BUTTERMILK SALAD
A tangy pineapple and peach flavored gelatin salad. I didn't tell anyone it had buttermilk until they ate it. Everyone wanted the recipe!

- Place the pineapple in a medium saucepan, and bring to a boil. Stir in the gelatin mix until completely dissolved. Remove to a bowl, and chill until partially set, about 1 hour. Stir in buttermilk, and chill again until thickened. Fold in whipped topping, and refrigerate until firm, at least 4 hours.

- In a large bowl, whisk together the boiling water and Jell-O until dissolved. Refrigerate, uncovered, for 1 hour until thickened.
- Remove from fridge. Using a whisk or a mixer, whip the thickened Jell-O until creamy and very few lumps are left. (Some little chunks may remain...no worries!)
- Stir in the Cool Whip and buttermilk. Fold in the strawberries and marshmallows, saving a few to garnish the top.
- If desired, transfer to a prettier serving bowl since the mixing bowl will get pretty messy! Cover and keep in the fridge for up to two days.

- Dump the crushed pineapple with its juice in a medium saucepan.
- Add in the strawberry Jell-O and stir together.
- Bring to a boil over medium-high heat.
- Remove pan from the heat and set it aside to cool.
- When the pineapple and Jell-O mixture has cooled to room temperature, add the buttermilk and stir together until well combined.

This is a great recipe for dessert or a side-dish. My husband just loves the tangy-sweet taste! I love the fluffy texture. Everytime DH eats this he says it reminds him of the time he spent in Georgia when he was in the Army!

- 1. In a small saucepan bring the pineapple to a boil and pour into a large heat proof mixing bowl.
- 2. Add the 2 packages of strawberry jello and mix until the jello is completely dissolved.
- 3. Add the 2 cups of buttermilk and mix well. Allow this mixture to cool on the counter for about 20 minutes.
- 4. After the jello mixture has cooled carefully add the Cool Whip until well mixed. I use a whisk for this step.
- 5. Pour the mixture into a 2 quart baking dish and chill until set.
- 6. Serve cold as a side-dish or dessert. This has a nice tangy taste and goes well food.

- Whisk together all of the buttermilk dressing ingredients. Cover and refrigerate until ready to use.
- Cut the Bibb lettuce from the root ball, keeping all the large leave intact. Gently rinse the lettuce leaves and dry fully on paper towels or clean kitchen towels.
- Prepare the strawberries and vegetables. Hull and quarter the strawberries. Slice the cucumbers to about 1/8" thick. Set aside. If you use English or Persian cucumbers, you do not have to peel them. Peel and slice the watermelon radish as thinly as humanly possible. Place the radish slices in a bowl of ice water and refrigerate for 15 minutes or so. (This can be done up to a day in advance.)PRO TIP: Letting your radish slices swim around in ice water causes them to curl and ripple in a really beautiful way that matches the shape of the Bibb lettuce.
- To assemble the salad: Place a lettuce leaf on the bottom of the plate. Sprinkle with a few cucumbers and strawberries, a radish slice or two, and a spoonful of dressing. Repeat two or three more times, stacking the salad and toppings as you go. Top the salad with a final sprinkle of berries, cukes, radish curls, and dressing. Garnish with the reserved chives. Serve immediately.
