1 teaspoon kosher salt (3 grams)
¾ teaspoon baking powder (3 grams)
¼ teaspoon baking soda
¾ cup unsalted butter (170 grams, room temperature (1½ sticks))
1 cup granulated sugar (200 grams)
3 large eggs (150 grams, room temperature)
⅔ cup milk (151 grams, room temperature)
⅓ cup strawberry jam (113 grams)
1 teaspoon pure vanilla extract (4 grams)
1 cup chopped strawberries (167 grams)
4 ounces cream cheese (113 grams (½ brick))
¼ cup unsalted butter (57 grams, room temperature (½ stick))
½ cup powdered sugar (57 grams)
1 teaspoon pure vanilla extract (4 grams)

Steps:

  • Preheat oven to 350°F. Prep a 9x5-inch loaf pan by spraying it with baking spray. Set aside.
  • In a small mixing bowl, combine the flour, salt, baking powder, and baking soda. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, and eggs together on medium-high until smooth, about 1 minute. Add in the milk, jam, and vanilla, and mix again.
  • Add the dry ingredients into the wet ingredients. Whisk together until all of the flour is incorporated. Fold in the strawberries.
  • Spread the batter into the prepared loaf pan and place into the preheated oven. Bake for 80-90 minutes, or until a toothpick inserted comes out clean or with moist crumbs. If your bread begins to brown too quickly, tent a piece of tinfoil over the top to prevent darkening. Once baked, remove from the oven and let cool.
  • Make the cream cheese frosting by combining all the frosting ingredients in the bowl of stand mixer fitted with a paddle or whisk attachment. Beat on medium-high speed for 3 minutes or until a smooth cream cheese frosting has formed. Spread on the top of the cooled pound cake and top with strawberries. Slice and serve immediately.

3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
dash of salt
4 Tablespoons unsalted butter- melted
1/2 cup sugar
1 large egg
6 tablespoons milk
1/8 cup plain Greek yogurt
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup powdered sugar
8 oz. cream cheese-softened
1 and 1/2 teaspoon vanilla
2 Tablespoons cold water
1 and 1/2 teaspoon gelatin
1 lb. fresh strawberries- hulled and sliced in half
1 (6 oz.) package strawberry jello
2 cups boiling water

Steps:

  • Preheat oven to 350 F, line 9 or 9 1/2 inch round cake pan with parchment paper, grease with cooking spray, set aside.
  • In a bowl combine flour, baking powder, baking soda and salt, set aside.
  • Melt the butter in a small sauce pan over low heat and set aside to cool.
  • Transfer melted butter to a large bowl and using electric mixer on a low speed mix in sugar (it will be grainy), then mix in egg, milk, yogurt and vanilla.
  • Slowly add dry ingredients into egg mixture and mix on low speed until combined spread the batter into prepared pan and bake 18-20 minutes (until the toothpick inserted in the center comes out clean). Let it cool in the pan for 10 minutes then transfer to a rack to cool completely, then transfer cooled cake onto serving plate. And place the ring from 9 or 9 1/2 x 3 inch springform pan around the cake.
  • Dissolve 1 1/2 tsp. gelatin in 2 Tbsp. cold water and let it set for a few minutes, then microwave or place into a hot water bath to dissolve completely, set aside to cool.
  • Beat cream cheese until light and fluffy.
  • Beat heavy whipping cream until soft peaks form, gradually add powdered sugar and continue beating until stiff peaks form. Mix in vanilla and dissolved gelatin, than add cream cheese and mix to combine. Spread onto cooled cake and place in the fridge for 30 minutes.
  • Prepare Jello with 2 cups boiling water and set aside to cool to room temperature.
  • Wash, hull and halve the strawberries lengthwise, then line around the edges of the cheesecake layer. Line up the next row by stacking slightly on top of the strawberries in the first row, and continue to cover the whole cheesecake layer.
  • Pour the room temperature Jell-O over strawberries(the cheese cream will melt if the jelly liquid is too warm).
  • Refrigerate until jello is set than run a thin knife around the cake and release the springform pan ring and serve.

1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
1 cup vegetable oil
4 large eggs
¾ cup mashed fresh strawberries
3 tablespoons all-purpose flour
½ (16 ounce) package powdered sugar
¾ stick unsalted butter, melted
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 8-inch cake pans.
  • Combine cake mix, gelatin mix, oil, eggs, strawberries, and flour in a large mixing bowl. Pour equal amounts into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes. Remove from the oven and allow to cool completely, about 30 minutes.
  • While cakes are cooling, mix powdered sugar, butter, and vanilla extract together in a bowl by hand. Chill for about 20 minutes.
  • Whip chilled frosting until fluffy. Sandwich cake layers together with some frosting. Spread remaining frosting over the top and sides.

1 (18 1/4 ounce) box yellow cake mix
2 (1/3 ounce) boxes strawberry Jell-O gelatin dessert (small boxes)
1 cup hot water
1 (3 1/2 ounce) box instant vanilla pudding (small box)
1 (12 ounce) can strawberry soda (soda)
1 (8 ounce) container whipped topping (such as cool whip)

Steps:

  • Preheat oven to 350 degrees.
  • Bake cake according to directions on the box.
  • When done poke holes in it and slowly pour strawberry pop over it.
  • Combine jello and 1 cup hot water until dissolved; slowly pour over cake.
  • Let cake cool completely and soak up all the liquid.
  • Meanwhile prepare topping.
  • Make box of instant pudding according to directions on box.
  • Fold in cool whip.
  • When cake is completely cooled top with pudding topping.
  • Enjoy!

This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.
