Meet the Cook: One reason I particularly like this recipe is that it's so versatile. I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. Right now, my husband and I are in the middle of building our retirement home out in the country. We have four grown children and five grandchildren. -Patricia McNamara, Kansas City, Missouri

1/2 cup canola oil
1/3 cup sugar
1/4 cup cider vinegar
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon paprika
Pinch white pepper
8 cups torn romaine
4 cups torn Bibb or Boston lettuce
2-1/2 cups sliced fresh strawberries
1 cup shredded Monterey Jack cheese
1/2 cup chopped walnuts, toasted

Steps:

  • For dressing, place first seven ingredients in a jar with a tight-fitting lid; shake until sugar is dissolved., In a large bowl, combine remaining ingredients. Just before serving, shake dressing again and toss with salad.

Simple spinach salad with fresh strawberries, canned mandarin oranges, sliced almonds and goat cheese, all with a homemade poppy seed dressing.

4 cups baby spinach
5 oz mandarin orange segments (canned, drained, about 1/2 small can)
6 medium strawberries (halved)
1/4 cup sliced almonds
1/4 cup red onion (thinly sliced (optional))
1/3 cup Goat cheese (crumbled)
5 Tbsp white vinegar
1 Tbsp cider vinegar
2 1/2 Tbsp white granulated sugar (or 1 Tbsp honey)
3/4 tsp salt
1/8 tsp dried mustard powder
1/4 cup onion (finely diced)
1 cup vegetable oil (or other neutral tasting oil)
1 Tbsp poppy seeds

Steps:

  • To make the Poppy Seed Dressing: In a food processor or blender, add the white and cider vinegars, sugar, salt, mustard powder and onion. Process or blend for 30-45 seconds, or until pureed. With the food processor or blender running on high speed, very slowly start adding the oil, in a very slow, steady stream, until all the oil is added. Add the poppy seeds and blend briefly to combine. Use dressing immediately or put in a jar with a lid and refrigerate until needed. *Note: Dressing will separate as it sits in the fridge. Just shake it in the jar to mix it back up again before using.
  • For the salad: Add the baby spinach to a bowl. Add the strawberries, mandarin oranges, sliced almonds and red onion, if using. Toss to combine. Top with crumbled goat cheese, then drizzle with poppy seed dressing, to taste.

Although it sounds a bit odd, it is delicious. This recipe can easily be divided by three to serve 4 instead of 12. My mother gave me this recipe but I only use 1/2 c of oil instead of 1 1/2 cups.

12 cups spinach, washed and drained
9 green onions, chopped
3 cups mandarin oranges
3 cups strawberries, sliced
1 1/2 cups pecans
1 1/2 teaspoons pepper
1 tablespoon Dijon mustard
1 1/2 cups extra virgin olive oil
1 1/2 cups orange juice concentrate, thawed
3/4 cup raspberry vinegar
blue cheese

Steps:

  • To prepare dressing, place salt, pepper, mustard and a few drops of oil into a bowl and whisk until smooth.
  • Gradully add vinegar, oil, and orange concentrating - whisk until smooth.
  • Put all salad ingredients in salad bowl and toss with dressing.
  • Serve with blue cheese sprinkles.

Strawberries, avocados and mandarin oranges come together beautifully with fresh baby greens and a tangy citrus dressing in this lovely salad! Perfect for spring or summer time entertaining. The light and tangy flavors pair perfectly with meat and poultry, especially those that are grilled and barbecued. The dressing is great over spinach salad, as well. Add chopped pecans for a little crunch, if you like. Slightly adapted from a recipe found at Wives with Knives.

1/2 cup vegetable oil

½ cup sliced almonds
3 tablespoons white sugar
⅓ cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 ½ tablespoons white sugar

1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries

½ cup chopped red onion

Steps:

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
  • Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat.
