Here's what you need: baguette, olive oil, kosher salt, ricotta cheese, strawberries, balsamic glaze

Yield 12 crostini

Number Of Ingredients 6

12 slices baguette, 1/2 in (1 cm), cut on a slight diagonal
olive oil, to taste
kosher salt, to taste
¾ cup ricotta cheese
6 strawberries, sliced
balsamic glaze, for drizzling

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper
  • Arrange the bread in a single layer on the prepared baking sheet. Brush each piece of bread with olive oil. Lightly sprinkle with salt. Bake for 12-14 minutes, until the edges are light golden brown. Let cool.
  • Spread 1 tablespoon of ricotta over each crostini. Top with 4 slices of strawberry and drizzle with balsamic glaze.
  • Enjoy!

2 cup(s) finely chopped strawberries
1/4 cup(s) chopped fresh basil
2 tablespoon(s) dark brown sugar
4 teaspoon(s) minced shallots (can use scallions)
1 pinch(es) pepper
1 package(s) (3 oz.) cream cheese, softened

Steps:

  • Stir together strawberries, basil, brown sugar, shallots and pepper.
  • Spread cream cheese onto 36 pretzel crackers.
  • Top with strawberry mixture. Yield: 3 dozen

2 cups crushed pretzels (about 8 ounces)
3/4 cup butter, melted
3 tablespoons sugar
FILLING:
2 cups whipped topping
1 package (8 ounces) cream cheese, softened
1 cup sugar
TOPPING:
2 packages (3 ounces each) strawberry gelatin
2 cups boiling water
2 packages (16 ounces each) frozen sweetened sliced strawberries, thawed
Optional: Additional whipped topping and pretzels

Steps:

  • In a bowl, combine the pretzels, butter and sugar. Press into an ungreased 13x9-in. baking dish. Bake at 350° for 10 minutes. Cool on a wire rack. , For filling, in a small bowl, beat whipped topping, cream cheese and sugar until smooth. Spread over pretzel crust. Refrigerate until chilled. , For topping, dissolve gelatin in boiling water in a large bowl. Stir in sweetened strawberries; chill until partially set. Carefully spoon over filling. Chill until firm, 4-6 hours. Cut into squares; if desired, serve with additional whipped topping and pretzels.
