STRAWBERRY-BANANA GELATIN SALAD
Our family gatherings wouldn't be the same without this classic gelatin salad with its festive fruit layers. Since it stays nice and firm, it travels well and is ideal for taking to covered-dish suppers and church potlucks.

Steps:
- In a large bowl, dissolve gelatin in water. Stir in strawberries, pineapple, bananas and nuts. Pour half of the mixture into a 13-in. x 9-in. dish. Refrigerate for 1 hour or until set. , Set the remaining gelatin mixture aside. Combine the sour cream, sugar and vanilla. Spread over the chilled gelatin. Spoon remaining gelatin mixture over top. Chill overnight.

I had some bananas that were overly ripe and some strawberries that were also on the ripe side. Since I was making banana-nut bread, I decided to add the strawberries to the batter. Perfect combination.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with nonstick spray. Line a baking sheet with parchment paper.
- Sift flour, baking soda, cinnamon, and salt together into a bowl.
- Cream sugar and butter together in a large bowl. Mix in sour cream, eggs, and vanilla. Add mashed bananas and mix until combined. Gradually mix in dry ingredients. Fold in strawberries and nuts. Pour into the prepared pan and set on the lined baking sheet.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 65 to 80 minutes.

- Combine the flour, baking soda, and salt in a medium mixing bowl and set aside. In a second large mixing bowl, use an electric mixer to beat together the banana, eggs, sugar, oil, sour cream, and vanilla until smooth.
- Stir the flour mixture into the wet ingredients and mix with a spoon just until moistened. Add the strawberries and stir lightly, just until incorporated throughout the batter.
