Strawberry Muffins with Cream Cheese Spread image

What could be better than starting the day with a sweet, fluffy muffin loaded with fresh, juicy strawberries and served with a strawberry cream cheese spread? Not much, I'd say!

½ (8 ounce) package cream cheese, softened
½ cup diced fresh strawberries
1 tablespoon honey
1 cup chopped fresh strawberries
1 tablespoon white sugar
2 cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
1 teaspoon salt
3 eggs, lightly beaten
½ cup milk
¼ cup vegetable oil
1 teaspoon grated orange zest

Steps:

  • Combine cream cheese, strawberries, and honey in a food processor; pulse until smooth. Transfer to an airtight container and refrigerate.
  • Preheat the oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray or line with paper muffin liners.
  • Mix strawberries and 1 tablespoon sugar in a bowl. Set aside for 10 minutes.
  • Stir flour, 3/4 cup sugar, baking powder, and salt together in a large bowl. Whisk eggs, milk, vegetable oil, and orange zest in a small bowl until well blended. Add the egg mixture to the flour mixture, stirring until just combined.
  • Drain strawberries and gently fold into the batter. Divide the batter equally among the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Serve warm or cooled with the strawberry cream cheese spread.

These muffins are super tender and moist and are perfect slathered with butter while still warm from the oven. Farm fresh strawberries are sweetened with local honey which leads to a wonderful summer muffin.

1/2 cup unsalted butter, melted
1/2 cup good quality honey*
2 teaspoons vanilla extract
1 cup whole milk
1/2 cup plain whole milk yogurt
2 large eggs
1 1/2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup fresh strawberries, diced
1/2 cup good quality strawberry jam (bonus if it's homemade!)
zest from 1 lemon

Steps:

  • Preheat the oven to 350ºF. Grease 18 muffin wells or line with paper liners.
  • In a large mixing bowl, whisk together the melted butter, honey, vanilla, milk, yogurt, and eggs until smooth. Whisk in the flour, whole wheat flour, baking powder, baking soda, and salt, and mix just until combined.
  • In a small bowl, stir together the diced strawberries, jam, and lemon zest. Gently fold the berries into the batter.
  • Divide the batter evenly among the prepared muffins tins. Transfer to the preheated oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the tins for 10 minutes before carefully removing and transferring to a cooling rack. Serve warm or at room temperature.

Number Of Ingredients 15

3 cups all-purpose flour
2 cups sugar
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups frozen sweetened strawberries, thawed, undrained
1 cup vegetable oil
3 eggs, beaten
1/4 to 1/2 teaspoon red food coloring, optional
1-1/2 cups chopped pecans, optional
CINNAMON-HONEY SPREAD:
1/2 cup butter, softened
1 cup confectioners' sugar
1/4 cup honey
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine flour, sugar, cinnamon, baking soda and salt. In another bowl, mix strawberries, oil, eggs and food coloring if desired; stir into dry ingredients just until moistened. Fold in pecans if desired. , Fill greased muffin cups three-fourths full. Bake at 375° for 15-18 minutes or until muffins test done., Meanwhile, combine spread ingredients in a small bowl; beat until blended. Serve with the muffins. Store spread in the refrigerator.

These wonderful strawberry corn muffins are moist and packed with the flavor of honey and the natural sweetness of fresh strawberries.

2 cups all-purpose
2 cups fine cornmeal
¼ cup granulated sugar
2 tablespoons baking powder
½ teaspoon salt
4 eggs (beaten)
2 cups milk
1 stick salted butter (melted)
4 tablespoon vegetable oil
⅔ cup honey
1½ cups diced fresh strawberries

Steps:

  • Pre-heat oven to 425 f/ 220c
  • Prepare a muffin pan with 12 muffin liners.
  • Dice 1 1/2 cups of fresh strawberries and set some aside to top the strawberries after adding the batter to the pan.
  • Mix dry ingredients in a large bowl and form a well into the middle of the mixture.
  • Mix egg, milk, melted butter, honey and oil in a large mixing bowl. Pour into the well of dry ingredients; mix well.
  • Fold in the strawberries.
  • Divide batter into the lined muffin pan, filling them 3/4 of the way. This makes a large muffin. (12 - 15 muffins).
  • Add the reserved strawberries to the top of the batter of each muffin.
  • Bake for 12-15 minutes, or until golden brown.

2 cups buttermilk baking mix
2 tablespoons white sugar
1 egg
1 teaspoon orange zest
⅔ cup orange juice
2 tablespoons white sugar
1 teaspoon ground cinnamon
½ cup margarine
½ cup honey

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 medium muffin cups.
  • Mix baking mix, 2 tablespoons sugar, the egg, orange peel, and orange juice. Beat vigorously for 30 seconds.
  • Fill muffin cups about 2/3 full. Mix 2 tablespoons sugar and cinnamon and sprinkle each muffin with about 1/2 teaspoon of sugar mixture. Bake 15 minutes. Serve with honey spread.
  • To Make Honey Spread: Beat 1/2 cup margarine and 1/2 cup honey until fluffy.
