6 large stale croissants, cut into small cubes
1 cup diced fresh strawberries
½ (8 ounce) package cream cheese, softened
⅓ cup white sugar
¼ cup milk
1 egg
1 teaspoon vanilla extract
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 9 cups of a muffin tin; place tin on a baking sheet.
  • Divide croissant cubes evenly among greased muffin cups. Press strawberries into and on top of the cubes.
  • Beat cream cheese, white sugar, milk, egg, and vanilla extract together in a large bowl until smooth. Pour over each muffin cup slowly until croissant cubes and strawberries are fully soaked.
  • Bake in the preheated oven until set and evenly browned, 30 to 40 minutes. Cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely, about 30 minutes. Dust with confectioners' sugar before serving.

Moist bits of strawberries and rich sour cream flavor this tender loaf.

Number Of Ingredients 12

1 3/4 c all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
1/2 c butter, room temperature
3/4 c white sugar
2 eggs, room temperature
1/2 c dairy sour cream, room temperature
1 tsp pure vanilla extract
1 c coarsely chopped fresh strawberries
3/4 c toasted chopped walnuts

Steps:

  • 1. Grease an 8" X 4" loaf pan; set aside. Preheat oven to 350 degrees F (175C).
  • 2. In a large bowl, combine flour, baking power, baking soda, salt and cinnamon; set aside.
  • 3. In a small bowl of electric mixer, cream butter. Gradually add sugar; beat 1 minute or until light and airy.
  • 4. Beat in eggs one at a time. Beat in sour cream and vanilla.
  • 5. Stir into flour mixture only until dry ingredients are moistened.
  • 6. Fold in strawberries and nuts.
  • 7. Turn into prepared pan; smooth top. Bake 60-65 minutes or until a wooden pick inserted in center comes out clean.
  • 8. Let stand in pan 10 minutes. Turn out onto a rack to cool. (Makes 1 loaf.)

1 cup white sugar

Steps:

  • Combine the strawberries and sugar in a bowl; mash until the strawberries are completely crushed and the sugar is incorporated. Add the sour cream to the strawberries and stir until the mixture is pink in color. Serve immediately.

1/2 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
1/2 cup sour cream
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup chopped fresh strawberries
3/4 cup chopped walnuts, toasted, divided

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Add sour cream and vanilla; mix well., In another bowl, whisk flour, baking powder, baking soda, salt and cinnamon; gradually stir into creamed mixture just until moistened. Fold in strawberries and 1/2 cup nuts. , Pour into a greased 8x4-in. loaf pan. Sprinkle with remaining nuts. Bake 65-70 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.

Dessert for breakfast with these super incredibly decadent cheesecake flavoured strawberries and cream stuffed french toasts! Weight Watchers: 7pp per serve!

1 egg
1/4 cup unsweetened low fat/almond milk
1 tablespoon natural sweetener/sugar of choice
2 teaspoons vanilla extract
1/4 cup low fat ((or fat free) cream cheese)
1 tablespoon (extra) natural sweetener/sugar of choice
10 sliced strawberries ((enough to cover two toasts))
4 pieces of bread of choice ((I use sourdough because I love it, but you can use anything your heart desires))

Steps:

  • Whisk the egg, milk, sweetener/sugar and vanilla together in a shallow bowl until combined.
  • In a separate bowl, combine cream cheese and the (extra) sweetener/sugar. Spread all pieces of bread with the cream cheese mixture, and add the sliced strawberries to one slice of bread. Top with the second piece of bread and gently press the edges down to 'seal.' Repeat with remaining bread.
  • Dip the sandwiches into the egg mix, one by one, and turn to coat.
  • Heat a non-stick pan with cooking oil spray over low-medium heat.
  • Fry each sandwich for about 3 - 5 minutes on both sides or until golden brown and cooked through.
  • To serve, dust with (optional - but not really) icing sugar and drizzle with maple syrup.

Steps:
