3 cups cold milk
¼ cup orange-flavored liqueur
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
3 cups fresh strawberries, halved, divided
2 kiwis, peeled, sliced and divided
24 glazed donut holes

Steps:

  • Beat pudding mixes, milk and liqueur in medium bowl with whisk 2 min. Stir in 2 cups COOL WHIP.
  • Reserve 2 strawberry halves and 3 kiwi slices for garnish. Place 12 donut holes in 2-qt. bowl; top with 1/3 of the pudding mixture and remaining strawberries. Cover with remaining donut holes, half the remaining pudding mixture and kiwi; top with remaining pudding mixture and COOL WHIP. Garnish with reserved fruit.
  • Refrigerate 4 hours.

1 cup good raspberry jam
Framboise
2 half-pints fresh raspberries
1 pint fresh strawberries
Cognac Cream, recipe follows
2 cups cold heavy cream
2 tablespoons sugar
2 tablespoons pure vanilla extract
1/2 pound (2 sticks) unsalted butter, at room temperature
2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
3 cups milk
10 extra-large egg yolks, at room temperature
1 cup sugar
4 tablespoons sifted cornstarch
1 teaspoon pure vanilla extract
1 teaspoon Cognac
2 tablespoons unsalted butter
1 tablespoon heavy cream

Steps:

  • Cut the pound cake into 9 (3/4-inch) slices and spread each slice on 1 side with raspberry jam, using all the jam. Set aside.
  • Place a layer of cake, jam side up, in the bottom of a 2 1/2-to 3-quart glass serving bowl, cutting the pieces to fit. Sprinkle with Framboise. Top with a layer of raspberries and strawberries and Cognac Cream. Repeat the layers of cake sprinkled with Framboise, raspberries, strawberries and Cognac Cream, ending with a third layer of cake jam side down and raspberries and strawberries.
  • Whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment. When it starts to thicken, add the sugar and vanilla and continue to whip until it forms stiff peaks. Decorate the trifle with whipped cream. The trifle can sit for a while at room temperature.
  • Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/2 by 2 1/2-inch) loaf pans. Line the bottoms with parchment paper.
  • Cream the butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • When the cakes are done, let them cool for 10 minutes. Take them out of the pans, place them on a baking rack and allow them to cool completely. Wrap well, and store in the refrigerator.
  • Heat the milk in a medium stainless-steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
  • Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
  • With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, 5 to 7 minutes. (Pay attention because it will thicken and then quickly become scrambled eggs!)
  • Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Cognac, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.

1/4 cup fresh lemon juice
1 cup seedless raspberry jam
4 cups raspberries
2 cups heavy cream
1 1/2 pounds favorite pound cake

Steps:

  • In a small saucepan, bring 1/2 cup sugar, 1/4 cup water, and lemon juice to a boil, stirring to dissolve sugar, 1 to 2 minutes. Let cool.
  • In a small bowl, combine jam with 3 cups raspberries, mashing slightly. In a large bowl, whip cream and 2 tablespoons sugar to stiff peaks.
  • Slice pound cake 3/4 inch thick; brush both sides of slices with lemon syrup.
  • Fit 1/3 of slices snugly in the bottom of a 4-quart trifle dish or other glass bowl, trimming edges if necessary. Gently spread top of layer with 1/3 of raspberry mixture, and then 1/3 of whipped cream. Repeat to make two more layers; garnish with remaining cup raspberries. Refrigerate until ready to serve, up to 24 hours.

135g strawberry jelly cubes (I used Hartley's)

60g sugar

Steps:

  • Preheat the oven to 180 degrees Celsius. Grease and line the base of a 20 cm round cake tin. Whisk the two eggs and 60g sugar with a handheld whisk until pale and fluffy. Fold in the flour well, being sure to scrape to the bottom. Pour the mixture into the tin and bake for 10-12 mins.
  • Prepare the jelly with the water. Cut out rounds of your sponge and place in the bottom of the trifle dish. Pour over all of the prepared jelly. Leave in the fridge for 6+ hours, preferably overnight. If you are in a rush, freeze for 1 hour then place in the fridge until set.
  • Make the custard. Whisk together the egg yolks and 30g sugar. Heat the milk until almost boiling, then gradually pour over the yolks and sugar. Whisk in 2 tbsp cornflour. Return to the heat and whisk on low for 10 minutes until the custard is thick. Leave to cool for 30 minutes then pour over the jelly sponge. Place in the fridge to chill.
  • Remove the trifle from the fridge when cool. Whip the cream to soft peaks, and spread over the trifle. Decorate with the toppings in a decorative pattern. Chill for 2+ hours before serving with a large spoon.

2 tablespoons confectioners' sugar
2 tablespoons sherry wine or 2 tablespoons orange juice
3 ounces ladyfingers
4 1/2 ounces angel food cake (1/2 9-oz. cake)
1/4 cup sherry wine or 1/4 cup orange juice
1 1/3 cups whipping cream or 1 1/3 cups heavy cream, whipped

Steps:

  • MAKE CUSTARD:.
  • Scald the milk in a heavy pot.
  • Mix the sugar and flour together, and place in the top of a double boiler over hot water.
  • Whisk in the scalded milk, then quickly whisk in the egg yolks.
  • Cook, stirring, until the mixture becomes thick enough to coat the back of a spoon.
  • Remove from the heat, and whisk in the butter and vanilla.
  • Pour the custard into a bowl, and cover with plastic wrap or waxed paper to prevent a skin from frorming on top.
  • Refrigerate until cool.
  • PREPARE BERRIES:.
  • Reserve a few whole berries to decorate the top.
  • Place the rest of the raspberries and blueberries in a bowl.
  • Slice the strawberries, and add them to the bowl.
  • Add the sugar and the 2 tablespoons sherry or orange juice.
  • Let the mixture steep 30-45 minutes to allow some of the fruit juices to be drawn out.
  • ASSEMBLE TRIFLE:.
  • Whip 2/3 cup whipping cream and mix into custard.
  • Place 1 cup of the fruit mixture in the bottom of a 12-cup glass trifle bowl.
  • Arrange the ladyfingers around the outer sides of the bowl. Top the ladyfingers with berries.
  • Spoon half the custard mixture into the center of the bowl.
  • Cut a couple of slices of angel food cake into pieces, and scatter them on top of the custard.
  • Then drizzle half the sherry or juice on it, and top with the remaining fruit (except for the berries reserved for garnish).
  • Cover the fruit with slices of angel food cake and drizzle it with the remaining sherry or juice.
  • Add the remaining custard to the dish. Whip the remaining 1 1/3 cup whipping cream, and spread it evenly over the top of the trifle.
