Strawberry Pie Bars image

Why not make a pan of these easy Strawberry Pie Bars! From the delicious crust to the cream cheese glaze these are a crowd pleaser!

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 1/2 cup all-purpose flour
1/4 teaspoon kosher salt
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 can (21 ounce) Strawberry Pie Filling
4 ounce cream cheese, softened
1/2 cup powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large mixing bowl, beat butter and sugar until creamy. Add in eggs, one at a time, beating after each addition. Add in flour, salt, baking powder and vanilla. Spread batter into a 13x9 baking dish. Top with strawberry pie filling.
  • Bake pie bars in a 350 degree oven for about 28-32 minutes, until edges begin to brown. Allow to cool before adding the glaze.
  • For the glaze, beat cream cheese with powdered sugar and vanilla until smooth and creamy. Spoon into a ziploc bag and cut off the tip. Pipe lines of glaze onto cooled bars. Serve warm or refrigerate and enjoy cold.

Scrumptious Strawberry Pie Bars image

Delicious whipped cream and ripe strawberries on a golden graham cracker crust. YUM! My mom can't get enough. Eat within 4 days.

cooking spray
9 graham crackers, crushed
⅓ cup butter, melted
⅓ cup white sugar
2 teaspoons shortening, softened
½ teaspoon ground cinnamon
1 ½ cups heavy whipping cream
6 tablespoons confectioners' sugar
1 tablespoon vanilla extract
1 pound fresh strawberries, sliced
2 tablespoons strawberry syrup, or to taste

Steps:

  • Place a large metal bowl and beaters from an electric mixer in the freezer.
  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch square pan with cooking spray.
  • Mix crushed graham crackers, butter, white sugar, shortening, and cinnamon in a bowl until well blended. Press into the prepared pan to make crust.
  • Bake crust in the preheated oven until set, about 7 minutes. Let cool, about 5 minutes. Refrigerate for 10 minutes. Transfer to the freezer and chill until cool to the touch.
  • Beat heavy cream in chilled bowl with an electric mixer on high speed until soft peaks form. Beat in confectioners' sugar 1 tablespoon at a time. Add vanilla extract; continue to beat until stiff peaks form.
  • Arrange 1 layer of strawberries over chilled crust. Add 1 layer of whipped cream. Repeat with a second layer of strawberries and whipped cream. Top with remaining strawberries. Drizzle strawberry syrup on top.
  • Refrigerate pie until set, about 1 hour. Cut into 9 pieces before serving.
