CHOCOLATE MASCARPONE STUFFED FRENCH TOAST WITH STRAWBERRY SYRUP

Chocolate Mascarpone Stuffed French Toast with Strawberry Syrup image

Provided by Anne Thornton, Host of Dessert First

Time 37m

Yield 4 to 6 servings

Number Of Ingredients 16

1/2 cup mascarpone, at room temperature
1 tablespoon heavy cream
1 tablespoon orange zest
1 tablespoon granulated sugar
1 ounce semisweet chocolate, melted and cooled, plus more for grating
12 slices day-old brioche, about 3/4-inch thick
3 large eggs
1 1/2 cups half-and-half
2 tablespoons unsalted butter, divided, plus more if needed
Confectioners' sugar, for dusting
Strawberry Syrup, warmed, recipe follows
2 pints whole fresh or frozen strawberries, hulled
2/3 cup sugar, plus more if needed
1/4 cup corn syrup
Pinch sea salt
1 tablespoon lemon juice

Steps:

  • Cook's Note: Mascarpone is similar to cream cheese in flavor (but better) and has the consistency to match. It makes a great base for this super-easy yummy filling.
  • Combine the mascarpone, heavy cream, orange zest and sugar in a bowl. Add the melted chocolate and mix until all the ingredients are incorporated. Using an offset spatula or butter knife, take a generous scoop of the chocolate-mascarpone filling, about 2 tablespoons, and slather it on 1 slice of the brioche, and then top with another slice of brioche. Repeat with the remaining slices and filling; you will make 6 sandwiches.
  • In a shallow dish, whisk together the eggs and half-and-half to make an egg bath. (If you don't have half-and-half, milk or heavy cream will work just fine.)
  • Preheat the oven to 200 degrees F.
  • Preheat a nonstick griddle or large skillet over medium heat. Add 1 tablespoon butter to the skillet, moving it around to coat the surface. Dip each sandwich in the egg bath, turning over to coat and soak both sides. Place the sandwich on the hot griddle. (Place only as many sandwiches as will fit easily on the griddle, don't overcrowd.) Cook, in batches, until golden, 2 to 3 minutes per side. Transfer the sandwiches to an oven-safe platter and cover loosely with foil. Place in the oven to keep warm. Add more butter to the griddle, as necessary, and cook the remaining sandwiches.
  • Cut the sandwiches diagonally in half, and serve 2 to 3 halves per person. Dust the sandwich with confectioners' sugar and grate chocolate over the top. Ladle a generous portion of the Strawberry Syrup over the sandwiches, or serve alongside for your guests to serve themselves.
  • In a large saucepan over high heat, add the strawberries and sugar. (A large saucepan is needed just in case the strawberry syrup starts to boil up the sides.) If the strawberries are not as ripe or sweet as you like, add 1/3 cup more sugar. Add 2/3 cup water, the corn syrup and sea salt to the pan. Stir together until the sugar dissolves. Bring to a boil and cook for about 5 minutes, stirring occasionally.
  • Strain out the strawberries and continue to boil the liquid until the mixture has thickened to a syrupy consistency, another 8 to 10 minutes. Stir in the lemon juice and add the strawberries back to the saucepan. Gently stir to coat the strawberries in the syrup. (The syrup can be stored in an air-tight container in the refrigerator for up to 1 week, or cooled and frozen.)
  • Cook's Note: For an orange-lover's option, use fresh orange juice instead of the lemon juice to finish the syrup. Alternately, for a rich, adult-friendly sauce, add a splash of orange liqueur, like Grand Marnier, to the sauce. Although the alcohol won't completely cook out, most will if cooked a few minutes longer. Yield: 3 1/2 cups

Categories     dessert

Time 1h25m

Yield 12 servings

Number Of Ingredients 8

1 box vanilla cake mix (like Duncan Hines Moist Deluxe French Vanilla cake)
1 (8-ounce) container mascarpone cheese, chilled
1/2 cup thawed and drained frozen strawberries
1/4 cup sugar, plus 1/2 cup
1 tablespoon lemon juice
1/4 cup water
1 teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • Special equipment: 1 muffin tin
  • Make the cupcakes according to package instructions. Lightly grease the muffin tin and fill the batter almost to the rim of each muffin cup. Bake according to package directions and let cool.
  • In a food processor combine the mascarpone cheese, strawberries, 1/4 cup sugar, and lemon juice. Process the mixture until smooth. Transfer the strawberry mixture to a pastry bag fitted with a small tip. Push the tip gently into the bottom of a cupcake and squeeze in the strawberry mixture until the cupcake plumps. Continue with the remaining cupcakes.
  • In a small saucepan bring the 1/2 cup sugar, water, and vanilla extract to a simmer over medium heat. Simmer until the sugar is dissolved. In a medium bowl combine the vanilla syrup with the confectioner's sugar. Stir until smooth. Working quickly, use a rubber spatula spread the icing on the top of the cupcakes. If the icing begins to firm up, place in the microwave for a few seconds to warm up again.

STRAWBERRIES STUFFED WITH CRANBERRY MASCARPONE

Strawberries Stuffed With Cranberry Mascarpone image

I've been hanging on an old magazine recipe clipping for years. Finally, I made this recipe and, WOW, it's great. I used jumbo strawberries, but you can also use regular-size strawberries. Serve an appetizer or a dessert! The filling is not overly sweet, and you can add powdered sugar to taste if you want a sweeter cheese mixture. I've found that there's more than enough filling for 12 medium-large strawberries. If you don't have time to pipe the filling, you can serve it in a bowl as a dip.

Provided by Kathy

Categories     Dessert

Time 30m

Yield 24 serving(s)

Number Of Ingredients 5

8 ounces mascarpone cheese
1/4 cup dried cranberries, finely chopped (I use a food processor)
1/2 teaspoon orange zest
1 tablespoon orange liqueur (I use Cointreau) or 1 tablespoon orange juice (I use Cointreau)
12 large strawberries, halved (leave green tops on or off)

Steps:

  • Combine mascarpone cheese, dried cranberries, orange zest, and liqueur in a bowl.
  • Pipe the cheese mixture onto the strawberry halves using a pastry bag fitted with an open star tip. The tip should be large enough so the cranberry bits do no clog the tip.
  • Chill then serve.

  • Prepare strawberries. To make the presentation in the top photo, trim off stem end, then place stem end down on a cutting board. Cut berry into quarters from top to almost the bottom of the berry, taking care not to cut all the way through. Place berries stem side down of serving platter.
  • An alternative is to trim a bit off the non-stem end to allow for the berry to stand upright. Slice off stem end and remove the core. Place these on the platter with the stem side up.
  • To make filling, beat Mascarpone with cream, sugar and vanilla till smooth. Put filling into a piping bag fit with a star tip or even a Zip-loc bag with just a corner cut off. Pipe the filling into the the middle of each berry. Garnish with a small sprig of mint if desired.

  • Slice four 1 ½ inch slices from the loaf. With a long sharp knife, cut down through the center making the slit almost to the bottom and sides without poking through.
  • Hand mix the mascarpone and strawberry preserves and place in a small piping bag. Pipe the filling equally between the four slices pressing the tip into the slit and squeezing as you lift up. Then place the knife tip in and push it up and down a bit to move the filling away from the opening.
  • Place the four stuffed slices into the egg mixture turning so all sides are coated. Leave them to soak up the egg while you work on the next step.

  • Beat the eggs well in a large, shallow baking dish. Add cinnamon, nutmeg, buttermilk, and vanilla. Beat to combine.
  • Coat the surface of a large frying pan and add 1 tablespoon of butter. Place over medium heat and allow butter to melt, tilting the pan to coat.

  • Slice off top end of strawberry so that the strawberry can stand on a flat surface. Then make a deep knife cut on top of strawberry. You want to make two cuts for each strawberry in the shape of an "X" or a cross. You want to cut about 3/4 of the way down, but not all the way. Use your finger to help separate the petal of the strawberries so that they open up enough for stuffing.
  • In a stand mixer, mix the mascarpone cheese, heavy cream and sugar until it is fully mixed and forms a whipped cream frosting look (it will probably curdle first before coming together).
