Homemade pot stickers are so versatile--you can fill them with anything you want and as full as you want. And the play between the crispy, crusty bottom, and the tender parts, makes for a truly unique dumpling. These are filled with ground pork, green onions, ginger, and cabbage.

Number Of Ingredients 16

1 pound ground pork
4 cloves minced garlic
½ cup finely chopped green onions
3 tablespoons very finely minced fresh ginger
2 tablespoons soy sauce
1 teaspoon soy sauce
1 teaspoon sesame oil
1 pinch cayenne pepper
1 ½ cups finely chopped green cabbage
2 ½ cups all-purpose flour
¾ teaspoon kosher salt
1 cup hot water, about 130 -150 F (55-65 C)
¼ cup seasoned rice vinegar
¼ cup soy sauce
6 tablespoons vegetable oil for frying, or as needed - divided
8 tablespoons water for steaming, divided

Steps:

  • Place ground pork, green onions, garlic, ginger, 2 tablespoon plus 1 teaspoon soy sauce, sesame oil, and cayenne in a mixing bowl. Top with chopped green cabbage. Mix with fork until thoroughly combined. Tamp down lightly; cover with plastic. Refrigerate until chilled, about an hour.
  • Place flour and kosher salt in a mixing bowl. Slowly pour in hot water. Stir with a wooden spoon until mixture forms a shaggy dough. Flour your hands and transfer dough to a work surface. Knead dough until it becomes smooth and elastic. If dough seems too sticky, sprinkle with a bit more flour, about 3 to 5 minutes. Wrap dough ball in plastic, and let it rest about 30 minutes.
  • When dough has rested, divide into 4 equal pieces. Cover 3 pieces with a dish cloth while you work the first piece. Roll into a small log about the thickness of a thumb, about 3/4 inch. Divide each log into 6 equal pieces. Roll each piece into a thin 3 1/2-inch circle on a lightly floured surface to form the pot sticker wrappers. Repeat with the remaining dough pieces.
  • Lightly moisten the edges of a wrapper with your wet finger. Place a small scoop of the ground pork mixture onto the center of a wrapper. Fold up the 2 sides and pinch together in the center. Pinch together the remaining edges, forming "pleats" along one side. Tap the pot sticker on the work surface to slightly flatten the bottom; form a slight curve in it so it stands upright in the pan. Transfer to a well-floured plate. Repeat with remaining dough and filling.
  • Mix together seasoned rice vinegar and soy sauce in a small mixing bowl for the dipping sauce.
  • Heat oil in skillet over medium-high heat. Place about 6 or 7 pot stickers in the hot oil, flat side down. Cook until bottoms are golden brown, about 2 minutes. Drizzle in water and quickly cover the pan; steam for 3 minutes. Uncover; reduce heat to medium. Continue cooking until water evaporates and bottoms are browned and crunchy, 1 or 2 minutes. Transfer to a warm serving dish. Repeat with remaining pot stickers. Serve with dipping sauce.

Number Of Ingredients 15

1/2 pound ground pork
1/4 cup finely chopped scallions
2 tablespoons finely chopped red bell pepper
1 egg, lightly beaten
2 teaspoons ketchup
1 teaspoon yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon light brown sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
35 to 40 small wonton wrappers
Water, for sealing wontons
3 to 4 tablespoons vegetable oil, for frying
1 1/3 cups chicken stock, divided

Steps:

  • Preheat oven to 200 degrees F.
  • Combine the first 11 ingredients in a medium-size mixing bowl (pork through cayenne). Set aside.
  • To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush 2 of the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the pork mixture in the center of the wrapper. Fold over, seal edges, and shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.
  • Heat a 12-inch saute pan over medium heat. Brush with vegetable oil once hot. Add 8 to 10 potstickers at a time to the pan and cook for 2 minutes, without touching. Once the 2 minutes are up, gently add 1/3 cup chicken stock to the pan, turn the heat down to low, cover, and cook for another 2 minutes. Remove wontons to a heatproof platter and place in the warm oven. Clean the pan in between batches by pouring in water and allowing the pan to deglaze. Repeat until all the wontons are cooked. Serve immediately.

Homemade potstickers are easier to make than you think, and they taste 10000x better than the store-bought ones!

1 pound ground pork
1 cup shredded green cabbage
3 ounces shiitake mushrooms, diced
2 cloves garlic, pressed
2 green onions, thinly sliced
1 tablespoon hoisin
1 tablespoon freshly grated ginger
2 teaspoons sesame oil
1 teaspoon Sriracha*, or more, to taste
1/4 teaspoon white pepper
36 won ton wrappers
2 tablespoons vegetable oil Soy sauce, for serving

Steps:

  • In a large bowl, combine pork, cabbage, mushrooms, garlic, green onions, hoisin, ginger, sesame oil, Sriracha and white pepper. To assemble the dumplings, place wrappers on a work surface. Spoon 1 tablespoon of the pork mixture into the center of each wrapper. Using your finger, rub the edges of the wrappers with water. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal. Heat vegetable oil in a large skillet over medium heat. Add potstickers in a single layer and cook until golden and crisp, about 2-3 minutes per side. Serve immediately with soy sauce, if desired.

Pot stickers are one of my family's favorite appetizers. In fact, my cousins even eat them as the main course. My problem with ordering them from a restaurant is that they never have a vegetarian option, so I prefer to make them at home, where I can sauté chopped cabbage to substitute for the pork.

Yield makes 25 pot stickers

Number Of Ingredients 11

1 small clove garlic
3 green onions
1 1/2 teaspoons chopped cilantro
1 egg yolk
1/2 teaspoon salt
8 ounces ground pork
25 3-inch round wonton wrappers
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil

Steps:

  • To prepare the pot stickers: Smash the garlic clove by placing it on a cutting board, laying the blade of a large knife flat on top of the garlic, and pressing the knife with the heel of your hand. Remove the papery skin and finely chop the garlic.
  • Cut off the root ends of the green onions and thinly slice the white and about 1 inch of the green parts. Set aside 1 tablespoon for the sauce and place the remaining onion in a medium bowl.
  • Add the garlic, cilantro, egg yolk, salt, and ground pork to the bowl and mix well. (I know it sounds gross, but your hands are the best utensil to get this mixed well. Of course, make sure they are clean and be sure to wash them after you've mixed the filling and before you touch anything else.)
  • Dip your finger in water and wet the entire edge of 1 wonton wrapper. Place a small spoonful of the pork mixture in the center of the wrapper and fold the wrapper in half to enclose the mixture. Firmly press the edges to seal the pot sticker. Just before you seal the pot sticker completely, push gently around the filling to remove any air pockets. Repeat the process with the remaining wrappers and filling. Lay the finished pot stickers on a baking sheet, keeping them separate. (If the pot stickers touch they will stick together and tear holes in the wrappers.)
  • Bring a large pot of salted water to a boil. Carefully drop a few of the pot stickers at a time into the water and cook for 2 minutes, or until they float to the top of the pan. Remove the pot stickers with a slotted spoon and place them on the baking sheet.
  • Heat 1 teaspoon of the vegetable oil in a large nonstick sauté pan over medium-high heat. Place one-third of the pot stickers in the pan and cook for 2 to 3 minutes, or until golden brown on one side. Place the browned pot stickers on a serving plate and repeat the process with the remaining pot stickers.
  • To prepare the sauce: Place the soy sauce, rice vinegar, and sesame oil in a small bowl and mix well with a fork. Sprinkle the 1 tablespoon of reserved green onions on the sauce and place the sauce on the pot sticker plate.
  • When my aunt was first learning to cook, she decided to try to make veal scaloppine. She added the two cloves of garlic that the recipe called for and soon the smell of garlic was permeating the entire house. What she didn't know was that when you buy garlic it comes in bulbs. The smaller pieces that make up the bulb are called "cloves." So instead of two cloves she used two bulbs. Needless to say, it was not her best dinner.

½ medium head cabbage, finely chopped
1 green onion, finely chopped
2 slices fresh ginger root, finely chopped
2 water chestnuts, drained and finely chopped
1 teaspoon salt
½ teaspoon white sugar
1 teaspoon sesame oil
1 (14 ounce) package wonton wrappers
5 tablespoons vegetable oil
¾ cup water
1 tablespoon chili oil
1 tablespoon soy sauce
1 teaspoon rice vinegar

Steps:

  • Crumble pork into a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a medium bowl, mix together the pork, cabbage, green onion, ginger, water chestnuts, salt, sugar and sesame oil. Chill in the refrigerator 6 to 8 hours, or overnight.
  • Place a tablespoon of the pork mixture into each of the wonton wrappers. Fold the wrappers, and seal the edges with a moistened fork.
  • In a large, deep skillet, heat 3 tablespoons vegetable oil over medium high heat. Place the pot stickers into the oil seam sides up. Heat 30 seconds to a minute. Pour water into the skillet. Gently boil 7 to 8 minutes, until oil and water begins to sizzle, then add remaining oil. When the bottoms begin to brown, remove pot stickers from heat.
  • In a small serving bowl, mix together the chili oil, soy sauce, and vinegar, adjusting proportions to taste.

1 large egg white

1 garlic clove, minced

1/2 cup jalapeno pepper jelly
1/4 cup rice vinegar
2 tablespoons reduced-sodium soy sauce

  • Preheat oven to 425°. In a large bowl, combine the first 9 ingredients. Place 2 teaspoons of filling in center of a wonton wrapper. (Cover rest of wrappers with a damp paper towel until ready to use.), Moisten wrapper edges with water. Fold edge over filling and roll to form a log; twist ends to seal. Repeat with remaining wrappers and filling., Place pot stickers on a baking sheet coated with cooking spray; spritz each with cooking spray. Bake 12-15 minutes or until edges are golden brown., Meanwhile, place jelly in a small microwave-safe bowl; microwave, covered, on high until melted. Stir in vinegar and soy sauce. I was watching "Everyday Food" on PBS one day and they were making these pot stickers. They looked so easy and delicious that I had to try making them myself. They turned out just as great as they looked on tv and have become one of my favorite meals. I serve them with Recipe #62708.

Number Of Ingredients 9

1/2 cup napa cabbage or 1/2 cup savoy cabbage, finely chopped
1/2 teaspoon coarse salt or 1/4 teaspoon table salt
6 ounces ground pork, not all lean
3 scallions, finely chopped
1 tablespoon fresh ginger, peeled and finely chopped
1 teaspoon soy sauce
1 teaspoon toasted sesame oil
24 rectangular or square wonton wrappers (3 1/2-by-3-inch)
2 tablespoons vegetable oil

Steps:

  • In a medium bowl, toss cabbage with 1/4-1/2 teaspoon salt; let stand 10 minutes.
  • Wrap cabbage in a double layer of paper towels; firmly squeeze out excess liquid.
  • Return cabbage to bowl and add pork, 3 finely chopped scallions, ginger, soy sauce, and sesame oil.
  • Mix well with a fork or use your hands.
  • Work with one wrapper at a time, and keep the rest covered with a damp towel.
  • Spoon one level teaspoon of filling in center (if you try to use more, the wrappers won't seal right or may tear).
  • With dampened fingers, wet the four edges.
  • Fold wrapper in half over filling to make a triangle, making sure the ends meet and filling is centered; press edges down firmly to seal (sometimes I bring all four corners together to make a little pouch instead of a triangle, not as pretty, but faster!).
  • Transfer to an oiled plate; cover with a damp towel to keep moist.
  • Repeat with remaining wrappers and filling (Refrigerate leftover filling up to 2 days).
  • In a 12-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high heat.
  • Add half the wontons and cook, turning once, until lightly browned, about 1 minute per side.
  • Carefully add 1/2 cup water (oil may sputter), cover, and steam until translucent and just cooked through, 2 to 3 minutes.
  • Repeat with remaining tablespoon oil and wontons.
  • Serve with soy sauce or your favorite dipping sauce.
