STRAWBERRY MERINGUE CAKE (MOSTACHON)

- For the cake: Preheat the oven to 350 degrees F. Spray a 9-inch nonstick springform pan with nonstick cooking spray.
- In an electric mixer on high speed, beat the egg whites until soft peaks form. Add the sugar slowly, then the vanilla, baking powder, and salt while beating, about 2 more minutes. Turn the power off and fold in the walnuts and Maria crackers. Transfer to the prepared pan. Bake for 30 to 40 minutes.
- For the frosting: In an electric mixer, beat the cream cheese, sour cream, powdered sugar, and vanilla extract until soft peaks form and the mixture is smooth.
- To assemble: Remove the cake from the oven. Let cool for 15 minutes. Remove the springform. Using an offset spatula, spread the frosting all over the cake. Garnish with the strawberries and serve.
STRAWBERRY & PEACH JAM
This jam recipe is very easy to make and delicious! The strawberry and peach are a perfect combination. I use pectin because it cuts down the cooking time and sugar significantly. You can cut this recipe in half for a smaller batch. This recipe makes approx. 12 8oz. jars. Enjoy!

Steps:
- Wash and mash strawberries.
- Slice, pit, and dice peaches. Next, mash peaches.
- Place fruit in large pan on medium heat.
- Cook until it boils, stirring a few times. Reduce heat and cook for 30 minutes.
- In separate bowl, combine sugar and pectin and stir together.
- Add sugar/pectin mixture into fruit and stir. Add lemon juice.
- Boil (high boil) for 5 minutes.
- Remove from heat and fill jars to 1/4" of top. Recipe makes approximately 12 8oz. jars.
- Wipe rims clean and screw on 2-piece lids.
- Submerge sealed jars into hot water bath at 200 degrees or boiling water for 10 minutes. Lids will "pop" once removed from hot water bath and you know they are sealed. Let cool on counter.

- Rinse five 1-cup freezer-safe containers and lids with boiling water. Dry thoroughly., In a large saucepan, mix strawberries, peaches and pectin; bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute longer. Remove from heat; skim off any foam., Immediately fill containers to within 1/2-in. of tops. Wipe off edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving.

PEACH AND STRAWBERRY CRUMBLE

- Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter an 8 by 8-inch glass baking dish. Set aside.
- For the filling: In a medium bowl, whisk together the lemon juice and arrowroot until smooth. Add the strawberries, peaches and brown sugar. Gently toss until the fruit is coated. Pour the fruit mixture into the prepared pan.
- For the topping: In the bowl of a food processor, combine the flour, oats, almonds, brown sugar, cinnamon, and sea salt. Pulse until mixed. Add the butter. Pulse until the butter is the size of peas. Sprinkle the mixture over the filling and bake for 40 to 45 minutes until the filling is bubbling and the top is light golden. Cool the crumble for 5 minutes.
- Spoon the warm crumble into bowls and serve with a dollop of whipped cream or ice cream.

- 1. we start with the cake: Preheat the oven to 350 F because the oven must be hot or its not going to work with the cake. in a bowl you put the cream of tartar and the eggs white and start to beat until stiff then you add the sugar very slow, add the vanilla, the rexal or baking powder, when everything its completly add together we stop the beat.
- 2. then with a spatula and step by step add the cookies crumbs and the pecan add together all the ingredients with the spatula not use the electric mixer or everything its gonna be a mess and useless when everything its together put it on a 9 or 7 inch springform pan or in a individual springform pan and put in the oven for 20 min. ONLY 20 MINUTES, you don need to check it or anything just 20 min and the cake its out, remove the springform side and let it cool.
- 3. The Icing you dont gonna belive it, its DELICIOUS!!! ok you put in a bowl the cream cheese and the confectioners sugar, beat it and when they are together add the heavy cream and then the vanilla until it look like icing and put in the fridge for 30 min.
- 4. when the cake its cold or little warm you can add the icing be generous and put alot in the cake, its very important that the icing its very very hard if not its gonna start to melt. then add the fruit of your choise and decorate with pecan, mini chocolate, adding 2 types of fruit and enjoy it.
