Strawberry Mousse Sugar Cookie Cups image

4 oz cream cheese, room temp
1 cup Cool Whip, thawed
1 cup powdered sugar
2/3 cup chopped strawberries, plus more for garnish *optional
1/3 cup white chocolate chips
1 (16.5 oz) tube sugar cookie dough

Steps:

  • With your electric mixer beat the cream cheese and powdered sugar together until smooth, about 30 seconds. Carefully stir in your Cool Whip. When combined fold in your chopped strawberries.
  • Place bowl in refrigerator to chill for 2 hours.
  • Meanwhile, preheat oven to 350 ° and spray mini muffin pan with cooking spray. Place 1 1/2 teaspoons of cookie dough into each muffin tin.
  • Bake for 8 minutes until they are just starting to golden.
  • Remove from oven and immediately sprinkle 4-5 white chocolate chips in each cup. The heat from the cookies will melt them. As soon as the chips are soft spread carefully in the bottom of the cookie cup.
  • Release the cookies from the muffin tin by loosening with a knife. Let cool on a wire rack until ready to fill.
  • When ready to fill the cups, use either a spoon or a piping bag (or ziplock) and fill each with about one teaspoon of mousse.
  • Garnish with a strawberry slice, if desired.

1 cup butter, softened
1-1/2 cups confectioners' sugar
1 large egg, room temperature
1-1/2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 ounces strawberry gelatin
1 teaspoon baking soda
1 teaspoon cream of tartar
FILLING:
1 package (8 ounces) cream cheese, softened
1-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 375°. In a large bowl, beat butter and confectioners' sugar until blended. Beat in egg and vanilla. In another bowl, whisk flour, gelatin, baking soda and cream of tartar; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap and refrigerate until firm enough to roll, about 30 minutes., On a lightly floured surface, roll 1 portion of dough to 1/8-in. thickness. Cut with a floured 2-3/4-in. flower-shaped cookie cutter. Press cutouts onto bottom and up the sides of ungreased mini-muffin cups., Bake until edges are brown, 6-8 minutes. With the end of a wooden spoon handle, reshape the puffed cookie cups. Cool 5 minutes. Remove from pans to wire racks to cool completely., In a small bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar. Pipe into cookie cups. Store in an airtight container in the refrigerator. Freeze option: Transfer wrapped disks to a freezer container; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare filling and cookies. Bake and decorate as directed.

3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
Seedless strawberry jam

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and vanilla. Add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Shape dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each ball; fill with about 1/4 teaspoon jam. Bake at 350° for 10-12 minutes or until set. 1 package (16 oz) refrigerated Pillsbury™ Ready to Bake!™ Chocolate Chip Cookie Dough (24 Count)
1 box (4-serving size) strawberry-flavored gelatin
1 container (8 oz) frozen whipped topping, thawed
1/2 cup melted chocolate chips or chocolate topping
Red sugar and/or small red candies, if desired

Steps:

  • Heat oven to 350°F. Spray 24 mini muffin cups with cooking spray. In each muffin cup, place 1 piece of cookie dough from 1 package Pillsbury™ Ready to Bake!™ refrigerated chocolate chip cookies.
  • Bake 10 to 12 minutes or until golden brown. Remove cookies from oven. Gently press small 1/2 measuring teaspoon or tiny spoon into center of each baked cookie to make shape of cup. Cool in pan 10 minutes.
  • Remove cookie cups from muffin cups; place on cooling rack. Cool completely.
  • Meanwhile, add 1 box (4-serving size) strawberry-flavored gelatin to 1 container (8 oz) frozen whipped topping, thawed; stir until well combined. This cobbler took Chef Vivian Howard years to perfect-but it was time well spent. Ripe, macerated strawberries are topped with a sugar cookie crust that's enriched with cornmeal for extra crunch. (The strawberries can be easily swapped for peaches, blueberries, or apples!)

2 pounds strawberries, stems removed, may substitute blueberries, peaches, apples, or cranberries
1 pinch kosher salt
3/4 cup granulated sugar
2 lemons
1 cup all-purpose flour
1 cup cornmeal
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1 cup unsalted butter (2 sticks), cubed, plus more to butter the baking dish
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
Vanilla ice cream (optional)

Steps:

  • Strawberry Filling: To macerate the strawberries (a technique to release a fruit's juices by mixing with sugar and resting), take half the strawberries and roughly slice them. Combine with remaining whole strawberries in a large mixing bowl. Add salt, sugar, and the zest and juice of two lemons. Stir to combine and set aside, at least 2 hours and up to overnight.
  • Fit a strainer over a saucepan. Pour the strawberry liquid through the strainer and into the saucepan, reserving the strawberries. Over medium heat, bring liquid to a simmer. Continue simmering, stirring often, until liquid is reduced to a thin syrup that coats the back of a spoon, 5-10 minutes. Let rest while making crust. (Note: Syrup will continue to thicken as it cools.)
  • Sugar-Cookie Crust: In a mixing bowl, stir together flour, cornmeal, salt, and baking powder. Set aside. In the bowl of a stand mixer, cream the butter and sugar on medium speed, 30 seconds. Turn off mixer, lift paddle, and scrape down the sides of the bowl. Increase speed to high and continue creaming the butter-sugar mixture until it's pale and fluffy, 2 more minutes. Turn mixer to low and slowly add dry ingredients, turning the mixer off to scrape the sides of the bowl halfway through. Crack the egg into a small bowl, to make sure no shell gets into the mixture; then add vanilla and egg to the mixer. Mix on medium speed until just combined. Chill 30 minutes. (Note: Crust can be made several days in advance, wrapped in plastic and chilled; bring to room temperature before using.)
  • Preheat oven to 350 degrees F. Butter a baking dish. Spread strawberries in the dish in an even layer, then pour in syrup. Spread the crust over the strawberries in an even layer. Bake for 1 hour, or until crust is golden and fruit is bubbling. (Note: Depending on the size and shape of the baking dish, there might be leftover dough. For every 1½ inch of filling, there should be a ½-inch of topping. Use extra dough for a mini-cobbler or bake into sugar cookies.)
  • Remove cobbler from oven. The crust will look like a cookie, with the filling bubbling up through the craggy cracks. Serve warm with a scoop of vanilla ice cream, if desired.

I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

1 cup butter, softened
1 egg
3 tablespoons strawberry puree
2 ¾ cups all-purpose flour
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon salt
½ cup white sugar
1 teaspoon red colored sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat 1 1/2 cups white sugar and butter together in a bowl with an electric mixer until creamy, about 3 minutes. Beat egg into butter mixture. Add strawberry puree.
  • Stir flour, vanilla extract, baking powder, and salt into strawberry mixture with a spoon until flour is completely incorporated into dough.
  • Stir 1/2 cup white sugar and red sugar together in a shallow bowl.
  • Roll dough into walnut-sized balls, roll each ball in red sugar mixture, and place each ball 1 1/2 inches apart onto prepared baking sheets. Lightly press each dough ball down to flatten.
  • Bake cookies in the preheated oven until lightly browned, 10 to 15 minutes. Cool.
