PAN-ROASTED GREEN BEANS WITH GOLDEN ALMONDS
This simple almond-shallot topping goes with just about any simply cooked vegetable, but it tastes best with green beans. Instead of simply blanching the beans, I char them until they develop a smoky richness.

Steps:
- Bring a large pot of water to a rolling boil and add salt (a teaspoon or so, or to taste). Fill a large bowl with ice and water. Add the green beans to the boiling water and cook until bright green but still firm, about 2 minutes. Drain and transfer to the ice water. When cool, drain again. Pat dry with paper towels until completely dry.
- Meanwhile, in a small saucepan, combine the almonds and the oil, adding more oil if needed to just cover the almonds. Cook over medium heat until the almonds are golden, about 6 minutes. Remove from the heat and stir in the shallot. It will cook in the residual heat.
- Coat a large skillet with oil. Heat over medium-high heat until very hot but not smoking. Add the beans and season with salt. Cook, tossing frequently, until charred dark brown in spots and tender-crisp, about 7 minutes.
- Top with the almond mixture, then the parsley. Grate the zest from a quarter of the lemon directly over the beans, then cut the lemon into wedges for serving. Season with pepper and serve.

Steps:
- Melt 2 Tbs. of the butter in a large sauté pan over medium heat. Add the almonds and cook, tossing frequently, until they're light brown and toasted, 3 to 4 min. Transfer them with a slotted spoon to a plate lined with paper towels.
- Add the green beans, garlic, and salt to the pan. Toss to coat the beans with the residual butter. Add the water and simmer gently, tossing occasionally, until the beans are fork-tender and fully cooked (taste one to check), about 15 min. The liquid should be reduced to about 1/4 cup or less; if there's too much liquid, increase the heat to a boil and let it reduce briefly. Add the remaining 2 Tbs. butter and toss to coat the beans and emulsify with the liquid. Add the pepper, toss, and adjust the seasonings as needed. Scatter the slivered almonds over the serving platter or over each serving.

- In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
- While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.
- Over medium-high heat add the diced shallots to the skillet with the bacon fat and sauté for 2-3 minutes.
- Add the green beans and sauté to coat and heat through. Toss in bacon and sliced almonds; remove from heat and serve immediately.

Steps:
- Place an oven rack on the center shelf and preheat the oven to 350 degrees F. Line a baking sheet with foil or parchment.
- Toast the almonds until fragrant and golden, approximately 7-10 minutes, shaking the pan every 3-4 minutes to ensure even cooking. Remove the almonds from the oven, and increase the temperature to 450 degrees F.
- Place the green beans and garlic on the baking sheet. Drizzle with olive oil and toss to coat, then season with the salt and pepper. Spread the ingredients out evenly, and roast for approximately 25 minutes, using a spatula to stir the vegetables halfway through. - Bring a large pot of water to a boil. Season the water liberally with kosher salt (it should be very salty to taste). Salting the cooking water aggressively accomplishes two tasks: it ensures that the green beans will be seasoned properly inside and out, and also helps them retain their bright green color after cooking. For make ahead tips, please read the notes section at the bottom of this recipe thoroughly.
- Blanch the green beans for 4 to 5 minutes, stirring occasionally, or until they are crisp-tender and slightly squeaky between your teeth. It is important that the green beans be slightly undercooked as they will be transferred directly to the skillet and will continue cooking during this time.
- Meanwhile in a large skillet, melt the butter over medium-low heat until lightly bubbling. Add the sliced almonds and sauté, stirring frequently, for 2 to 3 minutes or until they are starting to turn golden brown. Reduce the heat to low and add the chopped shallots and garlic. Sauté for an additional 1 to 2 minutes, stirring frequently, until fragrant and lightly caramelized.
- Using a large slotted spoon, tongs, or kitchen spider, transfer the blanched green beans from the boiling water directly to the skillet. Sauté briefly, gently tossing the green beans with the almond mixture until evenly combined and the green beans are tender. Add the lemon zest and lemon juice, toss once again, and season to taste with salt and freshly ground pepper. Serve immediately.

- Once the green beans are bright green, remove the cover and dump out any excess water. Add butter and salt, sauté. Allow green beans to brown slightly, about 2-3 minutes. Serve immediately.
- Optional: My kids won't eat the almonds, but most adults love this recipe with almonds! I add slivered almonds about the same time as the butter, they'll get browned and perfectly compliment the green beans.

- Heat a large rimmed skillet over medium heat. Once hot, add almonds and salt and toast for 4-5 minutes, stirring frequently, until toasted. Watch closely and be careful not to burn. Then remove from pan and set aside.
- Heat the same large rimmed skillet from earlier over medium-high heat. Once hot, add the oil. Wait 1 minute for the oil to get hot, then add green beans. Season generously with salt and pepper (as the recipe is written, we recommend starting with 1/2 tsp sea salt and 1/4 tsp black pepper and working your way up from there).
- Cover and cook for about 8 minutes, stirring / tossing occasionally. You want the heat to remain high and the cover tight so the green beans get browned but also tender. Turn down heat slightly if they’re close to burning.
