ORANGE STRAWBERRY SUNRISE POPSICLES



Orange Strawberry Sunrise Popsicles image

Delicious fruity popsicles for hot summer days. Incredibly easy to make!

Number Of Ingredients 4

2 cups freshly squeezed orange juice (3-4 oranges)
1 cup strawberries, fresh or frozen
3/4 cup water
2 tbsp maple syrup

Steps:

  • Start by juicing the oranges using a citrus juicer, pour the juice into a jug and set aside.
  • Add the strawberries, water, and maple syrup into a high-speed blender and blend on high until smooth.
  • First, pour the orange juice evenly into each popsicle mold (about 1/2-3/4 full). Then, using a spoon, add the strawberry mixture into each mold.
  • You can carefully move the strawberry mixture around a little in the molds with a spoon so that the popsicles have more of a gradient look.
  • Place into the freezer and freezer for at least 1 hours before inserting the popsicle sticks into each mold to help them stay straight.
  • Freeze for at least 12 hours.
  • To take them out, run hot water over the molds briefly and they should be easy to pull out.
  • Store in the freezer in small reclosable plastic bags.

STRAWBERRY AVOCADO POPS

2 cups frozen strawberries
1 cup vanilla yogurt
1/4 cup honey
1 large avocado, chopped
1 cup finely chopped fresh strawberries

Steps:

  • Combine the frozen strawberries, yogurt, honey and avocado in the bowl of a food processor and puree until smooth. Transfer to a bowl.
  • Spoon about a tablespoon of the chopped fresh strawberries into each of 12 small paper cups. Fold the remaining chopped strawberries into the yogurt mixture. Spoon the yogurt mixture on top of the strawberries in each paper cup. Carefully insert an ice-pop stick into each pop. Freeze until solid, about an hour. Peel the paper cups off to serve.

1 pound fresh strawberries, hulled, medium dice (about 3 cups)
2/3 cup granulated sugar
1 tablespoon orange-flavored liqueur
1 cup cold heavy cream

Steps:

  • Blend 2 cups of the strawberries, and 1/2 cup of the sugar in a blender or food processor until smooth. Transfer to medium saucepan and cook over medium heat until bubbling and just thickened. Set aside to cool, then refrigerate and chill for about 1 hour. Stir in remaining 1 cup strawberries.
  • In a medium clean, cold bowl, beat cream with the remaining 2 tablespoons of the sugar and liqueur until stiff peaks form. Fold the whipped cream into strawberry mixture. Chill fool until beginning to set, about 30 minutes.

2-1/2 cups boiling water
3 pkg. (4-serving size each) JELL-O Strawberry Flavor Gelatin
2-3/4 cups cold water
1 can (11 oz.) mandarin oranges, drained
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

Steps:

  • Stir boiling water into dry gelatin mixes in medium bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Reserve a few oranges for garnish. Gently stir remaining oranges into thickened gelatin. Set aside.
  • Beat cream cheese and sugar in separate medium bowl with wire whisk until well blended. Gently stir in 2 cups of the whipped topping. Spoon into large serving bowl; cover with the gelatin mixture.
  • Refrigerate 2 hours or until firm. Top with the remaining whipped topping and reserved oranges just before serving.

Steps:

  • Pulse strawberries with sugar and 1/3 cup water in food processor until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl.
  • Pulse remainder until smooth. Stir puree into mixture in bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least 8 hours.
