Steps:
- Mix the gin with the strawberries and caster sugar in a large bowl and pour into a 1.5-litre sterilised Kilner jar.
- Store in the fridge and stir every two days for three weeks. Strain though coffee filters or muslin cloth to serve.

EASY RHUBARB GIN
Easy Rhubarb Gin with Strawberries

Steps:
- Wash rhubarb and chop into ½" sections. Add to a large sterilized jar.
- Chop strawberries in half and add to the jar.
- Cover the fruit with gin then seal the jar. Place in a dark location for two weeks. Shake the jar every few days.
- After two weeks, use a large soup bag to strain the fruit out of the alcohol.
- Squeeze the bag to extract all of the alcohol from the fruit.
- Save the strained fruit for blending into mixed drinks.
- Funnel the strained alcohol into another jar or bottle.

STRAWBERRY-INFUSED GIN
This strawberry-infused gin can be used for cocktails in place of regular gin.

Steps:
- Remove the leaves and stem of each strawberry, then use a paring knife to cut out the core.
- Slice the strawberries. The slices can be thick and still work. 3-5 slices per strawberry will do.
- Place the strawberries in a quart-size Ball jar or other receptacle and cover with gin. (If you are considering adding juniper berries, see note.) Store in refrigerator for 5-7 days.
- After 5-7 days, drain gin into a second container and discard strawberries. You can get a little extra gin out of the strawberries by mashing them slightly with a wooden spoon, waiting a few minutes, then draining again.
