STRAWBERRY CHEESECAKE BITES
Strawberries are stuffed with a cream cheese filling for a cute two-bite dessert. Can be prepared the night before, but not much earlier than that as the berries may become soggy.

Steps:
- Line a baking sheet with waxed paper.
- Beat together the cream cheese, confectioners' sugar, and vanilla extract in a bowl until smooth.
- Spoon the mixture into a piping bag fitted with a large round tip.
- With a sharp paring knife, cut a cone shape out of the top of each strawberry to leave a small hollow.
- Pipe about 1 tablespoon of the cream cheese filling into each strawberry, making sure that the filling overflows a bit out of the top of the strawberry.
- Place the graham cracker crumbs into a shallow bowl. Dip the filled side of the strawberry into the graham cracker crumbs, coating the exposed filling with crumbs.
- Melt the chocolate and canola oil in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each interval, until warm and smooth, 1 to 3 minutes (depending on your microwave).
- Dip the unfilled ends of the strawberries into the melted chocolate and place on the prepared baking sheet; refrigerate until set.

Steps:
- In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and preserves until smooth and creamy. Scrape down the bowl, then beat in the garlic powder, salt, and hot sauce, and then the cheddar cheese.
- Lay a large sheet of plastic wrap on the counter. Scrape the cheese mixture into the center in as circle-like of a mound as you can. It will not be a perfect ball at this point. Wrap the edges of the plastic around it to seal and encourage it to form a round ball. Place the wrapped cream cheese in a bowl and refrigerate for at least 1 hour or overnight.
- Toast the pecans: Preheat the oven to 350 degrees and spread the pecans onto an ungreased baking sheet. Bake for 7 to 9 minutes, stirring once or twice, until they are deeply toasted and fragrant. Watch very carefully toward the end of the baking time to ensure the pecans do not burn. Transfer to a cutting board and chop into small bits. Let cool completely to room temperature.
- When ready to serve, remove the cheese ball from the refrigerator. Place the chopped pecans on a plate. (I find it's easiest to use a plate with edges that curve up a little. A pie dish works well too.) Add the parsley and lightly mix with your fingers to combine. Unwrap the cheese ball and place it on the plate with the parsley and pecans, coating well. The cheese ball won't roll like a true ball. Gently lift and turn it, patting the pecans and parsley all over the outside. Carefully lift it onto a serving plate. Serve with crackers or baguette slices.

- Combine dry ingredients and stir until the coconut is coated well with the Jell-O and Nutralean. *if you prefer a less-sweet treat, only use half of the Jell-O package!
- Using a hand mixer or a whisk and some elbow grease, in a separate bowl combine the Greek yogurt and cream cheese until smooth. Don't stress too much if you can't get all of the lumps out, they'll mix in with the coconut!
- Form into balls and chill for best experience, but good luck waiting 30 minutes before you try one! ;)

- Crush the Golden Oreo cookies. I used a blender, but you can use a small food processor, or you can place the cookies in a sealed plastic bag and smash them with a meat mallet! I found that the blender worked best when I did half the cookies at a time, rather than trying to crush all 36 at once. Use a fork to stir the mixture up between blends to get the finest consistency.
- Crush the freeze dried strawberries. I used a blender to make fine crumbs but you could chop them into small pieces if you want larger pieces of them in your Oreo balls. Add the strawberries to the cookie mixture and mix well.
- Use a cookie scoop to measure out about 1.5 TBSP of the cookie mixture and roll each scoop into a ball. Place Oreo balls on a parchment or wax paper lined cookie sheet.

- Melt the butter in a skillet over medium heat. Then add your chopped pecans and sugar. Toast until they begin to darken slightly then remove from heat.
- In a sauce pan combine the sugar and balsamic vinegar. Place over medium heat and reduce to a syrup. Should take about 10 minutes Stir occasionally throughout the cooking process to prevent burning. Keep in mind the glaze will thicken slightly when cooled. Pour into a container with a lid for storage while still warm.
- using a hand or stand mixer, beat the cream cheese balsamic glaze and powdered sugar until smooth. Using a spatula, gently fold in the pecans, and blue cheese crumbles. Form your cheese into a ball, loaf or use an adjustable food ring as I did. Place it into the refrigerator to set for an hour.
