1 lb. farfalle
1/4 c. balsamic vinegar
1/2 c. Feta, crumbled
2 c. strawberries, quartered
1/2 c. baby spinach
kosher salt
Freshly ground black pepper
1/4 c. almond slivers, toasted, for garnish

Steps:

  • In a large pot of salted boiling water, cook farfalle according to package directions until al dente. Drain, then transfer to a large serving bowl.
  • Make balsamic glaze: In a small saucepan, bring balsamic vinegar to a boil. Reduce heat and simmer until thickened, about 10 minutes.
  • To bowl, add feta, strawberries and spinach. Season generously with salt and pepper and toss to combine.
  • Drizzle with balsamic glaze and garnish with almonds.

1/2 cup honey
1/2 cup red wine vinegar
4 teaspoons soy sauce
1 garlic clove, minced
1/2 teaspoon ground ginger
1/4 teaspoon salt
Dash pepper
SALAD:
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 teaspoon butter
8 cups torn mixed salad greens
1 pint fresh strawberries, sliced
1/4 cup chopped walnuts
Additional whole strawberries, optional

Steps:

  • In a small bowl, combine the dressing ingredients. In a large skillet, cook and stir chicken in oil and butter until no longer pink. Add 1/2 cup salad dressing; cook 1 minute longer. , Place the salad greens in a serving bowl. Top with chicken, sliced strawberries and walnuts. Garnish with whole strawberries if desired. Serving immediately with remaining dressing.

Inspired by a blackberry chicken recipe and at the request of my roommate, this was an experiment that turned out FANTASTIC! Great if paired with a glass of Riesling or your other favorite white wine!

3 skinless, boneless chicken breast halves
2 tablespoons white wine
1 tablespoon crushed dried rosemary
1 tablespoon vegetable oil
½ cup chopped fresh strawberries
½ cup strawberry yogurt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon lemon juice
salt and ground black pepper to taste

Steps:

  • Place the chicken breasts into a shallow bowl, and drizzle with white wine; sprinkle with rosemary. Refrigerate for at least 1 hour.
  • Heat the vegetable oil in a skillet over medium-high heat, and remove the chicken from the marinade, shaking off excess marinade. Retain the marinade. Place the chicken breasts into the hot oil, and brown on both sides, about 5 minutes per side. Set the chicken breasts aside.
  • Place the strawberries and strawberry yogurt in a blender, and pulse several times to puree. Pour the strawberry mixture into the skillet and stir in the marinade, cinnamon, nutmeg, and lemon juice. Bring to a boil, scraping up and dissolving any brown flavor bits from the bottom of the skillet. Lay the chicken breasts into the strawberry sauce, cover, and simmer over medium-low heat until the chicken is no longer pink inside, about 20 minutes. An instant-read thermometer, inserted into the thickest part of a breast, should read 160 degrees F (70 degrees C). Stir occasionally while simmering.

1 tablespoon sugar
1 tablespoon balsamic vinegar
1/2 teaspoon salt, divided

ASSEMBLY:
1 package (10 ounces) hearts of romaine salad mix
1 cup cooked gemelli or spiral pasta
1 small red onion, halved and thinly sliced

1/2 cup glazed pecans

1 ½ cup Chopped Strawberries
1 cup Cherry or Grape Tomatoes, (halved)
2 cups Mixed Salad Greens ((arugula, baby spinach, lettuce etc.))
1 Red Bell Pepper, (chopped)
½ Red Onion, (halved and thinly sliced)
½ cup Feta Cheese Cubes ((Greek Feta is more flavorful, tangy))
¼ cup Chopped Almonds
2 Tablespoons Olive Oil
2 Tablespoons Balsamic Vinegar
1 Tablespoon Honey
¼ teaspoon Black Pepper, (freshly ground)
¼ teaspoon Salt

Steps:

  • In a large bowl, mix together all the ingredients to make the pasta salad.
  • In a small bowl, combine all the ingredients for the balsamic vinaigrette. Whisk well.
  • Pour the vinaigrette over the salad and gently toss to combine.
  • Adjust seasonings to taste and serve.

3 tbsp. Red Wine Vinegar
1 1/2 tbsp. Dijon Mustard
1 tbsp. Maple Syrup
1 tbsp. Chopped Fresh Dill Weed
1/2 tsp. Garlic Powder
1/2 tsp. Kosher Salt
1/4 tsp. Ground Black Pepper
1/4 cup Olive Oil
1 pound Boneless Skinless Chicken Breast
Kosher salt and pepper (to taste)
1 Head Romaine (roughly chopped)
1/2 Red Onion (chopped or sliced)
1 Avocado (halved, seeded, peeled and sliced)
1 1/2 cups Strawberries (quartered)
1/3 cup Shaved Parmesan Cheese
1 Tbsp Avocado Oil

Steps:

  • Mix all the dressing/marinade ingredients to a bowl and refrigerate until ready to use.
  • Season the chicken breast with some salt and pepper. Place it into a ziplock bag or an air-tight container and pour over 1/3 of the prepared marinade. Let it marinate in refrigerator at least an hour. Keep the remaining 2/3 of the dressing marinate in a separate container without touching the raw meat.
  • Meanwhile, roughly chop the lettuce and onion. Peel and slice avocado cut the strawberries into halves.
  • Next, brush the grill or a heavy-bottomed pan with avocado oil and heat over medium-high heat.
  • Carefully place the marinated chicken onto the preheated grill and grill until each side is nicely golden brown and marks appear, about 10-12 minutes or internal temperature reads 165 degrees F.
  • Once the chicken has finished cooking, remove from the grill and let sit for 5 minutes. Slice into 1-inch pieces.
  • For assembling, place the chopped lettuce and onion into a salad bowl. Add avocados and strawberries. Place the sliced chicken on top of the veggies.
  • Drizzle with the reserved dressing/marinade on top and garnish with shaved parmesan.
