This simple bread recipe takes advantage of dried strawberries for year-round berry flavor. Recipe By: Melissa Rubel

1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. plus 2 tablespoons sugar
1 tsp. cinnamon
1 stick unsalted butter
2 eggs
1 tsp. pure vanilla extract
1/2 c. milk
3/4 c. dried strawberries
1/2 dash pecans

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with vegetable oil. In a medium bowl, whisk the flour with the baking powder and salt. In a small bowl, mix 2 tablespoons of the sugar with the cinnamon. In a large bowl, beat the butter with the remaining 1 cup of the sugar until pale and fluffy. At medium speed, add the eggs one at a time; beat until each one is fully incorporated before adding the next. Add the vanilla. At low speed, working in 2 batches, beat in the dry ingredients and milk. Using a spatula, fold in the dried strawberries and pecans.
  • Scrape the batter into the prepared loaf pan and sprinkle evenly with the cinnamon sugar. Bake for 1 hour and 5 minutes, or until a cake tester inserted in the center comes out clean. Let the bread cool in the pan for 15 minutes, then turn out onto a rack. Let cool completely before slicing.
  • Make Ahead: The bread can be wrapped in plastic and kept at room temperature for up to 2 days.

3 cups flour
1 teaspoon salt
2 cups sugar
1 1/4 cups oil
1 teaspoon baking soda
1 teaspoon cinnamon
4 eggs, beaten
2 cups strawberries, sliced
1 1/4 cups pecans, chopped

Steps:

  • Combine the dry ingredients. Add eggs, oil, strawberries and pecans. Stir just until all ingredients are moistened, may still be a bit lumpy.
  • Spoon the batter into 2 well-greased 9x5x3-inch loaf pans. Bake at 350ºF for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes, the remove and cool completely on wire racks.

1/2 c butter, softened
3/4 c sugar
1/2 tsp vanilla extract
1/8 tsp lemon extract
2 eggs
1/2 tsp salt
1/2 tsp cream of tartar
1/4 tsp baking soda
1 1/2 c all purpose flour
1/2 c strawberry jam
1/4 c sour cream
1/2 c chopped pecans

Steps:

  • 1. In a medium sized bowl, combine the butter and the sugar, vanilla, and lemon extract until smooth. Add the eggs, one at a time, and beat each one well.
  • 2. Combine flour, salt, cream of tartar and soda. Combine sour cream and jam. Add the jam mixture, alternating with the dry ingredients to the cream mixture. Beat until thoroughly combined. Stir in the pecans.
  • 3. Turn mixture into a lightly greased and floured loaf pan. Bake in a preheated 350-degree oven for 55 minutes.
  • 4. Serve warm with butter or cream cheese spread.

  • Preheat the oven to 350 degrees. Spray 2 loaf pans with nonstick cooking spray, set aside until ready to use.
  • In a large bowl or the bowl of a stand mixer, combine the flour, sugar, baking soda, salt and cinnamon, stir to combine. Stir in the vegetable oil, eggs and vanilla. The batter will be thick, stir until well combined. Gently stir in the strawberries & pecans.
  • Spoon batter in prepared loaf pans. Bake 45-50 minutes or until toothpick inserted come out clean. Cool the loaves in the pans for 10-15 minutes before turning out onto a cooling rack to cool completely. Slice and serve.
