SIMPLE FRESH BERRY WITH GRAND MARNIER SAUCE
In this dessert sauce recipe, fresh blueberries, strawberries, and raspberries are combined with orange liqueur for a truly delicious treat.

Steps:
- Gather the ingredients.
- Put 1 pint of the mixed berries in a medium bowl. Using a pastry cutter , fork, or potato masher, coarsely mash berries.
- Purée remaining berries with 4 tablespoons sugar in a food processor fitted with a steel blade.
- Mix puréed berries with mashed berries along with orange liqueur.
- Taste and adjust flavor, adding more sugar if necessary.
- Let the berry sauce stand at room temperature to allow the flavors to blend for at least 30 minutes. The sauce can also be prepared ahead, covered, and refrigerated for up to 4 hours before serving.

- Combine ingredients in a blender: Into a blender add, tequila, Cointreau, lime juice, simple syrup, frozen strawberries, and ice. Process until smooth for about 30 seconds. For a more slushy-type cocktail, use between 1/4 to 1/3 cup of ice.
- Rim glasses with salt: Pour salt onto a plate slightly larger than your glasses. Take a lime slice and rub it around the rim of the glasses and lightly press or roll the glasses at an angle to coat with salt.
- Serve cocktails: Pour the frozen cocktail equally between the glasses, garnish with a strawberry slice, and enjoy!

- Tip the strawberries into a large bowl. Splash over the Cointreau, add the orange zest and sift in the icing sugar, then give everything a really good mix. Cover, then leave for 1 hr or more for the juices to become syrupy and the strawberries to soak up some of the alcohol.
- To serve, scatter the mint leaves over the strawberries and give them one more good stir, then spoon into individual glass dishes.

- Place the strawberries and Cointreau in a medium bowl and stir until well combined. Cover and place in the fridge for 1-2 hours to macerate.
- Run a vegetable peeler to peel along the long edge of the block of chocolate to make chocolate curls. Set aside until serving.
- To serve, spoon the strawberry mixture into serving bowls. Top with cream and chocolate curls.
STRAWBERRIES WITH COINTREAU
This one takes a couple hours because the strawberries have to soak up the cointreau, so allow enough time for that. If you don't want to whip your own whipped cream just use it from a can! This is from The Vancouver Sun Newspaper, 1996.

Steps:
- Peel wide strips of zest without the pith from orange and cut into very thin strips. (Put aside rest of orange for another use.).
- In small saucepan, combine granulated sugar and water; bring to the boil over high heat.
- Add orange zest; reduce heat and simmer for 10 minutes.
- Remove from heat and let syrup cool; stir in liqueur.
- Put berries in bowl.
- Add syrup and orange zest; set aside for 2 hours.
- Whip cream and sweeten to taste with powdered sugar.
- Serve strawberries topped with whipped cream and garnished each serving with a whole strawberry.
