Steps:
- Mash 1 pt of the strawberries, using a fork, and set aside.
- Combine the sugar and cornstarch in a 3 quart sauce pan.
- Stir in the water and mashed berries.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil, then cook 2 minutes longer.
- Remove from the heat and stir in the food coloring.
- Cool to room temperature.
- Fold in the remaining 2 pts of strawberries and turn into the baked pie shell.
- Chill in the refrigerator at least 2 hours.
- To serve, top with puffs of
- sweetened whipped cream

STRAWBERRY PIE II
This is my favorite pie. It is very easy to make. I got the recipe many years ago in North Jersey. It is from the Sussex County Strawberry Farms.

- Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
- In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , Mash 1 cup strawberries; set aside. - Thaw the Marie Callender pie crust 10 minutes before baking and use a fork to poke holes on the crust.
- Preheat oven 400F and bake it for 12-15 minutes until is golden brown. Then, let it cool down.
- Wash and soak 2 pounds of fresh strawberries in a bowl for a few minutes.
- In the meanwhile, put a small pack (3 oz) strawberry jello powder, 1/2 cup of sugar (can use more or less depends on your sweetness), 2 tablespoons cornstarch and 1 cup of water into a pot mix them well. Then, turn on fire to small to medium. Keep stirring until it's bubbling.
- After that, let the glaze cool down.
- Drain and dry strawberries with a paper towel. After that, remove the leaves.
- Put and lay the fresh strawberries on the baked pie crust.
- Next, pour the glaze over the strawberries.

- Make dough:
- Remove the dough from the refrigerator. If necessary, allow it to sit for about 10 minutes or until it is soft enough to roll.
- Using a pastry cloth and sleeve rubbed with flour or two sheets of plastic wrap lightly sprinkled with flour, roll the dough 1/8 inch thick or less and large enough to cut a 13-inch circle. Use an expandable flan ring or a cardboard template and a sharp knife as a guide to cut out the circle. Transfer the dough to the pie pan. Fold under the excess and crimp the border using a fork or your fingers. Cover it loosely and refrigerate for a minimum of 1 hour and a maximum of 24 hours.
- Preheat the oven to 425°F at least 20 minutes before baking.
- Line the pastry shell with parchment, pleating it as necessary so it fits into the pan, and fill it with rice or dried beans. Bake for 20 minutes. Carefully lift out the rice or beans with the parchment. With a fork prick the bottom and sides and bake 5 to 10 minutes more or until the crust is a pale golden. Check after 3 minutes and prick any bubbles that may have formed.
- Cool the crust on a rack for 3 minutes, so it is no longer piping hot, then brush the bottom and sides with the egg white.
- Make the filling:
- In a 2-quart saucepan, mix together the sugar and cornstarch. Gradually stir in the cran/raspberry concentrate and water until smooth. Over medium heat, bring to a boil, stirring constantly. Boil for 1 minute. Remove the pan from the heat and cool completely.
- Gently fold in the strawberries and spoon the filling into the baked pastry shell. Refrigerate for 4 hours or until set.
- Store:
- Refrigerated up to 2 days.
- Note:
- If the fruit is very acidic, the glaze will only keep 1 day.
