Categories     Breakfast     Brunch

Time 45m

Number Of Ingredients 21

1/2 cup butter
4 large eggs plus 4 large egg yolks
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons granulated sugar
1 Tablespoon brown sugar
1/2 cup milk
1/2 cup heavy cream
2 teaspoons vanilla extract
1 and 1/2 Tablespoons Grand Marnier (optional)
8 slices brioche
3 Tablespoons unsalted butter
1/4 cup sugar
1/4 cup orange juice
2 cups strawberries, sliced, fresh or frozen, divided
1 Tablespoon water
1 Tablespoon cornstarch
1 Tablespoon Grand Marnier (optional)
1 cup heavy cream, very cold
2 Tablespoons confectioners's sugar
1 teaspoon vanilla extract

Steps:

  • Melt a few Tablespoons of butter in a large skillet over medium-heat.
  • In a large shallow bowl or pie plate, whisk the eggs and egg yolks until well combined. Add in the cinnamon, nutmeg, and sugars, and whisk until well combined. Finally, whisk in the milk, heavy cream, vanilla, and grand marnier.
  • Dip each slice of brioche into the egg mixture, making sure both sides are well coated.
  • Place brioche slices into skillet and cook until the undersides are golden brown, about 3 minutes.
  • Flip, and continue cooking on the other side until equally golden brown, about another 2 to 3 minutes.
  • Continue with all french toast, adding more butter to the pan as needed.
  • Serve warm, with strawberry sauce and whipped cream!
  • In a small saucepan, melt the butter. Continue cooking until it smells slightly nutty and is a deep golden brown.
  • Stir in the sugar, orange juice, and half of the strawberries. Cook over a medium heat for about 10 minutes, or until the strawberries have softened and the juice is slightly thickened.
  • In a small bowl combine the water and cornstarch, whisk until smooth. Then add it into the strawberry sauce.
  • Bring back to a boil and cook, stirring constantly, for about 2 minutes, or until thickened.
  • Add the rest of the strawberries and cook for 5 more minutes, stirring frequently.
  • Remove from heat and stir in the Grand Marnier, if using. Spoon over French toast.
  • In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl using a handheld electric mixer, combine the heavy cream, confectioners' sugar, and vanilla extract.
  • Whip until stiff peaks form. Keep in the fridge until ready to use. Best used within 30 minutes!
  • Place French toast slices on a large serving platter, or divide among individual plates.
  • Top with a generous portion of strawberry sauce, then top with a dollop of whipped cream!
  • Serve at once!

2 cups whole milk
1/3 cup maple syrup

FRENCH TOAST WITH STRAWBERRIES AND CREAM

French Toast with Strawberries and Cream image

Provided by Claire Robinson

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 6

3 cups fresh strawberries, trimmed and sliced
2 tablespoons water
6 large eggs
2 cups cream, divided
Butter
8 (1-inch-thick) slices brioche (from day old loaf)

Steps:

  • Preheat the oven to 200 degrees F, and warm an ovenproof serving platter in the oven.
  • In a medium saucepan, combine 2 cups of the berries with the water and bring to a simmer. Cook over medium heat until the berries are softened and set aside until ready to serve. Keep warm.
  • In a shallow bowl, large enough to soak a few slices of bread, whisk together eggs and 1 cup cream.
  • In a large nonstick griddle or skillet over medium heat, melt a large pat of butter. Be sure to cover the cooking surface with the melted butter. Working in batches, dip however many slices of brioche that can be cooked on the griddle at a time, in the egg/cream mixture. Turn bread over and be sure to not let the bread get too soggy.
  • Transfer the bread to the preheated and buttered griddle and cook until golden brown and slightly crisp, about 3 minutes per side. Place the cooked French toast on the warm serving platter in the oven and cover loosely with foil. These will keep warm in the oven while the remaining slices are prepared.
  • Whip the remaining 1 cup of cream, in a medium bowl, with a hand-held mixer, until soft peaks form. Serve the French toast topped with the warm strawberries, remaining sliced fresh strawberries and whipped cream.

Time 45m

Yield 5

Number Of Ingredients 15

½ cup sliced almonds
1 (10 ounce) package frozen strawberries - thawed, drained, and juice reserved
water as needed
½ cup white sugar
2 tablespoons cornstarch
1 (8 ounce) package cream cheese, softened
2 tablespoons white sugar
1 teaspoon vanilla extract
1 cup milk
3 eggs, beaten
1 ½ teaspoons white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 loaf Italian bread
1 tablespoon butter, or as needed

Steps:

  • Cook and stir almonds in a skillet over medium high heat until fragrant and toasted, 3 to 5 minutes.
  • Add enough water to reserved strawberry liquid to equal 1 cup liquid.
  • Stir 1/2 cup sugar and cornstarch together in a saucepan over medium heat. Gradually stir strawberry liquid into sugar mixture; cook, stirring constantly, until mixture is clear and thick, 3 to 5 minutes. Stir strawberries and almonds into sugar mixture.
  • Beat cream cheese, 2 tablespoons sugar, and vanilla extract together in a bowl. Whisk milk, eggs, 1 1/2 teaspoons sugar, cinnamon, and nutmeg together in a bowl.
  • Slice bread at 1 1/2-inch intervals about 3/4 of the way through. Cut a slit in the center of each slice to form a pocket, and fill each pocket with 1 rounded tablespoon of the cream cheese mixture. Separate slices from loaf by cutting each slice the rest of the way through the loaf.
  • Dip bread slices in egg mixture to coat completely.
  • Melt butter on a griddle over medium-high heat. Working in batches, cook bread slices on preheated griddle until golden brown, 2 to 5 minutes per side. Serve French toast with strawberry-almond mixture.

cooking spray
1 loaf day-old Italian bread
2 cups fresh strawberries, sliced
8 large eggs
2 cups milk
½ cup heavy cream
2 tablespoons white sugar
½ teaspoon fresh lemon zest
¼ teaspoon almond extract
⅛ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease or spray a 9x13-inch baking dish with cooking spray.
  • Slice the bread into 16 slices using a sharp knife. Save the ends to use in another dish, or discard. Arrange the bread slices in the prepared baking pan. Tuck strawberry slices between and around the bread.
  • Whisk eggs, milk, cream, sugar, lemon zest, almond extract, and salt together until well combined.
  • Pour the egg mixture over the bread slices. Press down on the top of the bread to help the egg absorb; it's okay if a little is in the bottom of the pan. Let stand for 15 to 20 minutes.
  • Bake in the center of the preheated oven until the bread is firm when gently pressed and the top is crispy and golden, 45 to 55 minutes.
