I love strawberries, and my grandmother used to make this for us every Christmas. It's wonderful!

Ingredients

1 (10 ounce) package frozen strawberries
½ (20 ounce) can crushed pineapple, drained
4 eggs, beaten
1 ¼ cups vegetable oil
2 cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
¾ cup chopped walnuts
¾ cup chopped macadamia nuts

Steps:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 5x9-inch loaf pans.
In a bowl, mix the strawberries, pineapple, eggs, oil, and sugar. In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. Mix the flour mixture into the bowl with the fruit until evenly moist. Fold in walnuts and macadamia nuts. Divide the batter between the prepared loaf pans.
Bake loaves in the preheated oven until a toothpick inserted in the center of each loaf comes out clean, about 1 hour. Cool on wire racks.

What makes this a perfect summer recipe is that it's served in Mason jars. It can be assembled once and refrigerated until serving time, making it the perfect dessert for those hot summer days when you don't want to turn on your oven!

1 yellow cake mix
1 (6 oz.) package of instant vanilla pudding
1 can crushed pineapple, drained
2 (10 oz.) packages of frozen strawberries (we used one with syrup)
2 bananas
1 tub Cool Whip

Steps:

Bake the yellow box according to the box direction and set aside to cool.
Make the instant pudding and set in the fridge to get cold.
Cut the cake into small chunks and put in a small bowl (punch bowl) or Mason jar.
Spread pudding, then pineapple, bananas, and strawberries. Then add Cool Whip.
Repeat layering.
Refrigerate overnight.

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
2 each bananas, peeled and chopped
1 ½ cups chopped fresh strawberries
1 (6 ounce) container low-fat vanilla yogurt
1 (8 ounce) package low-fat cream cheese, softened
½ teaspoon vanilla extract
2 (14 ounce) packages Original Snack Factory® Pretzel Crisps®
1 tablespoon Honey for drizzling

Steps:

Place bananas in a bowl; add 1/4 cup of pineapple juice. Toss to coat bananas. Drain. Mix in chopped strawberries.
Mix cream cheese with a hand mixer at low speed in a small bowl until smooth. Add vanilla yogurt and vanilla extract; beat until combined. Fold in drained pineapple.
Place a teaspoon of cream cheese mixture on Pretzel Crisps®. Top with chopped bananas and strawberries. Drizzle with honey. Arrange Pretzel Crisps® on a serving tray. Cover tray with plastic wrap.
Refrigerate for no more than 2 hours.
