Grilled Stuffed Pizza Burgers image

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 35m

Yield 6

Number Of Ingredients 8

2 lb lean (at least 80%) ground beef
1/2 teaspoon salt
1/4 cup chopped pepperoni (about 1 oz)
2 tablespoons sliced ripe olives
1/2 cup pizza sauce
6 slices (3/4 oz each) mozzarella cheese, cut in half diagonally
6 burger buns, split, toasted
6 leaves lettuce

Steps:

  • Heat gas or charcoal grill. In large bowl, mix ground beef and salt. Shape mixture into 12 thin patties, each about 4 inches in diameter.
  • In small bowl, mix pepperoni, olives and 1/3 cup of the pizza sauce. Spoon rounded tablespoon pepperoni mixture onto center of 6 patties; spread slightly. Top with remaining patties; press edges together firmly to seal.
  • Place patties on grill; cover grill. Cook with medium heat 8 to 12 minutes, turning once, until thermometer inserted in center of patties reads 160°F (avoid inserting in filling). During last 1 to 2 minutes of cooking time, top each patty with cheese and rounded teaspoon of remaining pizza sauce, and place buns, cut side down, on grill; cook until cheese is melted and buns are lightly toasted.
  • To serve, place lettuce and patties in bottom halves of buns. Cover with top halves of buns.

GRILLED CHEESE-STUFFED BURGERS

Grilled Cheese-Stuffed Burgers image

These individually wrapped burgers are great to take along to picnics, cookouts or camping trips. The cheese is already stuffed inside, so all you need are your buns and condiments.

Provided by Food Network Kitchen

Time 45m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds ground beef
4 ounces Cheddar, cut into 16 small cubes
Kosher salt and coarsely ground black pepper
1/3 cup ketchup
2 tablespoons Worcestershire sauce
4 seeded hamburger buns, split and toasted
4 small leaves romaine lettuce
4 slices sweet onion, such as Vidalia or Maui
1 small vine-ripened tomato, sliced into 4 rounds
Potato chips or French fries, for serving

Steps:

  • 1. Preheat a grill over high heat. Divide the meat into four 6-ounce balls. Press 4 small cubes of cheese into the center of each ball and flatten into a 1/2-inch-thick patty about 4 inches in diameter, making sure the cheese stays wrapped in the meat. Sprinkle both sides of the patties evenly with 1 teaspoon salt and 1/2 teaspoon pepper. Wrap each burger in a piece of nonstick aluminum foil, twisting any excess foil at each end so the burger is wrapped in a single layer of foil only. Mix the ketchup and Worcestershire together in a small bowl.
  • 2. Grill the burgers for 5 minutes per side. Remove from the grill and carefully open up the foil packets, allowing the steam to escape. Place the opened foil packets back on the grill, add a spoonful of sauce to the top of each patty and continue to cook until the patty is cooked to at least medium to allow the cheese inside to fully melt, another 4 to 6 minutes.
  • 3. On the bottom half of each bun, spread a bit of sauce and top with a lettuce leaf, onion slice and tomato slice. Top with a patty, another spoon of the remaining sauce and the top of the bun. Serve with chips or fries.

STUFFED BACON-CHEDDAR BBQ BURGER

Stuffed Bacon-Cheddar BBQ Burger image

This is a good old-fashioned barbecue bacon burger, but the way the cheese and bacon taste at each bite, along with the soft, sweet barbecue onions makes my family go "WOW!" This award winning recipe was created by Allison Koplan, of Tampa, Florida.

Provided by TheJensenFive

Categories     Lunch/Snacks

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 13

1 lb ground chuck
1 lb ground round
2 teaspoons black pepper, freshly ground
2 tablespoons garlic salt
8 ounces sharp cheddar cheese, coarsely shredded
1 lb bacon, cooked and crumbled
2 medium vidalia onions, sliced
1 tablespoon butter
8 ounces sweet barbecue sauce (your choice)
6 -8 hamburger buns
8 ounces lettuce (optional)
8 ounces tomatoes (optional)
1/2 cup onion

Steps:

  • Combine ground round, ground chuck, salt and pepper in a large bowl.
  • In another bowl, combine the coarsely shredded sharp cheddar and cooked bacon pieces.
  • Let bacon and cheese mixture sit at room temperature for about 20 minutes to get soft.
  • Then, shape mixture into balls (for however many burgers you would like to make). Form 2 patties of meat and place one cheese/bacon ball in between them.
  • Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
  • Cook burgers on grill over medium flame for about 7 minutes on each side.
  • While burgers are grilling, slice sweet Vidalia onions and sauté them in a skillet with 1 tablespoon of butter. Once onions become translucent (about 4 minutes), add some sweet barbecue sauce.
  • Flip burgers, and baste the cooked side of the patties with the same sweet barbecue sauce used in the onions.
  • After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking).
  • Baste again with sweet barbecue sauce before removing from grill.
  • Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
  • To build burger, take toasted bun, add patty, and top with smothered barbecue onions. You can add tomato or lettuce, if you'd like, but the flavors are great without them.

  • For four burgers, divide the beef into eight 3-ounce portions. Shape into balls. Place each ball between two sheets of waxed paper. Using a flat-bottomed plate or pan, press meat into quarter-inch-thick patties at least 4 inches across. (If they seem freakishly thin, you've done it right.) Leave the patties between the paper, using new paper for each.
  • To fill a burger, peel the top sheet off a patty. Top the meat with one-fourth of the cheddar cheese and crumbled bacon, leaving a ½-inch border. Peel the top sheet from another patty, flip it over the filling, and peel off the second paper. Press meat edges to seal. Then, using the bottom paper, fold the edge upward to create a uniformly thick patty. (You can find a good video demonstration at L7BurgerBar.com.) Give the patty a final quick shaping in your hands to be sure everything is compact and well-sealed. Season the outside generously with salt and pepper.
  • In a 12-inch cast-iron skillet, melt a bit of butter over medium heat to toast the buns. Remove buns, raise heat to medium-high and heat 1 tablespoon each canola oil and butter until very hot. Cook burgers for 18 to 22 minutes or until done (160°), turning once. (Reduce heat if they are browning too quickly.) Serve topped with barbecue sauce and fried onions or Shoestring Onions.
