Steps:
- In a blender, whirl strawberries and simple syrup to a purée. Strain into a serving pitcher.
- To the pitcher, add lemon juice, gin, and half the Champagne. Stir in the sliced strawberries (to help settle the foam before pouring the rest). Twist lemon peels over the cocktail to release their oils, then drop into the pitcher. Pour in remaining Champagne and stir. Add more ice to chill, and serve immediately.

- Chill cocktail shaker and glass (champagne flute or collins glass) in the freezer. Add ice to shaker. Pour gin, simple syrup, and lemon juice into shaker. Shake well. Fill chilled glass half full of ice, then strain cocktail into the glass. Top with champagne and garnish with a lemon slice.

FRENCH 75
The French 75 is a classic Champagne cocktail that came out of the Prohibition era. Traditionally, it's made with gin (or cognac), lemon juice, and champagne, but you can substitute any kind of spirit for the gin and it'll always work beautifully.

- Put simple syrup, lemon juice, and gin in a cocktail shaker. Add ice, seal, and shake. Cover with a Hawthorne strainer, then pour through a fine-mesh strainer into a Champagne flute. Top with sparkling wine. Rub a lemon twist around the rim of the glass, and add it to the drink as garnish.

- Combine the first 3 ingredients in a shaker with ice and shake vigorously. Strain into a cocktail glass or flute. Top with chilled Champagne. Garnish.
- Strawberry Syrup: 1 pint strawberries 1 pint water 1 pint sugar 4 cinnamon sticks 1 tsp vanilla extract
- Slice the tops off of the strawberries and cut them in half. Place them in a saucepan with the water and sugar, then slowly bring to a boil. Simmer for 10 minutes. Stir to dissolve sugar. Use a potato masher or muddler to smash strawberries and continue to stir. Add cinnamon sticks and vanilla. Let simmer another 10 minutes. Let cool to room temperature. Fine-strain into a bottle and keep in fridge up to 2 weeks.

- To make the strawberry simple syrup, in a small saucepan on medium heat, mix Just Jan’s® Organic Strawberry Spread (2 cup), Water (1 cup), and stir until the jam has a pourable consistency. Strain with a mesh strainer into a measuring cup set aside to cool. Reserve 1 ounce for the cocktail and save the rest for another cocktail.
- Pour the Gin (1 fluid ounce), Strawberry Simple Syrup, and Meyer Lemon Juice (1 fluid ounce) in a shaker and shake until well blended.
- Strain into a chilled champagne flute and top with Dry Sparkling Wine (to taste). Garnish with Lemon (to taste).
