Take advantage of summer's bounty! All these lovely berries... mmm... it's filled with fruitiness and great served warm as an extra option.

Number Of Ingredients 6

1/3 cup old fashioned oats
1/2-2/3 cup vanilla soymilk
1/2 med-large ripe banana
1/2 small apple (I use Granny Smith)
1/2 cup fresh strawberries
1 teaspoon agave syrup (optional) or 1 teaspoon honey (optional)

Steps:

  • The night before, mix the oats and soymilk, cover and refrigerate overnight.(Note-use a mixture of regular and more finely-ground, about 2:1, for the creamiest consistency)
  • In the morning, prepare the fruit: shred the apple; quarter the banana lenghtwise and then slice it. Cut the strawberries in quarters or eighths, depending on their size-I use about 6 large berries; feel free to use more or less to your taste.
  • Stir everything together, drizzle on the sweetener if desired, and enjoy!
  • To serve warm, simply microwave for about 1 minute before adding the strawberries. Then stir 'em in and devour your tasty oatmeal/muesli!

1 cup old-fashioned oats
1 tablespoon flax seeds
1 tablespoon chia seeds
1/2 cup shredded coconut
1 cup diced strawberries
1 cup diced apples
3/4 cup whole milk
1/2 cup half-and-half or heavy cream
1/4 cup coconut milk
2 tablespoons heavy cream
1/4 cup brown sugar
1 tablespoon vanilla extract
Pinch of kosher salt

Steps:

  • Layer the oats, flax seeds, chia seeds, coconut, strawberries and apples into two 1-pint jars.
  • In a pitcher, mix up the milk, half-and-half, coconut milk, heavy cream, sugar, vanilla and salt. Pour over the seeds and fruit in the jars. Put the lids on the jars, shake them and place them in the fridge for at least 5 hours, but preferably overnight.

250 g strawberries (8 oz hulled and thinly sliced)
250 g rolled oats (8 oz)
75 g sliced almonds (3 oz)
75 g pumpkin seeds (3 oz)
75 g sunflower seeds (3 oz)
25 g linseeds (golden 1 oz)
75 g cranberries (dried 3 oz)

Steps:

  • Preheat oven to 110C, 225F, Gas Mark 1/4.
  • Blot juice from the strawberries with kitchen paper and lay them in a single layer on a baking tray lined with baking paper.
  • Place tray in preheated oven for 1 hour, remove and turn strawberries slices and then return to oven for a further 1 to 1 1/2 hours or until strawberries are crisp.
  • Mix together all other ingredients and then carefully stir in the cooled strawberries.
  • Keep in an airtight container for up to 3 weeks.
  • Suggested you serve using soy milk.

I noticed a bottled strawberry/lime/chia drink in the refrigerator section of Trader Joe's recently, and thought I'd use the strawberry/chia combination in a smoothie. I added muesli for bulk and geranium syrup for flavor.

1/4 cup muesli
3 tablespoons low-fat milk or water
1 tablespoon soaked chia seeds (1 teaspoon dry unsoaked)
1 heaped cup ripe strawberries, hulled (about 6 ounces)
1/2 cup freshly squeezed orange juice
1 tablespoon geranium syrup

Steps:

  • The night before, place the muesli in a small bowl or ramekin and cover with 3 tablespoons milk or water. Refrigerate overnight. Soak the chia seeds overnight as well.
  • Scoop up a tablespoon of seeds with the gooey liquid and place in a blender (don't worry, your smoothie won't have this consistency). Add the remaining ingredients and blend for 1 full minute at high speed.
