For my wedding shower everyone brought a few recipes and this is one of my favorites. It is refreshing and pretty. This salad also travels well, just save the dressing and use it just before serving.

1 head romaine lettuce - rinsed, dried, and chopped
2 bunches fresh spinach - chopped, washed and dried
1 pint fresh strawberries, sliced
1 Bermuda onion, sliced
½ cup mayonnaise
2 tablespoons white wine vinegar
⅓ cup white sugar
¼ cup milk
2 tablespoons poppy seeds

Steps:

  • In a large salad bowl, combine the romaine, spinach, strawberries and sliced onion.
  • In a jar with a tight fitting lid, combine the mayonnaise, vinegar, sugar, milk and poppy seeds. Shake well and pour the dressing over salad. Toss until evenly coated.

1 small head of romaine lettuce
2 oz monterey jack cheese, shredded
1/4 c sliced almonds
1 c sliced strawberries
DRESSING:
2 Tbsp red wine vinegar
3 Tbsp granulated sugar
1/2 small clove of garlic, minced finely
1 dash(es) white pepper
2 Tbsp vegetable oil
1/8 tsp paprika

Steps:

  • 1. Clean romaine lettuce, chop and pat dry, place in large bowl. Add cheese, almonds and strawberries. Toss gently.
  • 2. Combine all dressing ingredients using a little jar or small bowl and refrigerate. Right before you eat shake or blend completely. Pour over prepared lettuce, etc. using just enough to your liking. Enjoy!
  • 3. Options: Use mozzarella cheese instead of Monterey jack. Sunflower seeds in place of almonds. NOTE: use dressing the same day as it does not keep well.
  • 4. All kinds of leafy lettuces can be used in this recipe. Red Leaf Lettuce, Bibb Lettuce, and for gardeners the wonderful Black Seeded Simpson in summer are great. Try others and decide which you enjoy the best!

Meet the Cook: One reason I particularly like this recipe is that it's so versatile. I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. 1/2 cup canola oil
1/3 cup sugar
1/4 cup cider vinegar
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon paprika
Pinch white pepper
8 cups torn romaine
4 cups torn Bibb or Boston lettuce
2-1/2 cups sliced fresh strawberries
1 cup shredded Monterey Jack cheese
1/2 cup chopped walnuts, toasted

Steps:

  • For dressing, place first seven ingredients in a jar with a tight-fitting lid; shake until sugar is dissolved., In a large bowl, combine remaining ingredients. Just before serving, shake dressing again and toss with salad.

2 heads bibb lettuce (spring mix) or 2 heads leaf lettuce (spring mix)
1/2 cup monterey jack cheese, cubed
1 (3 ounce) package pecans
1 1/2 ounces sunflower seeds
1 cup fresh strawberries, halved
1 small white onion, minced
1 1/2 cups sugar
2/3 cup red wine vinegar
2 teaspoons dry mustard
2 cups vegetable oil
2 -3 tablespoons poppy seeds

Steps:

  • Cut lettuce into bite sized pieces.
  • Add cheese, pecans, seeds and strawberries.
  • Whisk together dressing ingredients.
  • Pour dressing over salad and toss gently.
  • Serve immediately.

8 cups torn mixed salad greens
2 cups fresh blueberries
1 cup shredded Monterey Jack cheese
1/2 cup sliced almonds, toasted
1/2 cup sunflower kernels
DRESSING:
1/2 cup vegetable oil
1/3 cup sugar
1/4 cup chopped onion
3 tablespoons red wine vinegar
1-1/2 teaspoons ground mustard
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine the greens, blueberries, cheese, almonds and sunflower kernels. In a blender, combine the oil, sugar, onion, vinegar and mustard; cover and process until blended. Stir in poppy seeds. Drizzle over salad and toss to coat.

6 oz Litehouse® Italian Vinaigrette
3 oz Vegetable Oil
1 tbsp Litehouse® Freeze Dried Thyme
4 oz Grilled Chicken
4 oz Mixed Greens
1 oz Carrots
2 oz Avocado
1 oz Crispy Pancetta
2 oz Strawberry
1 ea Hard Boiled Egg
2 oz Monterey Jack Cheese
1 oz French Cucumber
1 oz Pecans
3 oz Avocado Cilantro Ranch

Steps:

  • Grilled Chicken Procedures: In the stainless steel bowl mix together the Italian vinaigrette, vegetable oil, and freeze dried thyme. Place the chicken in the marinade mix and refrigerate overnight. Place the marinaded chicken on the grill 3 minutes on each side or until internal temperature reaches 165° F.
  • SALAD BUILD: Place the mixed greens in center of the bowl.
  • Spread the shredded carrots and monterey jack cheese evenly across the mixed greens.
  • Place the strawberry 12 o'clock.
  • Place the avocado 6 o'clock.
  • Place the hard-boiled egg 8 o'clock.
  • Place the cucumber 3 o'clock.
  • Place the chicken in center of the plate.
  • Top with the pecans and pancetta.
  • Drizzle the salad with the dressing in zigzag pattern.
