- Season steak with salt and pepper. In a large skillet, heat oil over medium heat. Add steak; cook 5-7 minutes on each side until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove from pan; let stand 5 minutes. Cut steak into bite-sized strips; toss with lime juice., On a platter, combine romaine, strawberries and onion; top with steak. Sprinkle with cheese and walnuts. Serve with vinaigrette.

- Make pecans first. Stir together the 2 tablespoons of sugar and warm water and mix to combine. Add the pecans and soak for 10 minutes, then drain thoroughly. Mix together the 1 tablespoon of sugar, chili powder, and cayenne pepper, then toss the pecans in the mixture. Place on a sheet pan lined with parchment or nonstick foil and bake for 10 minutes at 350°, stirring once about halfway through the baking time. Move the pecans and parchment or foil to a cooling rack while preparing the rest of the salad. Add the greens, then blue cheese, mandarin oranges and strawberries to a large salad bowl. Set aside. Make the vinaigrette by whisking together the balsamic vinegar, mustard, honey, garlic, shallot, salt, and a few gratings of black pepper. Then slowly drizzle in the olive oil while continuing to whisk until the oil is incorporated and the dressing is thick and emulsified. To serve, toss the salad with enough of the salad dressing to lightly coat the greens. Pass extra dressing as needed.

SPINACH STRAWBERRY BALSAMIC BLEU CHEESE SALAD
My family (elderly parents included) were too busy eating and "mmmm-ing" and "oooo-ing" to initially comment. When they finally finished, each of them declared that this was the best salad they had ever eaten. Truly a texture delight, it is also a perfect blend of sweet, sour, crunchy, smooth and all around delicious. The dressing is sweet, so you don't want to "over dress" your salad. You may change this salad by exchanging mandarin oranges, blueberries, craisins, or other fruit of choice for the strawberries, Although I prefer almonds or pecans, you can use walnuts or sunflower seeds. And substituting good goat cheese for the bleu cheese is also another variation. No substitution has ever been bad in my estimation.

- In small bowl mix together olive oil, vinegar, Worcestershire sauce, shallot and sugar.
- Whisk in teaspoon of Dijon mustard until dressing is smooth. Allow to sit for at least 30 minutes before using.
- In large bowl, combine spinach, strawberries, nuts, and cheese.
- If you are sure you will be using all of the spinach salad, dress salad lightly immediately before serving. If you will have some salad left over (which rarely happens in my family) allow each individual to dress their own salad. It is a sweet dressing so a little goes a long way.

- Make the vinaigrette first by whisking all of the vinaigrette ingredients together. Taste, then add salt and pepper as needed. You can make the dressing ahead of time and keep it in the refrigerator until ready to use. It's great for up to 2 weeks when stored in the refrigerator.
- If your bacon is not already cooked, cook it according to its package directions. Cool until ready to handle, then chop it up.
- In a large bowl, toss all of the salad ingredients together, then mix in the vinaigrette. You may not need all the vinaigrette- use as much or little as you prefer.
- Plate and serve. Cover and store leftovers in the refrigerator for up to 2 days.

- For dressing, rinse the raspberries. In a blender, puree the raspberries. Place in a cheesecloth and crush through the pulp to remove most of the seeds. If you do not have cheesecloth, you can use a mesh strainer. You should yield about 3/4 cup of raspberry puree.
