STRAWBERRY-PINEAPPLE JELLO SALAD
A delicious & easy to prepare, Strawberry-Pineapple Jello Salad, enhanced with pecans, cream cheese and a secret ingredient, 7-Up!

Steps:
- Dissolve jello in 2 cups boiling water **(use reserved pineapple juice as part of the 2 cups liquid).
- Put jello in blender with cream cheese. Blend until completely combined.
- Pour jello mixture into serving dish. Add can of 7-Up. Stir until combined. Mixture will be foamy. Cover dish with plastic wrap, then refrigerate until slightly thickened (about 45 minutes or so).
- When jello is slightly thickened, stir in the crushed pineapple and chopped nuts. Stir to combine and distribute throughout jello. Cover with plastic wrap and refrigerate until completely set and firm (several hours).
- When ready to serve, slice into serving pieces with a knife, then use a spatula to remove portions. Enjoy!

Steps:
- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
- Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 3 cups prepared strawberries into 6- or 8-qt. saucepot. Stir in pineapple with juice.
- Stir pectin into fruit mixture in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

- In a saucepan, combine fresh rhubarb, sugar and water.
- Bring mixture to a low boil and boil for 10 minutes.
- Add (drained) crushed pineapple and strawberry Jello to mixture.

- Remove from heat and immediately pour into hot, sterilized canning jars.

- In a large bowl mix together instant french vanilla pudding with 1 1/2 cups of undrained pineapple. Cover and set aside.
- In a large glass measuring cup, or small bowl, mix together 3 oz.package of strawberry jello with 1 cup of boiling water. Mix until jello is dissolved. Add in 1/2 cup crushed ice cubes. Mix until thickened. Place in refrigerator and chill, mixing occasionally until mixture become slightly lumpy and thick. Do not allow to set.
- Add thickened jello mixture to pudding and pineapple mixture. Fold together until combined.
- Add container of cool whip. Fold ingredients together.
- Add 2 cups of mini marshmallows. Gently stir together.

- Pour package of jell-o into a medium bowl.
- Pour boiling water over strawberry jello and mix until gelatin is fully dissolved.
- Add in crushed pineapple and bananas and stir well.
- Add in 12 strawberries and mix until all fruit is covered
- In a small bowl, stir sour cream until it becomes creamy and loosened up a bit.
- In a medium-sized bowl or 9x13" baking pan, pour half the gelatin mixture. To help the jello set up a bit quicker, place the pan into the freezer for 5-10 minutes or until the jello has started to set.
- Carefully ladle the sour cream over the jello and spread in an even layer.

- In a bowl, dissolve the strawberry gelatin in the boiling water. Stir in sliced strawberries, pineapple, and sliced bananas.
- Pour half of the mix into a 9 by 12 inch baking dish. Hold the rest of the mixture aside.
- Chill the mixture for an hour.
- Combine the sour cream, the sugar and the vanilla, mix well. Spread the sour cream mix over the chilled gelatin.
- Spoon the saved gelatin on top of the sour cream mixture.
- Chill at least 4 hours, overnight is best.
