers under skin of chicken breasts to loosen. Spread stuffing under skin. Sprinkle chicken with salt and pepper.
  • Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Add chicken, skin side down, and cook until brown, about 3 minutes per side. Reduce heat to medium, cover, and cook until chicken is cooked through, turning once, about 10 minutes. Transfer to rimmed baking sheet; place in oven to keep warm. Add broth and marsala to skillet; bring to boil and cook until sauce is reduced to scant 1/2 cup, scraping up browned bits, 3 to 4 minutes. Remove from heat; whisk in 1 tablespoon butter. Season sauce to taste with salt and pepper. Place chicken on plates. Add any juices from baking sheet to sauce. Spoon sauce over chicken and serve.

8 sage leaves
75 ml ricotta cheese (5 tablespoons)
8 slices prosciutto di Parma
4 teaspoons olive oil
8 fresh thyme sprigs
sea salt
black pepper

Steps:

  • Cut deep slit along one side of each chicken breast and open it out like a book.
  • Mince 4 sage leaves, mix into ricotta and season with salt and pepper to taste.
  • Lay 2 prosciutto slices on cutting board, overlapping them slightly.
  • Put a sage leaf in middle and lay an open chicken breast on top.
  • Spoon a quarter of ricotta mixture onto the middle of chicken, then fold sides together to enclose the filling.
  • Now wrap prosciutto slices around the stuffed chicken breast and wrap in plastic wrap.
  • Repeat with rest of chicken breasts and chill for 1 to 2 hours to firm up slightly.
  • Place roasting pan in oven and set it to preheat to 180c (350F).
  • Heat a heavy skillet over medium heat and add olive oil. When hot, pan-fry the prosciutto-wrapped chicken, in batches if necessary, for 2 min on each side till browned.
  • Lay 2 sprigs of thyme on each chicken breast and place in hot roasting pan. Cook in oven for 12 to 15 min, or until the meat feels just firm when lightly pressed.
  • Cover pan with foil and rest the chicken in a warm place for 5 to 10 minute Slice each stuffed breast thickly on the diagonal and arrange on warm plates.
  • Serve with steamed greens and light mashed potatoes or a zesty couscous.
