Strawberries With Cassis image

A simple and delicious dessert that can be made ahead of time. It can also be scaled down for fewer guests. From Bon Appetit Weekend Entertaining.

Number Of Ingredients 6

6 (12 ounce) containers fresh strawberries, hulled
1 1/4 cups creme de cassis or 1 1/4 cups strawberry liqueur
1/3 cup sugar
2 tablespoons fresh lemon juice
3 cups whipping cream, chilled
3 tablespoons powdered sugar

Steps:

  • Halve or quarter the berries, depending on their size.
  • Combine first 4 ingredients in large bowl. Let stand at room temperature 1 hour, stirring occasionally. (Can be prepared 3 hours ahead. Refrigerate.).
  • Whip cream and powdered sugar in large bowl until stiff peaks form. Spoon 2/3 cup fresh berries and some juices into each of 20 balloon glasses. Top each with spoonful of whipped cream and serve.
  • Serves 20.

Use this recipe for macerated strawberries to finish off our Almond Biscuits with Sweetened Ricotta. The strawberries are also delicious served over ice cream or yogurt.

1 1/4 cups sugar
1 1/4 cups balsamic vinegar
2 1/2 tablespoons honey
2 teaspoons freshly ground black pepper
1 cup fresh basil leaves, torn into small pieces and loosely packed
10 cups strawberries, trimmed and halved (4 pounds whole berries)

Steps:

  • In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.

1/4 cup creme de cassis
1 tablespoon sugar
1/2 cup water

Steps:

  • Stem and wash the strawberries and drain.
  • In a small saucepan combine creme de cassis, sugar and water.
  • Cook over medium heat until mixture is reduced to about half a cup. Chill.
  • Serve the berries in individual bowls and pour the syrup over them.
