This delicious, attractive, and (most importantly) super-easy puff pastry recipe can easily be made low-fat by using fat-free whipped topping and skim milk. This recipe should be enjoyed the same day for best results. Enjoy!

1 (3.5 ounce) package instant vanilla pudding and pie filling
1 cup cold 2% milk
1 ½ cups non-dairy whipped topping, thawed
½ (17.25 ounce) package frozen puff pastry, thawed
1 pint fresh strawberries, thinly sliced
¼ cup confectioners' sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Combine pudding mix and cold milk; fold in whipped topping. Refrigerate until ready to use.
  • Unfold pastry on a cool, lightly floured surface. Cut into 3 strips along fold marks, then cut each strip into four equal pieces. Place 2 inches apart on a baking sheet.
  • Bake for 15 minutes in the preheated oven, or until golden brown. Remove from baking sheet, and cool.
  • Split pastries into 2 layers, setting the 8 best looking tops aside. Spread 8 bottom layers with dollops of the pudding mixture. Top each with a layer of strawberries, a small amount of pudding, and another pastry layer. (A small amount of the pudding mix on top of the berries will help keep the layers together.) Spread with remaining pudding mixture and strawberries, and top with remaining pastry layers (the best looking ones). Sprinkle with confectioner's sugar.

Lots of people think cream puffs are difficult to make-but I've never had these fail me! By now, I can't remember whether I came across this recipe somewhere or made it up myself. I began cooking quite young, and strawberry Cream Puffs were always a favorite of my younger sister. She lives in California now...I make them whenever she visits! My husband's diversified farmer with an emphasis on farrow-to-finish hogs. We have three children (5 years, 3 years and 6 months).

1 cup water
1/2 cup butter, cubed
1 teaspoon sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
CREAM FILLING:
2 pints fresh strawberries, sliced
1/2 cup sugar, divided
2 cups heavy whipping cream
Confectioners' sugar
Additional sliced strawberries
Mint leaves

Steps:

  • In a large saucepan, bring water, butter, sugar and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat and beat in eggs, one at a time. Continue beating until mixture is smooth and shiny. , Drop by tablespoonfuls 2-in. apart on a large ungreased baking sheet (make 10). Bake at 400° for about 35 minutes or until golden brown. Cool on a wire rack. , For filling, combine berries and 1/4 cup sugar. Chill 30 minutes. , Beat cream and remaining sugar until stiff. Just before serving, cut tops off puffs. Combine berries and cream mixture. Fill cream puffs and replace tops. Sprinkle with confectioners' sugar, and serve with additional berries and mint leaves.

A wonderful summertime dessert! Light, cool, fresh, and creamy, these strawberry cream puffs are simply beautiful. The tartness of the strawberries with the sweet cream and the soft pastry puff is heavenly. Guests will be super impressed when they taste this delicious dessert.

2/3 c water
1/3 c butter
2/3 c all-purpose flour
1/8 tsp salt
3 eggs
CREAM PUFF FILLING
3/4 c whipping cream
1/3 c confectioners' sugar
3 c fresh strawberries, sliced

Steps:

  • 1. PUFF PASTRY: Combine water and butter in medium saucepan; bring to a boil.
  • 2. Add flour and salt all at once, stirring vigorously over medium-high heat until mixture leaves sides of pan and forms a smooth ball. Remove from heat, and cool 4-5 minutes.
  • 3. Add eggs, one at a time, beating thoroughly with a wooden spoon after each addition.
  • 4. Then beat till dough is smooth.
  • 5. Drop Pastry dough into 8 equal mounds and bake at 400 degrees for 30-35 minutes or till golden brown and puffed.
  • 6. Cool away from drafts.
  • 7. Cut top off puffs; pull out and discard soft dough inside.
  • 8. FILLING AND ASSEMBLY: Beat whipping cream till foamy; gradually add confectioners' sugar, beating till soft peaks form.
  • 9. Fold 3/4 of sliced strawberries into whipped cream.
  • 10. Fill each cream puff with strawberry mixture.
  • 11. Arrange remaining sliced strawberries on top of each puff. Replace tops of pastry puffs. Garnish with mint leaves, if desired.

1/4 cup all-purpose flour

1-1 1/2 cup sliced strawberries

Steps:

  • Preheat oven to 400.
  • On parchment lined baking sheet cut your puff pastry in half down the middle, then slice up the sides leaving about 1/2 in rim, be careful not to cut all the way through.
  • In bowl mix together your cream cheese, powdered sugar and vanilla.
  • Spread your cream cheese mixture over the top of your puff pastry, inside your cut lines.
  • Beat your egg and brush it on the sides of the puff pastry.
  • Place your slices of strawberry on top of your cream cheese in rows of about 3.

These quick and easy turnovers are made with puff pastry and stuffed with strawberries and cream cheese. These Strawberry Cream Cheese Turnovers make a perfect breakfast or dessert!

1 (17.3 ounce) package puff pastry (thawed according to packing directions (2 sheets))
1 and 1/2 cups chopped strawberries
2 tablespoons (25 grams) granulated sugar
1 tablespoon (8 grams) cornstarch
4 ounces (57 grams) cream cheese ((softened))
1/4 cup (30 grams) powdered sugar
1/2 teaspoon vanilla extract
1 large egg white ((lightly beaten))
1 cup (120 grams) powdered sugar
2 tablespoons (30 ml) milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400°F. Line two large baking sheets with parchment paper and set aside.
  • Unroll both pieces of the thawed puff pastry and cut each one into four squares (you will have 8 square pieces total). Set aside.
  • In a medium sized mixing bowl, mix together the chopped strawberries, sugar, and cornstarch until well combined. Set aside.
  • In a separate mixing bowl, using an electric mixer, beat the cream cheese until smooth. Add in the powdered sugar and vanilla extract and mix until fully combined.
  • Evenly distribute the strawberry mixture and cream cheese mixture between each piece of puff pastry, making sure to spoon the mixture closer towards one corner.
  • Gently fold the other corner over, making sure to keep the mixture inside, and then crimp with a fork to seal. Brush each turnover with the egg white.
  • Bake at 400°F for 17-20 minutes or until lightly golden brown.
  • Remove from the oven and set aside to cool for about 10 minutes.
  • Add the powdered sugar, milk, and vanilla extract to a small mixing bowl and mix until everything is well combined. If needed, add more milk to thin out the glaze or add more powdered sugar to thicken it up a bit.
  • Evenly distribute the glaze between all of the turnovers.

1 box Pepperidge Farm Puff Pastry Cups (24 cups)
powdered sugar (for sprinkling on baked pastry)
1/2 cup strawberry puree (made from about 1 cup fresh or frozen whole strawberries)
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
8 oz cream cheese (1 block)
1/3 cup powdered sugar
1/2 teaspoon vanilla extract
4-5 fresh strawberries (for garnish)

Steps:

  • Bake pastry cups according to directions on box (check after 15 minutes of baking).
  • Once baked, cool pastries and use a small knife to remove the centers of the cups.
  • If desired, sprinkle pastry cup with powdered sugar.
  • In a food processor, or blender, chop/blend fresh or frozen (and slightly thawed) strawberries. Process until the berries are chopped, juicy, and no piece is larger than a pea.
  • In the bowl of an electric mixer (or with a hand mixer), whip heavy cream until it begins to thicken. Add powdered sugar, and continue to whip until thick and holds stiff peaks. Move whipped cream to a separate bowl (if using bowl of electric mixer).
  • In the bowl of an electric mixer (or with a hand mixer), beat cream cheese until smooth. Add powdered sugar, and continue to beat. Add vanilla, then add strawberry puree, a little at a time. Continue mixing, and beat until fully incorporated.
  • Fold cheesecake mixture into the whipped cream, and stir gently until fully combined. Taste to check for sweetness. If needed, add an additional tablespoon or so of powdered sugar, and fold in gently.
  • Add prepared filling to a large ziplock bag, and cut off about 1/2 inch from one corner. Use this to squeeze the filling into the baked pastry cups.
  • Top with a few pieces of finely chopped strawberry.
  • Serve immediately, or keep in the fridge up to 1 hour.
