Steps:
- Place flour in a mixer bowl; beat in 1/4 cup oil (mixture will be slightly crumbly). In a small bowl, slowly whisk warm water into beaten egg; add to flour mixture, mixing well. Beat in remaining oil until smooth. Transfer to a greased bowl, turning once to grease the top. Cover and let rest in a warm place, about 30 minutes., Preheat oven to 350°. Spread bread crumbs into an ungreased 15x10x1-in. baking pan. Bake 10-15 minutes or until golden brown, stirring occasionally. Cool completely., Tape a 30x15-in. sheet of parchment onto a work surface; dust lightly with flour. Divide dough in half; place 1 portion on parchment and roll to a very thin 24x15-in. rectangle. (Keep remaining dough covered.) Remove tape from parchment., Sprinkle 3/4 cup bread crumbs over rectangle to within 1 in. of edges. Starting 3 in. from a short side, sprinkle 3 cups apples and 1/4 cup raisins over a 3-in.-wide section of dough. Mix sugar and cinnamon; sprinkle half of the mixture over fruit. Drizzle with half of the melted butter., Roll up jelly-roll style, starting at fruit-covered end and lifting with parchment; fold in sides of dough as you roll to contain filling. Using parchment, transfer strudel to a 15x10x1-in. baking pan; trim parchment to fit pan., Bake on lowest oven rack 45-55 minutes or until golden brown, brushing top with sour cream 2 times while baking. Repeat with remaining ingredients., Using parchment, transfer to a wire rack to cool. Serve warm or at room temperature.

GERMAN STRUDELS
This is an old family recipe of my aunt's. Almost all of my relatives are German and this is one of the original recipes used for family dinners! Especially good with chicken and cream gravy. You can also make them to the point after rolling and cutting and freeze on cookie sheets, then transfer to plastic bags.

Steps:
- Combine yeast, salt, sugar, water, egg, and flour to make dough.
- Divide the dough into small balls.
- Let rest for a while.
- Roll balls to about 1/4 inch thick and spread with warm oil.
- Let the dough rest for a few minutes so the dough will stretch easily, then stretch the dough paper thin.
- Once the dough is stretched, roll it like you would for cinnamon rolls.
- Cut the dough (which is rolled up like a snake now) into 3 inch lengths.
- Coat roaster or heavy pan (you can also use and electric frying pan) with shortening or oil, put as many diced potatoes and onions as you like and season with salt and pepper.
- Add water to cover the potatoes and bring to a boil.
- Once water is boiling lay strudels on top of potatoes in two layers.
- Water should nearly cover strudels.
- COVER TIGHTLY-THIS IS VERY IMPORTANT OR RECIPE WILL NOT WORK!
- YOU CANNOT PEEK OR THE STRUDELS WILL "FALL"!
- Cook over low heat 30 to 35 minutes, or until you can hear a slight "frying" noise in the pan.
- Enjoy!
APPLE STRUDEL (APFELSTRUDEL)
Traditional recipe for Apple Strudel

Steps:
- If you want to use raisins in your Apfel Strudel, you need to soak them in 50 ml of apple juice or in some rum. If you don't have either, water will do, too.
- Prepare the dough by adding all ingredients into a large bowl.
- Knead for at least 5 minutes to give the dough enough elasticity.
- Put a little bit of oil into a smaller bowl, turn the dough in the oil to cover it, then put into the fridge to rest at least 30 minutes.
- Meanwhile prepare the apples: Remove the skin and apple cores.
- Cut the apples into small pieces.
- Squeeze the lemon and pour the juice into a bowl with the apple pieces.
- Add the sugar and Cinnamon to the apples and stir well, then set aside.
- Melt 50 g of butter in a pan and add the bread crumbs.
- Roast the bread crumbs for a little bit.
- When the dough has rested at least 30 minutes, it's time to roll it out. For that you put a clean kitchen towel onto the counter and sprinkle it with flour.
- Roll the dough on the towel, always rolling from the center to the edges.
- When you have rolled the dough as thin as possible, use your hands: With the back of the hands, move under the dough and pull it out (watch video!).
- Once the dough is very thin, melt some more butter and brush it onto the entire dough.
- Optional: cut of thicker edged of the dough.
- Now, add the roasted bread crumbs and spread them evenly onto the dough, leaving some space to the edges.
- Add the Apple slices, place them evenly onto the dough.
- If you have raisins: Remove them from the liquid, squeeze them a little, then place them evenly between the apple pieces.
- With the help of the towel, flip the sides of the dough inwards (see video).
- Starting from one end, lift the towel to slowly roll the strudel towards the other end.
- Place the strudel seam down on a baking sheet and brush with some melted butter.
- Bake in the oven at 190°C / 375°F for about 20 - 25 minutes.
- Finish with a thin layer of sprinkled confectioners sugar.
- Serve warm with a scoop of vanilla ice cream or cold with vanilla sauce and whipping cream.

STRUDELS (GERMAN)
My grandma's recipe. We always had this when we'd butcher chickens. Grandma would fry up the hearts and livers and then make strudels--what a treat!

Steps:
- 1. Mix ingredients in order given, mixing well after each addition. Knead well and let rest in bowl. Dust a surface with flour and divide dough into 4 portions. Roll out dough thin and spread thinly with soft lard. Let rest awhile covered with clean, white dish towel.
- 2. In an electric fry pan, add 1 1/2 tablespoons lard, 1/2 teaspoon salt and about 4 - 5 cups potatoes, peeled and cubed, and 1 onion, chopped. Add enough water to cover potatoes. Bring to a boil.
- 3. Pull strudel dough thin, working out from the center. Be careful not to tear the dough. Smear the dough thinly with a little soft lard and roll up like a jelly roll. Repeat this with each of the dough balls. Cut into 2 inch pieces and put on top of potatoes. Cover tightly and cook 20 to 25 minutes. Do not lift lid while cooking. When you hear the frying pan start to "fry" they are done. Uncover slowly and serve.

HOW TO MAKE REAL DEAL CLASSIC AUSTRIAN APPLE STRUDEL
From seriouseats.com
- Mix and Knead the Dough. Strudel dough is a simple dough of flour, water, and a small amount of fat (in this case, vegetable oil). I found that two and half cups of flour, three tablespoons of oil, and 10 to 12 tablespoons of water (along with a little salt) was the right ratio.
- Roll out the Dough. Before stretching, roll out the dough on a floured board into a roughly 10- by 12-inch rectangle. This will help start the shape of the final dough, since you want to end up with a rectangle in the end.
- Stretch the Dough. Now the fun part. Starting from the center, reach under the dough and begin to gently pull out towards the edge. Think of it as if you were making a giant pizza.
- Check the Thickness. If you can read through it, give yourself a pat on the back. You've just made the perfect paper-thin dough that's ready for rolling.
- Assemble the Strude. Give the strudel dough a thin coat of butter and sprinkle it with toasted ground hazelnuts for added flavor and texture. Next, I spread a layer of toasted bread crumbs onto the dough.
- Roll up the Strudel. Carefully lift up the end of dough by using the fabric. Bring it over the apples to cover. Continue to roll up the strudel by lifting up the fabric.
- Roll onto Parchment, Butter, and Bake. Even rolled up, the strudel is very delicate to handle. I learned this the hard way. To transfer it easily to the pan, roll the strudel onto a piece of parchment paper and then just transfer the parchment to a baking dish.
