I got this recipe from my mom and it always satisfies my craving for a quick dessert. It's so easy, and surprisingly delicious! Equally delicious using peaches instead of strawberries, or try other fruit.

1 cup fresh strawberries
1 cup sour cream
1 tablespoon vanilla extract
3 tablespoons sugar (use less or more for desired sweetness)

Steps:

  • Mix the sour cream, vanilla and sugar together.
  • Cut the strawberries into halves and place in serving dishes.
  • Pour the cream mixture over the strawberries.
  • Top with whipped cream if desired and serve.

1/2 cup granulated sugar
1 cup whipped cream
1 and 1/2 tsp vanilla extract

Steps:

  • To make strawberries and cream, first, wash the juicy berries properly and de-stem them. Let them be for five minutes and sprinkle them with granulated sugar. Thereafter, let them sit for a while.
  • You can even slice the strawberries if you want and then sprinkle sugar on them.
  • Once that is done gently toss the strawberries so that they blend well with the sugar.
  • In the meantime, whip 1 cup of cream properly. Add the whipped cream and a tsp and a half of vanilla extract to the fresh strawberries and refrigerate it for two hours before you serve the delectable dessert. Your delicious dessert, strawberries and cream, is ready!

ASSEMBLY:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. Line bottoms of two greased 8-in. round baking pans with parchment; grease paper., In a large bowl, cream butter and 1/2 cup sugar until light and fluffy. Add egg yolks, beating well. Beat in vanilla., In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Transfer to prepared pans., With clean beaters, beat egg whites on medium speed until foamy. Add remaining sugar, beating on high until sugar is dissolved. Continue beating until soft peaks form. Spread over batter in pans., Bake 12-15 minutes or until a toothpick inserted in center comes out clean. Cool completely in pans on wire racks.   • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Add sour cream and vanilla; mix well., In another bowl, whisk flour, baking powder, baking soda, salt and cinnamon; gradually stir into creamed mixture just until moistened. 2 tablespoons vegetable oil
1 large egg plus 1 egg yolk
2 tablespoons cold whole milk
1 teaspoon apple cider vinegar
1 1/4 cups all-purpose flour
1/8 teaspoon baking powder
3 tablespoons granulated sugar
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into 1/4-inch cubes
1 teaspoon unflavored gelatin
1/4 cup granulated sugar
1 vanilla bean, split lengthwise and seeds scraped out
1 1/4 cups cold light cream
1 quart strawberries, hulled and cut into 1/2-inch pieces
Confectioners' sugar, for dusting

Steps:

  • Make the crust: Whisk the vegetable oil, egg yolk, milk and vinegar in a bowl. Pulse the flour, baking powder, sugar and salt in a food processor to combine; add the butter and pulse until the mixture looks like coarse meal. Add the milk mixture and pulse once or twice, just to moisten the flour.
  • Transfer the dough to a 9-inch-round tart pan with a removable bottom and pat onto the bottom and up the sides. Cover with plastic wrap and refrigerate until firm, at least 30 minutes. Trim the edges, if necessary.
  • Preheat the oven to 350 degrees F. Pierce the dough all over with a fork. Line with foil and fill with pie weights or dried beans. Place the pan on a baking sheet and bake 15 minutes. Remove the foil and weights; continue to bake until golden, 10 to 15 more minutes. Beat the whole egg with 1 teaspoon water, then lightly brush over the crust and bake 5 more minutes. Cool completely on a rack.
  • Meanwhile, make the filling: Sprinkle the gelatin over 1 tablespoon cold water in a bowl and let soften 5 minutes. Put the granulated sugar and vanilla seeds in a saucepan and rub the seeds into the sugar with your fingers. Add 1 cup cream and whisk over medium heat to dissolve the sugar. When the mixture comes to a boil, remove from the heat and whisk in the gelatin mixture. Transfer to a bowl, then set in a larger bowl of ice water and stir with a rubber spatula until the mixture begins to thicken. Add the remaining 1/4 cup cream and stir until thick, about 2 minutes. Pour into the tart shell and refrigerate until set, about 1 hour.
  • Before serving, top the tart with the strawberries and confectioners' sugar.

1/2 c. buttermilk

2 c. powdered sugar
1 c. cool whip (thawed)

Steps:

  • Preheat oven to 350 degrees.
  • Place strawberries in blender and puree well (one pint size package of fresh strawberries was about right for both the cake and frosting).
  • Combine cake mix and strawberry gelatin in large bowl.
  • Mix in 1 c. blended strawberries, oil and buttermilk.
  • Add eggs, one at a time, mixing well after each.
  • Pour into a 9x13 inch pan lined with cooking spray.
  • Bake for 30-35 minutes until toothpick comes out clean. Remove from oven and cool completely before frosting.

2 3 oz cook & serve vanilla pudding mix
4 cups hot water
8 oz. Cool Whip (thawed)
1 1/2 cups fresh strawberries (diced)

Steps:

  • Combine strawberry jell-o mix, vanilla pudding mixes and hot water in a large saucepan.
  • Bring mixture to a boil, stirring frequently. Continue boiling (and stirring) until mixture turns clear.
  • Pour into dish or bowl and chill until set. I usually make the night before and chill overnight.
  • Combine Cool Whip with jell-o/pudding mixture (a potato masher works well for this step).

2 1/2 cups sliced strawberries ((heaping cups))
3-4 tablespoons granulated sugar
2 cups heavy cream
3/4 cups powdered sugar ((or less if you'd like it less sweet))
1 teaspoon vanilla extract
Sliced strawberries for garnish

Steps:

  • To a medium bowl, add the strawberries and sugar. Mix until the mixture is mostly combined. Set aside, covered in room temperature for at least 45 minutes.
  • To a bowl of an electric mixer fitted with a whisk attachment (hand mixer works well too), over medium/high speed, whip the heavy cream until slightly thickened. Increase the speed to high and whip until thickened and medium peaks form.
  • Turn off the mixer and add the powdered sugar and the vanilla extract. Turn the mixer back to low speed and whip until the confectioner's sugar is mostly combined. Increase the speed to high and whip until completely thickened and the mixture forms stiff peaks.
  • Spoon into a large piping bag fitted with a large star or round tip and place in the refrigerator until ready to use.
  • Prepare six 5 ounce dessert glasses or bowls. To glass dessert glasses (or bowls) add a couple of spoonfuls of macerated strawberries.
  • Pipe vanilla whipped cream on top, followed by more strawberries.
  • Top with vanilla whipped cream. Garnish with a strawberry.
  • Makes six mini parfaits.

100g (½ cup) sugar
75g (⅓ cup) butter, melted
125g (1 cup) flour
22.5ml (1½ tbsp) baking powder
375ml (1½ cups) milk
1 vanilla pod, split in half
4 egg yolks
75g (⅓ cup) caster sugar
25g (4 tbsp) flour
450g (3 cups) strawberries, washed and hulled
100g (⅔ cup) white chocolate, melted
30g (⅓ cup) slivered almonds, toasted

Steps:

  • Preheat the oven to 180°C / 350°F / gas mark 4.
  • Grease a 30cm (12in) sponge flan baking pan with butter, then dust with flour & set aside.
  • Place eggs, sugar and butter into a large bowl and mix together with a blender until fluffy, which should take about 3 minutes.
  • Sieve the flour and baking powder into the egg mixture, then whisk.
  • Pour the contents into the prepared baking pan and spread evenly.
  • Place the pan in the preheated oven and bake for 12 - 15 minutes until golden brown. Remove the sponge flan from the oven, and carefully tip it out onto a cooling rack to allow it to cool completely.
  • Place the milk and vanilla pod in a pan and heat through. Remove from the heat.
  • In a separate bowl, beat the egg yolks and sugar.
  • Add the flour and a bit of the warm milk and stir.
  • Add this mixture to the rest of the warm vanilla milk which is still in the saucepan.
  • Whisk over a medium heat until smooth and thickened, which should take about 4 minutes. Remove from the heat and cool completely.
  • When the pastry case and custard have cooled down completely, fill the pastry case up to the brim with custard.
  • Arrange the strawberries on top and drizzle with melted white chocolate and sprinkle with almonds.
  • Serve immediately with whipped cream or ice cream, plus extra strawberries. Enjoy!

1 1/2 cups (190g) chopped strawberries OR 1 cup freeze dried strawberries (1/4 cup powder)
1 3/4 cups (420ml) heavy whipping cream, cold
1 cup (115g) powdered sugar

Steps:

  • To make with fresh, real strawberries:
  • Add the chopped strawberries to a food processor or blender and puree until smooth, then strain through a fine mesh sieve to discard the seeds.
  • 2. Add the puree to a medium sized saucepan and cook over medium heat. Allow the puree to come to a boil and continue to boil, stirring consistently to keep it from burning, until it has thickened and reduce to 1/4 cup, about 15 minutes. To measure, pour the puree into a measuring cup. If it's more than 1/4 cup, add it back to the pan and continue to cook it.
  • . When the puree has thickened and reduced, pour into a small bowl and refrigerate until completely cooled. This strawberry mixture can be made ahead, if you like.

whipped cream, to serve (in my recipes)

Steps:

  • Cream butter and sugar in small bowl until fluffy; beat in egg and vanilla. Mix in flour and salt. Spread batter evenly in greased and floured flan pan. Bake at 350 degrees F until cake is golden and springs back when touched, about 14 minutes. Cool on a wire rack; remove from pan when completely cool. Make pastry cream. Place cake on serving plate; pread pastry cream in center. Arrange fruit in a decorative pattern over pastry cream. Refrigerate until serving time. Garnish with whipped cream when serving. These quick and easy turnovers are made with puff pastry and stuffed with strawberries and cream cheese. These Strawberry Cream Cheese Turnovers make a perfect breakfast or dessert!

1 (17.3 ounce) package puff pastry (thawed according to packing directions (2 sheets))
1 and 1/2 cups chopped strawberries
2 tablespoons (25 grams) granulated sugar
1 tablespoon (8 grams) cornstarch
4 ounces (57 grams) cream cheese ((softened))
1/4 cup (30 grams) powdered sugar
1/2 teaspoon vanilla extract
1 large egg white ((lightly beaten))
1 cup (120 grams) powdered sugar
2 tablespoons (30 ml) milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400°F. Line two large baking sheets with parchment paper and set aside.
  • Unroll both pieces of the thawed puff pastry and cut each one into four squares (you will have 8 square pieces total). Set aside.
  • In a medium sized mixing bowl, mix together the chopped strawberries, sugar, and cornstarch until well combined. Set aside.

  • Remove from the oven and set aside to cool for about 10 minutes.
  • Add the powdered sugar, milk, and vanilla extract to a small mixing bowl and mix until everything is well combined. If needed, add more milk to thin out the glaze or add more powdered sugar to thicken it up a bit.
  • Evenly distribute the glaze between all of the turnovers.
