4 (10 -12 ounce) New York strip steaks, each 10 to 12 ounces and about 1 inch thick, trimmed of excess fat
extra virgin olive oil
kosher salt
ground black pepper
1 tablespoon minced shallot
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
2 cups about 20 cherry tomatoes, each cut into quarters
1/4 cup finely chopped fresh basil leaf
2 ounces crumbled gorgonzola (1/2 cup)

Steps:

  • Prepare the grill for direct cooking over high heat (450° to 550°F).
  • Lightly brush the steaks on both sides with oil and season evenly with salt and pepper. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • In a medium bowl whisk the shallot, vinegar, mustard, ¼ teaspoon salt, and ¼ teaspoon pepper. Slowly whisk in 2 tablespoons of oil, forming a smooth vinaigrette. Add the tomatoes and basil. Mix well.
  • Brush the cooking grates clean. Grill the steaks over direct high heat, with the lid closed as much as possible, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill and let rest for 3 to 5 minutes. Add the cheese to the vinaigrette. Mix gently. Serve the steaks warm with the vinaigrette spooned over the top.

20 oz cherry tomatoes, quartered
2 tsp Kosher salt, divided
1 tsp freshly ground black pepper, divided
3 Tbsp olive oil
2 Tbsp champagne vinegar
2 clove garlic, minced
1 tsp lime zest
2 tsp lime juice
1/3 c extra virgin olive oil
3 oz bleu cheese, crumbled
2 Tbsp butter
1/4 c Panko
2 Tbsp minced fresh chives
1 tsp ancho chili powder
1 tsp smoked paprika
1/2 tsp garlic powder
2 (1 pound each) flat iron steaks
garnish: additional crumbled bleu cheese and fresh chives

Steps:

  • 1. Preheat oven to 425 degrees. Place tomatoes onto a large, rimmed baking sheet. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper; drizzle with olive oil, toss to coat.
  • 2. Place into the preheated oven and bake until tomatoes are softened approximately 12 - 15 minutes.
  • 3. Using a slotted spoon, remove 3/4 of the tomatoes to a mesh strainer and place over a bowl to drain. Set remaining 1/4 of the tomatoes on the side for garnish.
  • 4. In a medium bowl, whisk together the vinegar, garlic, lime zest, and lime juice.
  • 5. While whisking, stream in the extra virgin olive oil. Add in the bleu cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, whisk to combine. Add in the drained roasted tomatoes, whisk together; set aside.
  • 6. Meanwhile, place a small skillet over medium-low heat. Add in the butter and allow it to melt.
  • 7. Add in the Panko and cook until it begins to brown, approximately 3 - 4 minutes, stirring occasionally (be sure to watch carefully as once they brown they can burn quickly).
  • 8. Transfer to a paper towel-lined plate. Allow to cool for a few minutes, toss in the minced chives, set aside.
  • 9. In a small bowl, mix together the chili powder, paprika, garlic powder, remaining 1 teaspoon salt, and remaining 1/2 teaspoon black pepper.
  • 10. Season both sides of the steaks with the seasoning blend.
  • 11. Heat a grill pan over medium-high heat. Place the steaks onto the grill pan and cook, turning once, to desired doneness (160 degrees for medium).
  • 12. Place cooked steaks onto a large plate, cover with aluminum foil and allow to rest for 5 minutes. Slice steaks into 1/4-inch slices.
  • 13. To serve, stagger steak slices onto serving plates. Top with the vinaigrette and the Panko crumbs. To garnish, place the reserved 1/4 of the roasted tomatoes onto plates, top tomatoes, and steak with bleu cheese crumbles and chives.

4 slices bacon, chopped into 1-inch pieces
Salt
1 pound spaghetti
4 (8-ounce) NY strip steaks
Ground black pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
5 tablespoons butter, divided
4 cloves garlic, minced, divided
2 shallots, finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1/4 to 1/3 cup cream or half-and-half, eyeball it
8 ounces blue cheese crumbles
2 to 3 tablespoons chopped sage leaves
2 tablespoons chives, chopped, a palm full
2 cups arugula, a small bunch, cleaned, trimmed and shredded

Steps:

  • Put a large pot of water on the stove to bring to a boil for pasta.
  • Preheat broiler to high with rack on top shelf.
  • Preheat medium skillet over medium-high heat. Add chopped bacon and cook until crisp.
  • Salt water for pasta and add spaghetti to the pot. Cook to al dente, with a bite to it.
  • Season the steaks with salt and pepper on both sides and arrange on slotted broiler pan.
  • Remove bacon to paper towel lined plate with a slotted spoon and drain off most of the fat, return pan to heat and reduce heat to medium. Add extra-virgin olive oil, 2 turns of the pan and 1 tablespoon butter. When butter melts into extra-virgin olive oil, add in 2 cloves garlic and the shallots, saute for 3 minutes.
  • Arrange steaks on the broiler pan. Place under broiler - leave door to oven cracked ajar to limit flare ups and smoke. Cook 4 minutes on each side for medium rare, up to 5 to 6 minutes on each side for medium well doneness.
  • To the garlic and shallots, add in flour and cook a minute more. Whisk in stock, bring to a bubble, about 30 seconds then stir in the cream. When cream comes to a bubble, add in blue cheese and sage and a few grinds of black pepper. Stir until cheese melts. Reduce heat to lowest setting.
  • Soften 4 tablespoons butter in microwave on high for 15 seconds. Mix in chives and 2 cloves minced garlic and reserve.
  • Remove steaks from oven and let rest 5 minutes. Place 1/4 of the chive and garlic butter mixture on each steak to melt down over the meat as they rest.
  • Drain pasta and toss with sauce to coat and combine evenly. Taste to adjust seasoning.
  • Serve steaks with pasta alongside. Scatter the arugula and bacon bits across the top of the pasta.
