Add a little elegance to an every day meal by stuffing acorn squash and baking along with the chicken in the oven. serve with cranberry sauce and a green vegetable and have a little taste of Thanksgiving.

2 acorn squash, halved and seeded
1 stick butter, divided
4 Tbsp brown sugar
4 c dry bread stuffing mix, divided
3 c chicken broth
kosher salt and freshly ground black pepper to taste
1/2 tsp garlic powder with parsley
1/2 tsp granulated onion powder

Steps:

  • 1. Preheat oven to 400 degrees-degrees.
  • 2. Place squash, face up, in a shallow baking dish.
  • 3. In each half place 2 tablespoons butter, 1 tablespoons brown sugar, 1 cup stuffing mix, 3/4 cup chicken broth, salt, pepper, garlic powder and onion powder.
  • 4. Wrap dish tightly with aluminum foil. Bake in preheated oven for 50 minutes, or until squash is very tender.
  • 5. Remove foil and let bread stuffing brown for about 10 minutes.

1 ½ cups chicken broth, divided

garlic powder to taste
onion powder to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash, face up, in a shallow baking dish. In each half place 2 tablespoons butter, 2 tablespoons brown sugar, 1 cup stuffing mix, 3/4 cup chicken broth, salt, pepper, garlic powder and onion powder. Wrap each half tightly with aluminum foil.
  • Bake in preheated oven for 60 minutes, or until squash is very tender.
