2 packages (10 ounces each) frozen sweetened sliced strawberries, thawed, undrained
1 tablespoon plus 2 teaspoons cornstarch
1 can (14 ounces) sweetened condensed milk
2 tablespoons orange juice
1/8 teaspoon red food coloring, optional
2 cups heavy whipping cream, whipped

Steps:

  • Place strawberries in a food processor; process until pureed. In a small saucepan, combine cornstarch and strawberries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to a large bowl; refrigerate until chilled. , Set aside 1 cup strawberry mixture. Add condensed milk, orange juice and, if desired, food coloring to remaining mixture; stir until blended. Fold in whipped cream., Spoon 1/4 cup cream mixture into each of 12 parfait dishes or cocktail glasses. Layer each with 4 teaspoons of reserved strawberry mixture and 1/4 cup cream mixture. Refrigerate until serving.

This is such a pretty recipe. I just love parfaits and I adore this light and fluffy mousse one. Butter cookies are among my fave and I love the fact that they are used in this recipe. Easy recipe with little prep needed.

1 1/3 cups quartered strawberries
1 tablespoon sugar
1 teaspoon fresh lemon juice
3/4 teaspoon unflavored gelatin
1 1/2 tablespoons water
1/2 cup chilled heavy cream
3 butter cookies, crushed

Steps:

  • Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
  • Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
  • Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
  • Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
  • In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.

1/2 cup sugar
1/3 cup fresh lime juice
1 teaspoon freshly grated lime zest
2 large Land O Lakes® Eggs
1/2 teaspoon vanilla
1 cup Land O Lakes® Heavy Whipping Cream
21 Citrus Slice 'n Bake Cookies
3 cups sliced fresh strawberries

Steps:

  • Combine butter, sugar, lime juice and lime zest in 2-quart saucepan. Cook over medium heat, stirring occasionally, 2-4 minutes or until mixture just comes to a boil and butter is melted.
  • Beat eggs in bowl with whisk. Stir small amount of hot lime mixture into eggs. Whisk egg mixture into remaining hot lime mixture. Reduce heat to medium-low. Cook, stirring constantly, 4-6 minutes or until mixture reaches 160°F and is thick enough to coat back of metal spoon. Remove from heat. Stir in vanilla. Refrigerate about 2 hours or until completely cooled.
  • Beat whipping cream in bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir into cooled lime mixture.
  • Assemble parfaits by breaking cookies in half. Place 2 cookie halves each in bottom of 6 parfait or serving glasses. Top with about 3 heaping tablespoons lime mixture and about 2 heaping tablespoons strawberries. Repeat layers two more times. Garnish each with 1 cookie half, if desired.

12 1/2 ounces strawberries (3/4 pound)
1/2 cup granulated sugar
1 cup whole or whipping cream ((cold))
extra strawberries for topping

Steps:

  • Clean and slice the strawberries, In a blender or food processor add the sliced strawberries and the sugar and puree. Remove 1/2 a cup of puree and set aside.
  • In a cold bowl add the cream and beat until stiff peaks form. Then fold in the remaining puree (not the 1/2 cup) gently.
  • Divide the 1/2 cup of puree between the 4 small/medium** glasses and top with the strawberry mousse. Refrigerate for approximately 1 hour or even over night if desired. Top with fresh sliced strawberries and serve. Enjoy.
  • ** for size purposes, the glasses I used hold 1 cup of water.

This is one of my hubby's delicious and eye-pleasing creations. He used tall parfait glasses, filled them 1/3 full of sliced strawberries, filled the glass the rest of the way with the strawberry mousse and then garnished it with a fresh, whole strawberry and sprig of mint. I should have taken a picture! DH used strawberries, but I look forward to trying it with other fruits such as mango, raspberries/blackberries (seived to remove the seeds) and peaches. Yum!

2 cups strawberries, fresh, hulled and sliced
1/4 cup sugar
1 (8 ounce) container Cool Whip, thawed
strawberry, whole (optional for garnish)
mint, fresh (optional for garnish)

Steps:

  • Place 2 cups of sliced strawberries in a medium bowl. Stir in sugar and allow to macerate at room temperature for 15-20 minutes.
  • Take 1 cup of the strawberry mixture and puree in a blender. Then add cool whip and blend until thoroughly combined, smooth and creamy.
  • Spoon the reserved strawberry mixture (including juice) evenly into the bottom of four tall parfait glasses. Then fill each parfait glass to the top with the "mousse".
  • If desired, garnish with a whole strawberry and sprig of fresh mint.
  • Refrigerate until ready to serve.

Easy, no-bake strawberry mousse parfaits with strawberry jell-o topping, plus chocolate covered strawberries!

2 cups whipping cream
1/3 cup white granulated sugar
8 ounces cream cheese or mascarpone (softened at room temperature)
1/2 cup white chocolate chips (melted)
1/2 cup sweetened condensed milk
1 teaspoon strawberry extract
red food coloring
2 cups strawberries
1 tablespoon unflavored gelatine
2 to 3 tablespoons water
2 cups chopped strawberries
6- ounce package strawberry Jello
1 cup boiling water
2 cups iced water
chocolate covered strawberries (for garnish)

Steps:

  • Prepare the whipped cream first. Pour the whipping cream into a mixer bowl and add the 1/3 cup sugar. Whisk on high speed until a fluffy whipped cream forms. Set the whipped cream into the refrigerator until needed.
  • Prepare the strawberry base. In a large bowl, whisk together the softened cream cheese, melted white chocolate, sweetened condensed milk, and extract. Add red food coloring if desired. Whisk in the pureed strawberries; set aside.
  • In a small bowl, mix together the unflavored gelatine and water. Microwave the mixture for 1 minute, stirring every 10-15 seconds until gelatine is completely dissolved. Pour the gelatine into the strawberry base and whisk until smooth.
  • Remove the whipped cream from refrigerator. Fold in about 1 cup of whipped cream into the strawberry base. Then begin adding the strawberry base into the whipped cream. Fold the base and cream together very gently, keeping the cream light and fluffy.
  • Pour the prepared mousse into glass mugs or containers. Fill about three-quarters of each container. Top off each glass with chopped strawberries. Set the mousse into the refrigerator to set for about 1 to 1 1/2 hours. Make sure the mousse is set before adding Jello!
  • Prepare the strawberry Jello. Place the flavored gelatine in a bowl and add 1 cup boiling water; stir until dissolved. Add the 2 cups iced water and stir until mixture is cooled. Using a ladle, carefully pour the prepared Jello over the set mousse. Fill to the top of each container. Set the dessert back into the refrigerator until completely set, overnight for best results.
  • Optional: top each dessert parfait with a chocolate covered strawberries, or a combination of chopped strawberries and other berries, such as raspberries. Keep refrigerated!

  • Place a metal mixing bowl and the beaters in the freezer. Make sure they chill for 30-60 minutes before whipping the cream. Add the cream container to the freezer in the last 5 minutes of this process so the cream is very cold also.
  • Place the strawberries, lemon juice, and the 1/4 C sugar in a blender. Blend for a minute on high until combined and a thick puree results. Set aside.
  • Once everything is chilled for the whipped cream, add the cold cream, powdered sugar, and vanilla to the cold mixing bowl. Using an electric hand-mixer, beat on low for about a minute and then progressively add more speed until you are at a medium-high speed and nothing is splattering out. It takes about 5 minutes total to get the cream whipped into soft peaks as seen above in the photos.
