3 tablespoons raspberry vinegar
2 tablespoons honey
2 teaspoons canola oil
1 teaspoon reduced-sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
Torn mixed salad greens and sliced onion

Steps:

  • In a blender, combine the first nine ingredients. Cover and process until smooth. Serve over greens and onion. Store in the refrigerator.

1/4 cup sugar
1/3 cup slivered almonds
1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. Serve immediately.

The best ever Spinach Strawberry Salad with balsamic poppy seed dressing, pecans, and feta. Beautiful, healthy, and always a crowd pleaser!

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
  • Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

1 medium cucumber, sliced and cut in half
1/2 cup red onion, chopped finely
6 ounces mixed spring greens

  • For dressing, zest the lemon and squeeze 2 T of juice from lemon. Combine lemon zest and juice, vinegar, splenda, oil and poppy seeds with wire whisk.

1 lemon, juice of
2 teaspoons balsamic vinegar
1/3 cup sugar
1 tablespoon olive oil
1 teaspoon poppy seed
1/4 cup toasted nuts (walnuts, cashews, almonds)
1 1/2 cups strawberries, cleaned and sliced
6 ounces fresh spinach
6 ounces fresh leaf lettuce (red leaf, green leaf, or boston)
1 cup chopped cooked chicken
1/2 cucumber, sliced
1/2 red onion, diced
1/2 cup sliced radish

Steps:

  • In a bowl, add juice from one lemon, 2t balsamic vinegar, 1/3 c sugar, 1 tablespoon of olive oil. and 1 teaspoon of poppy seeds. Whisk until well blended.
  • Wash and dry salad greens. In a large salad bowl, arrange greens, optional ingredients, strawberries, and toasted nuts. Pour dressing over top and toss well. Serve immediately.

  • I like to make my dressing first. Put the vinegar, honey, dry mustard, lemon juice, poppy seeds, salt, and pepper into a mason jar. Put the lid on and give it a good shake to start dissolving the honey. Take the top off and add the oil. Shake again. Taste to make sure that the balance is right. Sometimes I need to add a little more vinegar and salt and pepper.
  • In a big bowl, add mixed greens, spinach leaves, and thinly sliced green onions. Keep it in the fridge until right before you are ready to eat.
  • I had everything ready to go ahead of time, and tossed it right before I served it. I was going to use glazed almonds, but changed my mind and used toasted pecans at the last minute. I was afraid that the salad would be more like dessert than dinner.
  • Throw everything together in the salad bowl. Drizzle with dressing, reserving some for the chicken. I marinated some chicken in olive oil, lemon juice, a few cloves of garlic that I smashed, some fresh thyme, salt and pepper, for maybe 2 hours? My husband grilled it and I put slices over the top of the salad. Drizzle some dressing over the chicken too.
