Steps:
- Preheat oven 350˚F (180˚C).
- Slice each biscuit into 8 pieces and place in a greased baking dish.
- In a saucepan on medium heat, combine strawberry filling ingredients and cook until it reaches a boil. Reduce heat to a simmer and continue to cook until filling reaches a smooth consistency. Remove from heat and set aside.
- Combine egg mixture ingredients in a large bowl until well-incorporated.
- Place biscuits in a greased baking dish and spread the egg mixture evenly on top.
- Top with strawberry filling and the fresh quartered strawberries.
- Bake for 40-50 minutes, or until golden brown.
- Slice and serve with whipped cream.
- Enjoy!

- In a large mixing bowl add cream cheese, mascarpone, powdered sugar, and a pinch of salt. Whisk until smooth and creamy.
- Take approximately 2 tablespoons and spread inside each croissant.
- In a mixing bowl add eggs, half and half, sugar, and vanilla. Whisk until combined. Dip each filled croissant in the egg mixture. Place in a round buttered baking dish. Repeat until you have filled and dipped each croissant. It is okay to pile them on top of each other!
- Pour the remaining egg mixture over the croissants. Cover and refrigerate overnight! *If you don't have time, try to let it sit for at least 2 hours before baking!
- Preheat oven to 375 degrees F. Cover with aluminum foil and bake for 30 minutes. Remove foil and continue to bake for 15-20 minutes or until golden brown. Top with sliced strawberries. Dust with powdered sugar and serve warm with maple syrup.
STRAWBERRY FRENCH TOAST BAKE

- Rub a baking dish approx 8in x 4in (20cm x 10cm) with butter to lightly grease it.
- Chop bread into small chunks and put them in the dish. (You can also use bigger chunks, if you prefer.)
- Mix together the eggs, milk, cream, vanilla and cinnamon and pour over the bread. Toss any pieces that aren't covered in the custard so all can absorb some. Cover and refrigerate overnight. Alternatively, make it up shortly before baking - you may need to toss a little more to ensure all are covered, just take care not to break the bread up too much.
- When ready to bake, preheat oven to 400F/200C.
- Remove the top from the strawberries and cut into quarters. Tuck the slices in between the bread. Sprinkle the sugar over the top.
- Bake for around 25 minutes until it's lightly brown and crisp on the top and soft but cooked underneath.

- For the blackberry syrup: In a saucepan, combine the blackberries, sugar and 1/2 cup water. Bring to a gentle boil and cook for 5 minutes on low. Stir in the cornstarch, then continue cooking, using a whisk or spoon to mash the larger pieces of blackberries. Remove from the heat when it's nice and thick.
- For the croissant French toast: Split the croissants in half through the middle.
- In a bowl, whisk together the half-and-half, sugar, vanilla, cinnamon and eggs. Dunk each croissant half into the mixture so that it's fully coated. Set the pieces aside on a plate.
- Heat a large nonstick skillet over low heat, then melt a small amount of butter in it. Add as many croissant halves as will fit, cut-side down, then increase the heat very slightly (don't go above medium low). Allow the pieces to cook on the first side for 3 to 4 minutes. Move them around in the skillet a bit to make sure they don't burn. When they're deep golden brown on the bottom, flip them to the other side and let them cook for another 2 minutes or so. Remove from the pan and cook the rest of the croissant halves.
- Serve a top and bottom piece together with butter, warm blackberry syrup and maple syrup, strawberries and whipped cream.

- 1. Preheat the oven to 375° F. Grease a baking sheet with butter. 2. In a large shallow dish, whisk together the eggs, milk, 2 tablespoons St. Germain, 1 tablespoon vanilla, and the salt. 3. Grab the croissants and make a 1 inch slit at the top of each, move your knife to create space in the croissant, being careful not to poke through the other sides (see above photos). 4. In a bowl, gently stir together the cream cheese and strawberry jam, leaving streaks of red and white. Spoon the mix into a ziplock bag and snip the corner off the bag. Squeeze approximately 2 tablespoons of the strawberry cream into each croissant where you created your hole. Don't stress about making it perfect. Dip each croissant into the egg mixture, allow it to sit 1 minute per side. Arrange half the croissants on the prepared baking sheet. 5. Brush each croissant with a little leftover egg batter. Bake for 20-25 minutes or until the croissant is golden. 6. Melt together the butter, brown sugar, and 2 tablespoons maple syrup. Spoon the butter evenly over each croissant. Bake another 10 minutes, until the croissants are caramelized on top and crisp.7. Toss the berries with 1 tablespoon St. Germain, 1 teaspoon vanilla, and 1 tablespoon maple. STRAWBERRY CRESCENT FRENCH TOAST
I created this recipe as an experiment that turned into a family favorite. Wonderful served with Sunday breakfast or brunch. Also delicious with raspberries instead of strawberries. Sure to delight the senses! This recipe also works as a low sugar/carb recipe! Just substitute sugar free jam, Splenda and Sugar free maple syrup for the sugary sweet ingredients in this recipe (I do this for my diabetic husband all the time) - you'll be surprised how wonderful it tastes.

- Line a cookie sheet with parchment paper. Preheat oven to 375 degrees.
- Open the can of crescent rolls. Unroll each crescent roll onto a cutting board or clean counter. There should be 8 crescent rolls in the package.
- Place approximately 1 teaspoon of strawberry preserves onto the short flat end of the crescents, which are triangular shaped. Use a spoon or spatula to spread the preserves down the length of the crescent dough. It does not have to be spread perfectly.
- Starting with the flat side of the triangle, roll the dough towards the long pointy end until it is rolled into a crescent shape. The preserves should be inside the crescent. If any preserves leak out, you can dab it away with a napkin or a spoon. Roll up all 8 crescents.
- Place the crescents onto the lined baking sheet. There should be about an inch of space between each crescent.
- Place the crescents into the oven and bake for 11 to 13 minutes, or until the tops of the crescents are golden brown.
- Let the crescents cool. Meanwhile, crack the 2 eggs inside of a medium mixing bowl. Throw away the shells. Whisk in the sugar and cinnamon until well mixed.
- Spray a large frying pan with cooking spray. Heat the pan on a stove top at the medium or medium low setting.
- Use tongs to dip the crescents into the egg mixture. Coat the cresents and then place them into the large frying pan. Cook each side of the crescents for 3 to 4 minutes or until the egg coating is cooked. You may need to adjust the temperature if the egg coating is taking to long to cook.
- Place the crescents onto 4 plates, if serving four people. Place 3 or 4 fresh clean strawberries on each plate, if desired. Drizzle maple syrup over the crescents. Add a spoonful of preserves next to the cresents, for dipping.
- Sprinkle powdered sugar, as much as you like, over the crescents. Serve hot and enjoy!

Had this at brunch in upstate New York and fell in love from first bite. I had never heard of it before nor seen a recipe, so had to try and record myself! Since croissants are naturally buttery, there is less need for butter or syrup as you would traditional French toast. Tastes especially great with either apricot pineapple jam or strawberries as shown.

- In a medium bowl beat cream cheese, 1/4 cup maple syrup and granulated sugar with an electric mixer on medium speed until well combined. Stir in the 1/2 cup chopped strawberries. With a serrated knife, carefully cut each croissant in half horizontally, cutting to but not through other side, starting at the open end of the croissant. Spoon cream cheese filling into each croissant.
