Wake up the flavor chicken with an easy orange glaze made from orange marmalade, mustard, orange juice and soy sauce. It's citrus delicious!

Steps:
- Melt butter in 8-inch skillet or 3-quart saucepan over medium heat. Cook chicken in butter about 15 minutes, turning once, until juice of chicken is no longer pink when center of thickest piece is cut.
- While chicken is cooking, mix cornstarch and mustard in small bowl. Stir in remaining ingredients.
- Place chicken on serving plate; cover to keep warm. Discard any juices left in the skillet.
- To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

ROASTED CHICKEN BREAST WITH MARMALADE

- Preheat the oven to 450 degrees F.
- Season the chicken breasts with salt and pepper, to taste. In a large saute pan over high heat, add the oil. Once heated, place the chicken into the pan. Cover the chicken with aluminum foil and place another heavy pan on top. Cook the chicken until the skin is golden brown, about 5 to 8 minutes, and then flip and cook until cooked through, about 5 to 8 more minutes. Serve with the marmalade and wilted romaine.
- Place the oranges on a flat surface and slice a few thin rounds from both ends. Avoid the center part because that's where a large concentration of the pits are.
- Measure the honey directly into a medium skillet over low heat until it melts. Add the oranges rounds and bring the mix to a boil. Add a sprinkle of salt and pepper, to taste. Add the juice of the lemon and the vanilla. Stir to blend. Cook for an additional 2 minutes and then transfer to a bowl to cool.
- In a large skillet, heat the butter and add the garlic over medium heat. Cook until fragrant and add the romaine. Season with salt and pepper, to taste. Use a wooden spoon and stir to blend for an additional minute. Remove from the heat and drain any liquid remaining. Add a few squirts of lemon juice and serve with chicken.
BAKED ORANGE-GLAZED CHICKEN
One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

- Preheat oven to 400°.
- Using a meat tenderizer, pound the chicken until 1/4" thick. Pat dry and liberally season it with salt and pepper on both sides. Place a spoonful or two of Boursin on one end of each piece, top with a sprinkle of mozzarella cheese, and roll the chicken up, starting at the cheese-topped end. Wrap chicken with a slice of prosciutto and place in a baking dish seam-side down, so the prosciutto doesn't unravel. Repeat with each piece of chicken.
- Bake for 30 to 35 minutes, or until chicken is no longer pink and juices run clear when pierced with a fork or knife.

BAKED ORANGE MARMALADE CHICKEN BREASTS
Steps:
- Gather the ingredients.
- Line a baking pan with nonstick foil or spray with cooking spray.
- Arrange the chicken breasts, meaty side up, in the prepared baking pan. Sprinkle chicken breasts with salt and pepper.
- In a bowl, combine the marmalade, lemon juice, mustard, garlic, Worcestershire sauce, and curry powder; blend well.
- Coat the chicken pieces with the marmalade mixture.
- Cover the pan tightly with foil. If desired, let the chicken marinate in the refrigerator for an hour or two. Heat the oven to 375 F.
- Bake the chicken, covered, in the preheated oven for 30 minutes. Remove foil and baste the chicken.
- Continue baking, uncovered, for about 30 minutes longer or to a temperature of at least 165 F, basting every 10 to 15 minutes.

CHICKEN BREASTS, ORANGE STUFFED
This recipe has been a favorite of mine for almost 30 years, & although it is messy to make, it is fairly easy and makes a great looking main dish for dinner guests. For bread crumbs I usually use a cracked wheat or winter wheat bread, dice it up and dry it out in the oven before crushing it into crumbs. The chicken breasts for this recipe should be large.

- Place breast halves, one at a time, between plastic wrap & using a rolling pin or the flat side of a meat mallet, flatten each piece until it is about 1/4" thick.
- Pull off the wrap & sprinkle lightly with salt & pepper, if desired.
- In a small skillet, saute the onion in 1 Tbsp of butter until tender. Stir in the cubed orange, raisins, 1/4 cup of bread crumbs & thyme.
- Spread each breast evenly with the orange & crumb mixture, then roll up each breast with the stuffing inside. Tuck in the ends to help seal.
- Beat together the egg & milk, then dip the rolled up breasts into the egg mixture. Roll each breast carefully in the 1 cup of dry bread crumbs, & place in a baking dish with high sides. Cover loosely & refrigerate 30 minutes or until ready to bake.
- Preheat oven to 425 degrees F, & bake for 30 minutes until golden brown, basking several times with the melted butter during the last 15 minutes of baking time.
STUFFED CHICKEN BREAST WITH ORANGE MARMALADE SAUCE

- Stuffing: Melt margarine (or butter) in medium saucepan or frying pan on medium.
- Add onion and celery.
- Cook for 5 to 10 minutes, stirring often, until onion is softened.
- Remove from heat.
- Add next 6 ingredients.
- Stir well.
- Add more milk, if needed, until stuffing is moist and holds together when squeezed.
- Pound chicken with mallet to 1/4 inch thickness.
- Divide and spoon stuffing on half of each piece.
- Fold over crosswise to cover stuffing.
- Secure with wooden picks.
- Transfer to 1 1/2 quart dish.
- Marmalade Orange Sauce: Heat marmalade and concentrated orange juice in small saucepan on low, stirring often, until smooth.
- Spoon some over chicken.
- Bake, uncovered, in 325°F oven for about 45 minutes until tender.
- Cut into 1/2 inch slices.
- Arrange on individual plates.
- Spoon more sauce over top.
- Serves 4.

- 1) Coat a large skillet with cooking spray; add margarine. Place medium-high heat until margarine melts. Add onion and mushrooms; saute until tender. Transfer mushrooms mixture to a small bowl. Stir in salt and pepper; set aside. 2) Coat skillet with cooking spray; place over medium-high heat until hot. Add chicken, and cook 2 minutes on each side or until browned. Combine water, teriyaki sauce, and orange marmalade; pour over chicken in skillet. Bring to a boil; cover, reduce heat, and simmer 20 minutes or until chicken is done, turning occasionally. Add mushroom mixture to skillet; bring to a boil. Reduce heat, and simmer, uncovered, 3 minutes. 3) To serve, place 1/2 cup rice on each plate. Top with chicken. Spoon mushroom mixture evenly over chicken. If desired, garnish with orange slices and parsley sprigs.
