SUPER NACHOS



Super Nachos image

This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
¾ cup water
1 (18 ounce) package restaurant-style tortilla chips
1 cup shredded sharp Cheddar cheese, or more to taste
1 (15.5 ounce) can refried beans
1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
  • Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

4 flour tortillas
2 tablespoons melted butter
1/4 cup sugar
1 teaspoon cinnamon
8 ounces cream cheese, softened
1/4 cup + 2 tablespoons powdered sugar
1 orange (lime would be good, too!)
12 ripe strawberries, diced
1 tablespoon orange liqueur
1 tablespoon brown sugar
1/4 cup sour cream

Steps:

  • Set oven to 375ºF. Brush one side of tortillas with butter, then sprinkle with cinnamon sugar. Cut into quarters and place in single layer on a baking sheet. Bake 10-12 minutes. Remove and let cool on the baking sheet. They will continue to crisp as they cool.
  • Meanwhile, blend the cheese with 1/4 cup powdered sugar until smooth. Add the zest of the orange (about 1 teaspoon).
  • Mix the strawberries with the liqueur (if using) and brown sugar. Set aside at room temperature.
  • In a small bowl, whisk 1 tablespoon of the orange juice with 2 tablespoons sugar and the sour cream.
  • Top each tortilla chip with about a tablespoon of cream cheese, spoonful of strawberries and a drizzle of sour cream sauce. Serve quickly.

3 cups sliced fresh strawberries
1/4 cup sugar
1/4 cup almond flavored liqueur (such as Amaretto) or 1 teaspoon almond extract
3/4 cup sour cream
2 tablespoons sugar
1/4 teaspoon cinnamon
6 6-inch flour tortillas
2 tablespoons melted butter
2 teaspoons sugar
1/4 teaspoon cinnamon
2 tablespoons sliced almonds, toasted
1 tablespoon shaved semisweet chocolate

Steps:

  • Combine strawberries, 1/4 cup sugar and almond-flavored liqueur in a bowl; stir well.
  • Cover and refrigerate for at 1 hour.
  • Combine sour cream, 2 tablespoon sugar and 1/4 teaspoon cinnamon in a small bowl; stir well.
  • Cover and refrigerate.
  • Preheat oven to 400 degrees.
  • Using a pastry brush, lightly brush 1 side of the tortillas with melted butter.
  • Cut each tortilla into 6 wedges and arrange on 2 ungreased baking sheets.
  • Sprinkle tortilla wedges evenly with 2 teaspoon sugar and 1/4 teaspoon cinnamon.
  • Bake for 6 to 8 minutes, or until crisp.
  • Remove from oven and cool.
  • Drain strawberries (if you used the liqueur reserve liquid in a cocktail glass and sip while you finish making this dessert) Place 6 tortilla wedges on each of 6 dessert plates.
  • Top each tortilla wedge with strawberries and a little of the sour cream mixture.
  • Sprinkle toasted almonds and shaved chocolate evenly among nachos.
