STRAWBERRY GLAZED FRUIT SALAD
I got this recipe out of a cooking magazine many years ago. This is a quick put together recipe that everyone loves. It might seem like it would be overly sweet, but it's not. I love making this for bar-b-ques in the summer.

FROSTED STRAWBERRY SALAD
My daughter, Katherine Beth, has requested that her grandmother, Thelma Bell, make this sweet rick gelatin salad with its fluffy topping for every family get-together. So when she and Patrick Althouse planned their nuptials, this delightful salad was part of the bountiful potluck buffet.

- In a large bowl, dissolve gelatin in boiling water. Stir in strawberries and pineapple. Refrigerate until partially set. , Stir in pecans and cherries. Transfer to a 13-in. x 9-in. dish. Chill for 2 hours or until firm. , For topping, in a small bowl, beat cream cheese and marshmallow creme just until combined; fold in whipped topping. Spread over salad. Chill for several hours or overnight. Cut into squares. Garnish with strawberries and mint.

THE BEST GLAZED FRUIT SALAD!
What a delightful fruit salad! The orange marmalade glaze is sweet but has a little bit of tang from the lemon. This was great at room temperature, but even better after it sat in the fridge for a few hours and the flavors blended together. We had some extra strawberries so we threw them in too. So yummy!

Steps:
- 1. Drain pineapple, reserve all juice.
- 2. In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don't get brown and yucky looking. Set aside.
- 3. In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice.
- 4. Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat. Keep in the fridge. It won't last long!!
STRAWBERRY FRUIT SALAD WITH RHUBARB SIMPLE SYRUP
Steps:
- For the rhubarb simple syrup: Put the sugar in a small saucepan with 1 cup water. Cook over medium-high heat, stirring occasionally, until the sugar starts to dissolve, about 5 minutes. Once it reaches a simmer, add the rhubarb and reduce the heat to medium low. Cook, stirring occasionally, until the rhubarb is softened and the syrup turns light pink, about 25 minutes. Set the rhubarb syrup aside until cool and slightly thickened, about 30 minutes.
- For the strawberry fruit salad: Put the strawberries and blackberries in a serving bowl and drizzle generously with the rhubarb syrup. Top with the cooked rhubarb. Sprinkle with the basil and mint.
